2O2O年5月9日和朋友去食飯,幾拾年未食過咁難食食物,炸鲮鱼球皺皮,肉晦超咸,牙带鱼咸到苦,得三小塊,滷水鹅肉鞋冇滷水味,煎蠔餅蠔又小又细粒又散,只有韮菜猪红稍為正常,但偏咸,和大圍及其他吃過潮洲菜,完全吾合格。

潮州明爐烏頭配甜酸肉碎湯,仲有大量香菜、芹菜、芫茜,但我全部都食唔到呢 ﹗幸好個甜酸湯夠濃,可以蓋過佢地獨特既氣味。似乎烏頭受熱不太平均,半邊滾半邊無反應,唯有手動操作,不停將湯淋上烏頭面,希望快點熱又快點熟吧 ﹗耐心地等了十幾廿分鐘,終於滾起熱辣辣,夾返舊大大件既魚肉試試,滑溜 juicy,帶濃郁甜酸湯味非常開胃,魚肉散發著天然鮮魚味道,轉個身已剩低棚骨喇 ﹗好好味呢。

燉響螺瑤柱雞腳湯,每晚限量發售,侍應姐姐講最好打電話預留,好快賣晒架乍。全家都唔飲湯算數,我自己嘆。開呀 ﹗香噴噴氣味直擊臉孔,濃厚雞湯氣味濔漫著。呷一口,響螺味鮮甜可口非常突出,瑤柱海味味道同樣出眾,夠火喉熱辣辣好好飲呀 ﹗雞腳炆得膠膠滑滑又保持彈牙,正。依度一人份燉湯都要 $68 蚊,我銅鑼灣間點心賣 $58 蚊兩人份足料燉湯,抵食夾大件啦。

半煎煮烏頭,我都一把年紀喇,都係第一次食煎烏頭,煮法有點似炆煮。外皮先煎得金黃微脆,能吸引更多芡汁又更香口。淋個秘裝醬汁開始炆,埋個薄芡送上。魚皮腍身汁液豐富甜美,跟鮮嫩魚肉掉入口中,啖啖肉跟醬汁魚汁混和,美味極致。

魚湯浸肉碎魚肚青瓜,甜美健康又清新既一道菜。青瓜爽脆而味道清新,魚肚帶香濃魚味,吸埋香濃魚湯那有不好吃之理呢。肉碎魚肚青瓜要一起食先可以將質感及味道融合,發揮得淋濔盡致,豐富多層次。

潮州凍蟹,我突然好想食蟹,侍應嬸嬸即刻落足嘴頭,依隻新鮮巨蟹可遇不可求架,計平少少比您啦,多謝 $700 蚊,好好好。蟹膏充滿整個蟹蓋,特濃海水咸味,堅咸 ﹗落少少浙醋緩和一下先得。蟹肉同樣泛著海水天然咸香,不過無蟹膏那麼強烈,淡淡咸香散發著蟹肉鮮味。肉質結實微彈而滑滑,味道鮮甜清香,新鮮度表露無遺。

欖菜炒飯,炒得非常香口,雖然濕氣重左少少,幸好飯粒仍然保持嚥韌,味道不錯。

芋泥香酥鴨,因為以前係英國舅父餐館返工時,香酥鴨係炆完隻鴨再起骨,炸到透徹香脆,斬成一絲絲,用薄餅配海鮮醬、大蒜、青瓜捲住食架呢,同北京填鴨食法一樣。所以先入為主,次次都誤會跟舅父餐館出品一樣。

芋泥我完全唔喜歡食的,但芋泥就無問題喎。芋泥跟鴨肉味道直頭係天作之合,撞埋一齊產生出既化學作用使到大家味道得到進一步昇華,好味到難以形型。芋泥完全填充鴨肉每絲纖維隙縫,濕潤黏黏漿漿既質地,芋香處處。鬆化炸醬黏附在嫩滑鴨肉之上,齊件啪入口,讓芋泥、鴨肉、炸醬完全合體,非凡既味道及質感,very nice ﹗

反沙芋,熱騰騰即叫即做,小心燙嘴呀,勁熱 ﹗甜品不懂欣賞、原件芋頭亦不懂欣賞,好甜啊,還可以。媽媽節晚飯除左個青瓜肉鬆魚肚普普通通外,全部高質好食好食,似乎轉左新大廚喎,讚 ﹗

韮菜豬紅,黑湯極為濃郁滷水味,幸好味道不嗆不咸,泛著微微清香。滷水汁已滲透每一粒豬紅,爆開全是甜美汁液。豬紅滑滑彈彈,放在辣椒油上左滾滾、右滾滾再跳入口中,微辣好味道 ﹗醬焗一字骨,炸完再焗,表層已完全吸收甜甜的醬汁,肉質鬆化有咬口,味道不俗。炸雙棗,即蝦棗同蟹棗。味道就非常好喇,但外脆內腍咁有趣既?炸得香脆,但蝦肉蟹肉係裡面散筲筲又腍劈劈囉,沾上浙醋都好食。

鹽焗烏頭,估不到非常鮮甜,肉汁非常豐富,又香又甜好好味 ﹗係欠缺左甘香黃油囉。清得乾乾淨淨,完全蒸發,一絲肉都無得留低。食左咁多間打冷,都只有大圍生昌有得食爆黃油鹽焗烏頭。

半煎煮烏頭,食過當然要翻尋味,以前試過一次堂食,好好味要 encore ﹗外賣真係較為差一點,等齊所有餸煮好先送貨,所以唔夠熱,只係微暖,連味道都差一點。幸好都算好食又有鮮味,肉質幼滑,煎過特別香口又能吸收更多湯汁,索埋上湯及魚湯,Good ﹗

雙面黃,係我既第一次呀 ﹗從來未食過,亦都從來未親眼見過。以前完全唔知道係咩黎,係電視見過好似要跟砂糖同醋一齊食囉。終於都一睹雙面黃既蘆山真面目,沾上浙醋及砂糖,我覺得食緊甜酸媽咪麵囉,脆卜卜又帶少少咸香,好有趣。

今年聖誕節係 Baby Q 過,同成班無地方去既朋友仔共渡平安夜 ﹗仲能夠有緣齊齊享受潮州打冷聖誕餐。臘味炒芥蘭、滷水併盤、炸蠔餅、韮菜豬紅、滷水鵝片、雙面黃、半煎煮烏頭、鹽焗烏頭、醬焗一字骨、炸雙棗、鹽焗烏頭,非常豐富 ﹗

Chiu Chow "Da Lang"(打冷) is embedded deep into Hong Kong's late night dining culture, where flavors are robust, varieties are endless and marinates can have a history as old as the shop, sort of like Chinese comfort food.

I stumbled upon this area bustling with hidden gems and treasures, with the streets of locally-run restaurants and plenty of variety; having my mind set on some Chiu Chow goodness, I naturally landed in this place.

First up, was Chiu Chow Styled Oysters and Minced Meat Congee ($98)(蠔仔肉碎粥). As you can see from the picture, it's not the bland white congee that first comes to mind on mention of congee. The texture is a bit more watery, since the rice is not boiled to a mash like Cantonese congee, so you can taste each ingredient individually. Definitely one of the classics, and very well-executed too!

This next dish is somthing that I've never tried before, a literal translation of the name would be Pomegranate Chrysanthemum Chicken ($120)(菊花石榴雞). The skin of the dumpling is made from duck and chicken egg white, fried into a thin sheet but al dente enough to allow it to be skillfully wrapped around the filling and steamed without falling apart or breaking. The filling is a mix of Chinese mushroom (dong gu), chicken, ham and bamboo shoots, all diced to the same size so they don't overpower each other. The little bundle is carefully tied into a bundle with a small strand of celery leaf. This bite-sized dumpling is a culinary delight, with the different textures and aromas crafted into in a tiny bundle.

This last dish wasn't on the menu, but was recommended to us by the waiter, so apologizes if I do not have an exact name. As I recall, the dish was Deep-Fried Squid/Fish Cake(~$100) (脆炸小堂菜魚/墨魚餅). One of my favorite things about Chinese food is that the fried dishes are (almost) always impeccable compared to western counterparts, attribute that to the magical charm of Wok Fire (鑊氣), since traditional Chinese cooking uses higher temperatures than you would usually find in more refined cuisines. Step into a Chinese kitchen and you will know what I mean when you witness ceiling high flames ablaze. Anyhow, the surface of the fish-cake was crispy and almost as flaky as a mille feuille, the texture inside was a bit like fish balls. The plum sauce for dipping was very appetizing; sweet, sour and fragrant!

為了吃潮州粥,又多點一道蜆仔肉。好像年輕一輩都不太懂得這一味,以為潮州菜就是鵝肉豬紅蠔餅,其實潮州菜最精彩是雅俗共賞。既可花幾百塊吃片堂灼響螺片,也可十元八塊來碗白粥配蜆仔肉。蜆仔肉一向都是下欄貨色,但花時間心機處理後,其中鮮美,實難以形容。一口蜆肉,一口白粥,濃淡得宜,美妙的平衡。

吃到尾聲,見到餐牌中有芋泥。忍不住揚聲來一碗。良久後送上來,先聞,香極,濃濃的油香,一聞就知芋蓉以豬油細推成泥,入口綿密細滑,於舌頭上糾結,香甜濃膩,太好吃!好,但還是忍不住一口接一口,吃至碗底朝天。
上次來發覺水準回勇,又看到陌生面口的老闆,心中以為:「又易手了?」
「怎麼之前不見你?」我問過來倒茶的陌生老闆。
「之前是我姪兒打理,他去了外國,接手了好一陣子。」他再問:「食物好吃嗎?」
「希望你別介意。今晚水準比早陣子好太多。那次,我吃到差點發脾氣。」
「是真的。早一段時間,內部有點問題。員工士氣大跌,連帶也影響出品。」他續說:「不過現在問題都解決了,出品也回復從前水準。師傅沒變,放心。」
聽到這裏我就放心。繼蜆勁村、首爾、金滬川之外,我又多一個飯堂了。潮州冷,起碼,我會為芋泥再來!

蠔餅就很多地方都可以吃到。這裡的蠔餅,我個人感覺是厚薄適中,味道是香,餅邊夠脆。但蠔好像太多。因為本人比較怕一次過吃太多蠔,所以三道菜入面,我最不喜歡的就是這碟。

總結:
因為份量大,比較適合一大班人吃。如果只是兩三人,就很難選擇合適的菜。價值絕對不便宜,但幸好收費和質素相符。店員效率OK,服務也OK。對住在大埔而又喜歡打冷的朋友來說,這裡值得一試。

如果呢個價錢黎講, 我會覺得走去街市夾d滷味番屋企食會正d..
