今天我陪媽媽來食她最喜歡的糍粑。我們來到了荃灣大河道食中國傳統貴州非常出名的黔知味牛肉米線麵館。這裡的菜單充滿了地方特色,足料抵食,讓人垂涎欲滴。我點了幾道招牌菜:黔知味牛肉湯麺:這碗牛肉湯麺可謂是經典之作。湯底濃郁,牛肉鮮嫩,麵條彈牙,搭配香菜,牛肉特別多。每一口都是暖意。黔知味辣子鷄米線:這道米線讓我驚艷不已。辣子雞肉與米線的搭配,形成了完美的口感對比。鲜肉雲吞:雲吞皮薄餡多,鮮肉的味道鮮美,搭配清爽的湯底,十分開胃。每一口都能感受到餡料的豐富,讓人忍不住想一口氣吃完。甜品喇糯米糍粑:這道甜品是我此次用餐的亮點。外皮香脆,內餡柔軟,糯米的香甜搭配表面的花生碎,讓人一試成主顧。這絕對是喜愛甜品者的福音。最後,黔知味酒釀小丸子加雞蛋:這道小丸子充滿了酒釀的香甜,搭配著雞蛋和糯米飯的綿滑,口感獨特。整體味道清新,適合在飯後享用,讓人回味無窮。貴州黔知味牛肉麵的每一道菜都展現了獨特的地方風味,無論是湯麵、米線還是甜點,都能讓人感受到傳統美食的魅力。 continue reading

講開米線,自然會諗起雲南米線;或者加入咗麻辣湯底,偏近四川口味嘅米線;又或者經過改良,迎合港人口味嘅港式米線。至於,近期香港多咗唔少國內口味嘅餐廳,其中以酸辣香鮮醇厚濃郁為主嘅貴州菜,我哋都真係未食過,所以嚟到荃灣黔知味牛肉米線,就初嚐第一次嘅貴州米線。黔知味怪味牛肉「怪味」牛肉嘅醬汁酸酸辣辣,非常惹味,夠晒醒胃。黔知味牛肉米線黔知味牛肉米線嘅招牌,當然係牛肉米線啦!薄切嘅牛肉除咗肉味濃厚,仲要非常嫩滑。至於米線係粗身米線,食落更有口感更索湯。至於湯底辣味唔嗆鼻,但就好惹味。黔知味蹄花麵蹄花即係豬手,炆煮過嘅豬手嫩滑無比,一咬開就皮肉分離,肉質鬆軟,而豬皮吸收咗湯汁後,口感更滑溜,充滿骨膠原。黔知味夜郎糍粑糍粑可以算係貴州菜嘅代表!糍粑係即叫即做,所以夠晒新鮮熱辣,當中嘅糯米糍粑同玉米糍粑嘅味道比較清雅,而高粱糍粑因為用上高粱混合糯米製成,能夠提升糯米嘅香味,食落煙煙韌韌。 continue reading

是晚來到荃灣,選了在街角的黔知味試試,小店做的是貴州口味。店員好快送上熱茶,仲熱情介紹餐牌,他們的出品都係手工製作啦。⭐辣子雞米線朋友點了辣子雞米線,雞件係預先炒好嘅冇得選擇辣度,但湯麵就可以加辣,朋友呢碗就揀咗大辣。雞件入口鮮味香辣,肉質軟糯唔乾身,米線吸左辣油又香又惹味😋⭐牛肉麵自己點左牛肉麵,牛肉係切成薄薄一片的,份量下得很多,牛肉片有口感,肉味香濃。而湯底很鮮味,加上自己點小辣口味,個人覺得啱啱好連湯都飲埋🤤⭐宣慰府豆幹店員介紹佢地係手工豆乾黎,同香港平時食開嘅豆腐乾好唔同,呢度個感覺係切薄咗嘅豆腐然後炸過,外脆內軟,加埋佢秘製嘅辣椒粉同枱面嘅藤椒粉,又香又麻勁好食🤤⭐涼拌海帶絲併折耳根見國內朋友成日話食折耳根,自己未試過,見餐牌有就點一份試下啦,店員話未食過未必接受到佢嘅口味,所以建議我哋點海帶絲再伴入折耳根,二合一喎😊涼拌汁酸酸辣辣有蒜香,折耳根甘甘苦苦味道獨特,入口個感覺唔知點解覺得有啲似花旗參,哈哈,上網睇下原來折耳根係魚腥草,平時家人用嚟煲湯,唔怪得陣味有啲熟悉啦🤭⭐夜郎三色糍杷店員推介佢哋嘅糍杷,糯米口味係手工製,而玉米同高粱就機製,好奇下就叫份三色糍杷啦,一次過試晒三樣。糯米口感最好,軟軟糯糯有米香,高梁都軟身,入口有陣五谷味,而玉米較硬,有少少粟米香。三色糍杷都係煎的,外脆內軟又唔油膩,好食👍⭐大定玫瑰冰粉 & ⭐桂花酒釀雙花小丸子最後就係食埋糖水,冰粉係凍食,小丸子就熱食的。先講並粉,冰粉冰冰涼涼好滑溜,入面有花生、芝麻、山楂碎等,酸酸甜甜食落舒服。而小丸子即叫即制,剛煲起嘅酒釀好香,入口仲有一陣桂花香。店員話佢哋嘅小丸子都係手工製唔係冰鮮貨,所以入口更加軟糯彈牙,果然無講錯👍我覺得呢度啲嘢啱我口味好食喎,有下次👍 continue reading
