看到這條等電梯的人龍,我倆都很好奇。登龍街,就在CB的熱點隔壁一條街;這裡近年新建成、整幢都是食肆的大廈,更令這兒本身成為熱點。我倆卻少到此尋食,直至看到這條原有商廈樓下的人龍。嘩,原來有間很有人氣的韓牛燒肉店……這天,下午四時半,同伴再次提早下班,我們出現在這店門口。門口貼了張告示:今天店內修理煤氣喉,所以晚市才開門 - 下午六點!對於飢腸轆轆的我們,實在等不了個半小時,而且難得不用排隊等位……裡面有位店員,似乎在享受自己未開工的時光,於是鄙人敲那未解鎖的店門,問了個問題……「請進來吧!」店員致電 (請示上級?) 後,打開門口。「我們五點營業,同事都在路上。」一個令我們驚喜帶著感激的答案!也是個好機會,邊等邊參觀、前菜就讓相機食先!晨早造訪,當然是希望享受早鳥優惠。88折後,一個來回,每位$390。終於五點了,能任食韓牛 (還有從濟州島來的豬肉),我實在有點興奮。看到這「先頭部隊」,心頭冷了一截,如今回顧更甚。當時還等待著將要上桌的韓牛,所以「衝擊」沒那麼大……今餐的主角是韓牛,未到其出場,即使隱約覺得事有蹺蹊,還是耐心等候「牛皇」駕臨……然後要適應的,還有第一次使用的韓式光波燒烤爐。枱面有寫「標準燒烤時間」,大概都不需要一分鐘,以轉盤轉一圈是30秒。問題是,我們這些看肉身變色衡量生熟度的 "Old School",分辨不出爐光的橙紅色和肉的紅色,經常都弄得過熟,而這種爐的「過熟」不是變焦,而是變乾!肉乾咁款的韓牛,您說會好吃嗎?於是我們只有追加再追加,實行「自我培訓」。平心而論,今餐各碟肉料,樣子都正正常常的,為何烹調的效果會強差人意?哪個節骨眼出了岔子?大家有沒有好奇,為何烤肉店沒有特別強勁的抽風系統 (他店的抽風位,就在爐口周圍,但油煙勁起上嚟,還是有漏網之「煙」,特別是油份多的和牛),為何離座時卻「不帶走一點油煙味」呢?因為根本沒有油煙!我想,關鍵就是那初次遇上的光波爐。它有溫度調節功能,而最高是230攝氏度。不過爐是開放式的,手伸得太近中心時,會覺得灼手,但會有230度那麼高嗎?即使有,一片肉,放進去一分鐘,會達到牛脂肪的煙點嗎?不冒煙,哪有焦香、吃出被活化油脂的香濃口感?光顧過的其他燒肉店,都是以明火燒烤,那溫度高得多,可以把肉燒成焦碳;但只要手勢和時間控制得宜,微焦的烤肉就是最可口的!反觀這次,煙點未到,但溶點早已到了,所以不論是油是水,都從肉裡流失了,才會變成肉乾!原來,無煙燒烤,正是其「問題」所在!不錯,以上只是鄙人的思考,還有好幾次的和牛之旅,可以順便證實或反證這「理論」。或者店方可以再考慮,還要用光波爐嗎?當然,轉用明火的話,設備、牌照……代價非同小可! continue reading

自問自己對食嘅要求唔算太高但呢間真係我食過最難食嘅放題,忍唔住第一次寫負評入到去見到佢啲裝修已經覺得有啲唔對路,跟住又話壞機只收現金 FPS PayMe,直覺覺得間野有啲伏但見佢收費都唔平,諗住應該有番咁上下質素,點知肉類選擇唔多,啲肉燒完岀黎勁乾成塊肉乾咁啲豬食落有陣臭豬場嘅味道刺身唔靚,又細塊又薄,唔新鮮食完第一輪已經唔想再叫第二輪肉嘅醬料亦都冇得選擇第一次食放題未夠2個鐘就想埋單走人完全俾啲正評呃咗去食啲staffs一舊雲咁 問佢啲乜都話唔清楚要問吓人先唔介意貼錢買難受嘅可以去試吓👍🏻 continue reading

朋友生日訂左呢度,所以去之前無睇過任何食評。而家睇返,所有劣評都係事實。入到去見到啲前菜放係近門口,望落都知瀨野,啲菠菜….好似煲完湯既西洋菜顏色,仲要水汪汪咁,同職員反應,佢話:放左一晚係會變色!我夜晚6點去食,都變到咁,究竟係從幾點擺到而家?啲食材,唔仔細講喇,因為大部分都係無味既!魚生唔新鮮!另一問題係個爐!做韓燒生意,用光波爐?!燒得又慢,等佢燒得熟又乾哂!因係慳成本所以用呢個爐?食唔包,叫個炒年糕……淋到爛….加幾片脆肉瓜…打左個蠔油芡汁咁….救命😩嬲到咩食物相都無影!職員仲話,呢個價錢好抵食…..係,真係好抵…..抵果個係你…….. continue reading

9月6號晚行過登龍街諗住上去試下韓牛啦,要最貴嗰個餐,價錢438/位, 諗住可以會有啲驚喜, 真係驚多過喜, 頭盤肉類出嚟已經啞黑色, 刺身拼盤食落有雪, 海鮮拼盤唔新鮮, 用二維碼點餐系統內款式唔多, 非常一般, 正所謂嘅韓牛完全冇肉味, 最失敗嘅就係嗰個燒烤光波爐, 燒完出嚟嘅肉全部好似牛肉乾咁樣, 可能講我唔識燒, 但係我已經將燒肉嘅時間減一半都係, 全部肉類冇味, 燒烤配料欠奉, 未試過出街食飯120分鐘放題,可以未夠鐘就埋單走人, 如果本著大無畏精神想去挑戰下嘅可以一試 continue reading
