北海道黃馬糞海膽配水雲巨型鮮帶子近日炒幣發左達既一位朋友約我去柯士甸道"松"食晏,佢訂左師傅席前,坐低後朋友先話黎唔到,佢叫我照食,單佢埋,正當我想起身離開又覺得尷尬之時,店員送上一壺日本酒:哩隻係三粒米純米大吟釀,試下吖.再遞上菜單:你朋友已經比左錢架啦,安排左18品既omakase比你.既然有人比左錢,我就唔客氣啦.嘿嘿.前菜北海道黃馬糞海膽配水雲相當醒胃既前菜,一酸一甜,質感一薄一厚,強烈喚醒味蕾.三文魚子伴瀨尿蝦及蟹膏豆腐三文魚子豐腴甘香,瀨尿蝦甜美,同淡淡蟹膏味既豆腐好夾.雖然我都係鍾意白焯自己剝果種食法多d.紅酒慢煮鮟鱇魚肝魚肝用牛奶浸過,再以紅酒慢煮,質感幼滑綿密,入口慢慢溶融化,味道濃厚而不腥.而伴碟既雞冠藻同青藻,正好幫我清清口腔,(我係海藻控XD)刺身師傅將塊已抹上青檸汁既岩鹽板放係我面前,放係鹽板上既刺身係唔洗再點醬油山葵食架啦.首先係石垣貝師傅拍打貝肉,放上鹽板,貝肉立即卷起,海水味中帶清甜,肉質緊實爽口,感覺清爽.巨型鮮帶子軟嫩鮮甜又帶d彈性,雪白飽滿,肥大肉厚XD絕對係啖啖肉.岩手米崎蠔連殼有我手掌咁長,蠔身雪白飽滿,肉質肥美鮮甜,帶海水味得黎又creamy

師傅即場用煙燻機將蘋果木燻煙,
注入放有黑鯥同銀鱈魚既圓型玻璃缸內,
再將盛有牡丹蝦刺身既碟放上缸頂,
等魚係缸入面進行煙燻.
邊食牡丹蝦,邊睇住d煙係缸入面郁郁下,
超級有趣,食完牡丹蝦,魚就燻好啦.
拎開玻璃碟,燻煙係玻璃缸徐徐散開,
燻好既魚慢慢呈現眼前,
仿如一場魔法表演...

大家咁叫佢係因為酒樽印左三粒米,
味道甜甜地,略帶微微蜜瓜甜味,
應該好受女仔歡迎.
哩間餐廳裝修時尚,店面以黑色為主,
師傅同店員都比較年輕,
師傅好細心,一開始會問我有冇野唔食,
之後以大葉切絲代替蔥,
店員亦有密密加茶,
菜式方面亦加入左d新意念,或者新既表現方法,可能鍾情傳統風味既人會覺得有d怪,
但人總係需要一d新衝擊既.
哩度同過往食過既居酒屋風鮨正,
同傳統風既八寸料亭完全唔同風味.
