由淡至咸開始食,海膽配玉子,連玉子都滿滿海膽鮮味,好綿密而且鮮甜味。
❁ Spanish Octopus Carpaccio
八爪魚伴住新鮮魚子,有wasabii同檸檬汁,係好清新嘅凍盤。
❁ Aged Daurenki Tsar Impérial Caviar & Smoked Eel Mousse
魚子醬唔會好咸,薯蓉配蒲燒汁好夾,令成碟口感豐富。
❁ Scottish King Razor Clam & King Crab
以蘇格蘭蟶子王他他特製,有別一般牛肉他他,旁邊有帝王蟹慕絲,啖啖鮮味。
❁ Italian Zucchini Flower & Iberico Ham
幾有誠意的炸物,餡料有芋頭、萵筍、洋蔥等,外脆內軟,topping 配上36個月火腿伊比利亞火腿,有驚喜。
❁ Bouillabaisse
蜆肉鮮甜,龍蝦汁味道濃郁,可以暖胃。

法國黑松露配魚肚,淋上濃郁雞湯,入口嫩滑。

A5黑毛宮崎和牛,五成熟好粉嫩軟,入口即溶,牛味濃郁。
