思「潮」起伏,會默默地睇晒openrice 二百幾個食評,再從中揀出心水菜式,我諗我應該真係恨打冷恨得好緊要🤪🪶 滷水鵝片 (上裝) $310上裝起片,下裝斬件,厚實嘅鵝胸肉,要片得夠薄先會啖啖肉得嚟又唔難咬,跟住傳統智慧(?)去叫,果然冇甩拖🤓🪶 滷水鵝腸 拼 滷水鵝肝 $168 以前香港仲有新鮮鵝腸賣,帶有少少肥膏嘅豉椒鵝腸,嗰種美味,真係絕非依家嗰種爽口得誇張、但味同嚼蠟嘅雪藏鵝腸可比擬😢上網見到呢度嘅鵝腸有肥膏,簡直係眼前一亮,雖然都係太爽口,但充滿油香,算係稍稍拾回一些童年滋味🍭🦪 蠔餅 $80唔知係真係足料定手氣好,少少地夾咗幾箸,每次都夾中蠔粒,炸得透徹香口,連入面綠色嗰啲唔知係蔥定莞茜,都照食不誤😂🐂 大漠牛柳粒 $105大漠喺我心目中幾乎就等於孜然味,冇可能唔叫啦😌 的確好香孜然味,但風頭就被醃牛肉嘅美極味搶走晒,食咗兩粒就冇食了,反而炸過嘅四季豆仲吸引🥲🐚 紫蘇葉煮田螺 $98今晚叫嘅餸,幾乎全部都係openrice食評中常客,唯獨呢個好似出現少於五次🤫 唔使懷疑,絕對係充滿私心、向童年回憶致敬之選🫡雖然味道唔錯,但咁細粒嘅田螺,食起嚟真係幾費時,可一不可再,下次應該會留返quota叫其他餸好啲🤔🥢 潮式浮豆腐 $75浮豆腐,據聞意思係熱油炸到啲豆腐浮喺油面,嗯,即係椒鹽豆腐走椒鹽,但蘸住韭菜鹽水食,又幾滋味😋🐖 韭菜豬紅 $70近乎半個拳頭咁大粒嘅豬紅(可能我手細😀),非常入味但又保持軟滑,冇話煮過龍變嚡👍🏻🥬 潮式春菜 $70見食評讚春菜夠腍夠香甜,腍的確幾腍,不過「甜」就有保留了,湯汁略鹹,我諗應該冇預人會飲😅 諗落屋企滾嘅春菜湯,或者大芥菜煲排骨好似仲好味🙊🥣 芋泥 $40 (宜預留時間早少少叫)影得近鏡,其實只係小小的一碗,同其他菜式嘅價錢/分量相比,無疑係搶錢嘅節奏😧 落咗豬油嘅芋泥,熱辣辣送上枱,豬油夾雜芋頭味,極香極幼滑,我個人嚟講,絕對樂意再畀錢食❤️…Read More

每次經過新蒲崗見到呢間陳儀興飯店都會被這間餐廳的店名和招牌吸引,這個雲石金漆招牌,一看便知道是老字號。剛好今日的飯腳其中一名就在新蒲崗工作,我們二話不說就約在這間地道潮州餐館~除了門口的明檔很吸睛以外,店內的牆上貼滿圖文並茂的餐牌,還有配上字句介紹菜式,設計用心又有香港特色~潮洲菜必點的當然是滷水,滷水鵝腸從廚房送出來時已經聞到香噴噴,滷水汁恰到好處,不會太咸。驚喜的是鵝腸夠肥,中間還夾著肥膏。底下還有吸盡滷水汁的豆腐,也是不能錯過~潮州菜當然也要有蠔餅,蠔餅炸得香脆而且不會太油膩,滿滿的蠔仔也很鮮味。原本以為魚湯浸大蜆會比較清淡,但反而胡椒味突出,加上吸收了湯底的粉絲,層次更豐富。除了一般的潮州菜外,餐廳也有不少小炒的選擇。其中最令人期待的就是大漠牛柳粒。牛柳粒和四季豆先油泡過,十分香口,加上炸蒜和果仁更加有口感~而且微辣令整個菜式更惹味。避風塘茄子也是另一特色菜,茄子沾上一層薄薄的炸粉,做到外脆內軟的效果。與其說是避風塘茄子,我認為更像辣子茄子,香辣味足~喜歡香口菜式的也要點蒜香骨,蒜香骨肉質鬆軟得來沒有醃粉的味道,配上炸到金黃色的炸蒜,非常下飯。老字號果然性價比高,而且沒有加一收費,每人$150埋單,非常划算~…Read More

今晚又過來新蒲崗,做完野已經九點幾,宵夜時段最好梗係去打冷啦。:)但咪以為好容易搵位,去到陳儀興,仲係爆曬場要等位,好彩唔算等好耐,不過就要去佢隔離街嘅後舖坐,其實隔離街同正鋪都係相通的,大部分食客都會知道。其實除左打冷之外,呢度嘅小菜都好出名,選擇多又可以自由配搭,我地馬上Order左幾款打冷小菜等食。首先出場嘅係元朗黃油烏頭,滷水鵝件。正宗嘅本地黃油烏頭,有哂身份証明架,絕對唔係粉絲當魚翅。特登比大家睇下佢幾咁黃油,肉味零捨不同,甘香嫰滑,真正食魚🐟有魚味,仲要係啖啖肉滷水鵝件,當然是打冷必點的菜式之一,喜歡連骨一起啜的感覺,和鵝片啖啖肉是截然不同的食法,連骨頭一起吃是可以品嚐到肉和骨的精髓,特別適合送酒。大漠牛柳粒,大量的配料把牛柳粒隠藏著,配料的精華滲透至牛柳內,香辣而不嗆喉,又是一度送酒佳餚。蒜香骨,炸得金黃的酥香外層,上枱時蒜香的味道已經四溢,火候控制適中,不溫不火,外皮香脆,肉香味濃,十分滋味。炸蠔餅,其實不須多介紹,所有炸物,重點是油嘅質素,和油溫要高,將食材用高溫迫出濕氣而又能保持食材新鮮,絕對不像一些採用千年油將食物浸熟的餐廳,還有蠔的大小適中,配上少少魚露提升鮮味,不可錯過啊。韭菜豬紅,也是打冷必點菜色之一,大大件方形大小,挾起也不容易散掉,送粥送飯一流。高朋滿座,大家把酒言歡,風花雪月,這種港式地道風味,久不久就要來回味一下,這間傳統老店,屹立這區多年,晚晚爆場,無人不識,無人不曉。…Read More
