原來阿媽豆腐花有好多間分店⋯今次嚟到紅磡,就當然試試紅磡「阿媽」啦~其實我最想試佢啲杯裝豆腐花,真係覺得超方便!不過既然堂食,就先來一碗台式黑珍珠配阿媽香滑豆腐花啦!黑珍珠配豆腐花,一黑一白,視角效果極佳!黑珍珠份量好多⋯堅係多⋯多到有啲嫌太多,哈哈!珍珠煮到啱啱好,唔會過淋,而且仲好有咬口。豆腐花豆味重,而且好滑,加入庶糖一齊食,好甜好正!不過⋯黑珍珠加豆腐花一齊食就有小小唔夾,視角上好夾,只是味道上豆腐花偏淡味,冇奶茶咁濃味,所以珍珠奶茶係最夾嘅自製冬菇雞肉燒賣必試系列!足料之餘口感豐富又實在,而且大大粒,加辣食超正!

冬菇比例上唔夠多而且菇味欠奉 如果冬菇粒多番啲就更好了
另外感覺有啲似豬肉燒賣 但無豬肉嘅肉香

$10/5粒的燒賣比魚肉燒賣大粒一些些,如酒樓燒賣尺寸的蒸得熱乎乎!黃色雲吞皮薄得交關,只是外皮跟肉餡輕易分離,像是毫無關係似的。

未熟時如肉糊的雞肉餡在蒸熟後有著彈性咀嚼勁,調味微甜保持有肉汁,只是餡料內的少量冬菇沒有帶出讓味道更佳的菇香,基本只靠甜甜的豉油才有讓人滿意的食味。

無可否認這款冬菇雞肉燒賣食味不錯,對比隨處可見的魚肉燒賣多了自家製的誠意,我這區外人可算特意去吃其燒賣,幾位如店主孩子的小朋友卻只取魚蛋吃,莫非此店魚蛋比自製燒賣更吸引??

人手製造 --- 是否一個吸客的途徑 , 我就是被店門前那位正在默默包燒賣的叔叔所吸引入店, 說我不饞嘴有誰會信, 哈哈 ~熱氣騰騰的冬菇雞肉燒賣, 粒粒扎實, 黃色燒賣皮既薄又滑, 吃得到是有質感而非糊裏糊掉;冬菇雞肉餡的冬菇味重, 雞肉這種容易因熱力加強而熟至嚡的肉質卻沒有在燒賣裏表露出來, 每一粒都是軟身好吃。  但問題來了, 我得了味精反應, 不知道是因為燒賣還是豉油, 我只好點一客蜂蜜冰涼粉。蜂蜜冰涼粉是白涼粉加蜂蜜及冰粒, 晶瑩細嫩的白涼粉清淡爽口, 有說能祛燥潤腸、補腎固精、催精通乳。蜂蜜加冰粒, 味道一定會好, 這種食法挺新穎呢~

「阿媽豆腐花專門店」雖然是一家售賣小食與糖水的小店,但從當日所見,其出品均是自家製作,試問在坊間仍然倚重人身帶出真味的食肆還有多少家?「阿媽豆腐花專門店」確實誠意可嘉!

聖誕節剛與小姐去過南丫島,吃過阿婆豆腐花。是日,與Cc在紅磡覓食,見有一間「元朗阿媽豆腐花專門店」,且有糯米飯,就捨冰室而不入,去吃豆腐花糯米飯。臘味糯米飯$18/碗,另加$4可獲臘腸一條。啡色的糯米飯粒粒分明,入口軟糯煙韌,夾雜臘腸碎粒和冬菇絲在其中,既暖胃又飽肚。當然,遠比不上灣仔強記之作也﹗小店還有坊間較少見的冬菇雞肉燒賣$10/5粒,且是店主即場包製的,信心的保證﹗燒賣大小均一,塞滿冬菇雞肉餡料,口感煙韌富菇香肉香,淋上辣油同吃,更為滋味。一客五粒,解不了嘴饞之癮,故要encore了一份。豆腐花$9/碗,按個人喜好加入黃糖,頓成一碗白中帶黃的美人兒了。豆腐花入口如雲片般,輕盈滑溜,然豆味未算太過香濃,伴入黃糖同吃,已教人吃出個滿足了。黑芝麻糊$16濃稠度適中,可吃出芝麻的香氣,也有芝麻碎殼混雜其中,合格之作,未算極品也。
