經同事推介去左灣仔依家食辣野既鄧記雖喜歡食辣但好怕啲死辣死辣既菜館入到去服務態度好既雖然阻人落場如殺人父母但完全無吹我地上到上層既範圍裝修係典雅既氣氛都好柔和可以好好享受美食蒜泥白肉係出色既辣得泥有啲甜平時就食開淡淡肉但佢加左啲脆既口感係每層肉中間雖然我唔知咩泥😂但感到廚師既心思既薑汁青葵我第一次食有啲驚佢好痴立立點知都係爽既好食既仲酸酸地解到辣唔知咩蛋花酸辣羹就無咩特別類似水煮魚個個物體係好食既因為我本身都好中意食夫婦肺片都係一無咩特別紅油抄手每人三粒,精緻又唔會過飽都係辣中帶甜回鍋肉夠火喉既最後上左個涼粉甜品精緻得泥又夠飽每人約二百六十蚊價錢不貴,仲有咁好既環境三五知己傾計聚會係好既聽我同事講廁所有好齊全既野添有埋hand cream 同牙線有史以來都未見過

先上來的是川菜常見的蒜泥白肉及夫妻肺片,這兩道涼菜之普及在那些演變出來的湘川滬菜館中也十分常見,但也經常見著蒜泥如山和辣油完全浸過肺片的情景,而眼前的白肉細緻分明,沒有大堆蒜泥掩蓋肉味之餘,下面的醬汁在麻辣後透出的甜味,跟白肉的油香吃來很夾。

夫妻肺片當中包括牛舌牛肚和牛展,牛舌軟嫩入口無渣,牛肚處理得宜沒內臟腥燥,牛展吃著夠肉香也有點咬口,沾多點醬汁同吃也沒問題,因沒有過份的辣味掩蓋肉香。

薑汁秋葵聽起來不似川菜,自己也不清楚它的由來,但川菜本來就不一定要麻要辣,反正這秋葵吃來爽脆,味道麻不麻辣不辣其實不太重要。

豆湯海鮮小米粥說是湯還是米粥說不上來,碗中的米粒圓圓的,入口不是立即化開的一種而仍有點咬口,最好的是米粒吸收了海鮮湯的味道,令鮮味跟隨米粒在口中活躍起來。

宮保雞丁看似是濃重菜式,吃著卻不完全是,當然它也一定不是清淡那類,而這宮保醬汁其實不一定要濃油重味,只要雞丁炒得剛熟入口仍嫩,包圍著的宮保醬汁夠入味,散發著微微卻持久的椒香便是好菜,今晚的便做到。

乾燒蝦球用上的蝦十分夠份量,烹調好的蝦肉一如其名做得乾身,另川汁脆皮桂魚的粉槳上得夠薄,醬汁只用上泡椒而沒有用蕃茄汁之類以保持風味,出來的效果令嫩滑魚肉不會太辣且帶點甜。

蜀府掛爐烤鴨是今晚比較失色的一道,烤鴨的香味還好,但鴨肉入口是比較韌,鴨身的肉件還好一點,鴨腿附近就真的吃來有點費力。

最後的四川牛肉麵既是飽肚之選,也是愛麵之人之選,麵條不是太粗的一類,吃著有點咬口而掛湯能力也可以,另一主角的牛肉炆得軟嫩而入味,雖看似份量不少但大家也各自吃下眼前的一碗。

今天晚上的川菜體驗不錯,鄧師傅的出品令自己對川菜中一菜一格多了一點體會,也認真的感受到不麻不辣的也是正宗川菜。希望這年已安排好的四川行,可以再深入的見識多一點川菜中一菜一格百菜百味的神髓。

I love Sichuan food so tried this place.

Started with the tequila colada which had a good coconut milk base that prepares your stomach for spicy food but the food wasn't as spicy as anticipated.

The tripe medley was a great starter because I love springy meaty tripe infused in an aromatic spicy oil.

The okra with ginger sauce was a light and healthy jazzed up by the fiery ginger sauce.

The Cheungdu roasted duck is a bit different to Cantonese roast duck because it came with a delicious gravy which complimented rice perfectly as it was flavoured with lots of Sichuan spices.

呢間樓上川菜連酒吧的午餐,原價$88加一,最近正在特價$68加一,可以二選一,牛肉麵或者烤鴨伴飯。我選了:鄧記四川牛肉麵,但就冇加錢配其他飲品或小菜。一上桌都覺得幾大個碗,不過食幾食就見底,即係份量唔太多。一個正常食量的男人應該唔夠,我作為一個肥c9當然都唔夠飽啦!至於味道方面,其實都可以的,不過冇我預期的辣度,感覺已經調教至香港人的口味,類似紅燒湯的走辣版。麵條用了幼麵,都算掛到湯,但份量真係太少了。牛肉切了小粒,食不知味。總結:店員話呢度最近開始兼做午市,不過性價比不高,勝在環境舒服,亦不難搵位。

一上桌都覺得幾大個碗,
不過食幾食就見底,
即係份量唔太多。
一個正常食量的男人應該唔夠,
我作為一個肥c9當然都唔夠飽啦!

至於味道方面,
其實都可以的,
不過冇我預期的辣度,
感覺已經調教至香港人的口味,

蝦球帶點爽彈,配上清甜大蔥及脆口腰果,質感層次會顯得豐富

微稠的醬汁甜辣並重,均勻裹於食材之上,剩下的用作拌飯亦是不錯

友人們喜愛的香口麻辣魚塊 $168以大盤奉桌,魚塊實為一口大小,有辣子雞的即視感

外帶微微酥脆,魚肉不會過乾,其實會像椒鹽魚塊,只是辣意再加明顯

在徇眾要求下香烤牛肋骨 $398以原貌上桌,那是連著大骨,有如斧頭的震撼賣相

其後店方貼心地替我們切分厚身肋肉,俐落無碎屑,大大件入口,無疑的豐潤甜美

不見半點韌柴,富有彈性且帶膠質黏潤,牛肉香而不腥臊,沒有不喜歡的理由

鹹香多汁的成都鐘水餃 $30也教人鐘愛不已,觀其白晢外表,想不到如此重口味

餃皮厚薄點到即止,沒有粉爛跡象,豬肉餡料保持濕潤有致,鹹中帶甜

意外地不會太辣口,外帶蒜泥調味提香,可是再加醬汁就實在太鹹了

醪糟冰粉 $30攜來一抹晶瑩剔透,質感滑嫩溜順,似愛玉又非愛玉本身

另加以花生碎提香,以及酸綿醪糟,即發酵糯米,及糖水伴食

添上味道及質感層次,不見單調,亦為本應重負擔的川菜夜劃上清新甜美的句號

整體而言沒有太大失誤,只是鄧記原本概念就有別於平常川菜,不了解的就會覺得奇怪

加上我們點的大部分是有店方推介標記的菜式,在嚐鮮時也減少了中伏的機會呢!

環境: 除了我覺得枱與枱之間有點逼(當日我們三人旁坐了2枱一大班人, 雖然他們都係"開酒派"的斯文人, 但枱較近, 樓底矮, 有點太噪了...  至於佈置我好鍾意, 因有掛有好多有中國化但好潮的畫作, 都以食材為主題, 我也細意欣賞了每幅畫的畫功與題材! 燈光有點暗, 配有竹子裝式, 四川成都主題配合高級餐廳的氣氛, 風格型格新潮, 但保持中菜的氣質。

之前食評說前菜醬汁有點似, 好等我又試下。覺得分別如下:

點了3個前菜:

蒜泥白肉: 當中我的最愛, 因為紅油蒜香最重, 主要分別是當中最甜, 這些甜味應該以紅糖一同入饌, 甜辣度最適中, 白肉帶點肥, 別怕這些肥, 切了簿片很易入口, 以及帶點脆口, 肥又有點諗, 配上肉質, 有三種層次。 必點這個, 與其他川菜館味道有一點點的不同
夫妻肺片: 第二最愛的醬汁, 原因是當中最辣, 最惹味的!!!! 但怕辣的可能會有少少認為太辣了! 辣味香, 令當中的肉類配搭起來, 又入味又能正正品嚐到紅油的香氣! 
口水雞: 醬汁中偏深色的, 大概因落了醬油關係, 雞件上配有葱花, 花生芝麻碎等, 多了一份香口, 所以整體而言這三個前菜醬汁是有點點不同的。雞件沒有留下很多印象, 肉質諗, 雞皮脆, 味道OK。
3個主菜:
煳辣魚:
極度推介這個主菜! 一上菜花椒味辣椒香撲鼻而來了。面層紅油上菜時還滋滋作響, 是我其中一項分辨菜式好的指標, 花椒辣椒味濃在紅油中繼續散發獨有川菜必有的味道, 是令川菜吸引的地方!
 煳辣魚與水煮魚不同的地方, 是煳辣魚是由魚湯底所做的, 平時其他地方的水煮魚, 你不會想過會潑走紅油喝2口湯汁, 但這個你絕對可以, 因紅油底下之湯底是奶白色的, 一試是鮮香魚湯!! 最驚喜! 當然你不會大口大口的喝, 始終有點油, 細嚐真的很鮮甜, 個人喝了2碗。但可見這細緻位, 魚肉在魚高湯同烹調, 魚肉特鮮味! 再配有薯粉條, 吃得滿足!
唯一今次失望的是原先點了桂魚, 但因廚房誤會關係, 職員推介吃龍脷, 推介說也味道很好, 又沒有骨, 魚肉滑溜。初時有點不願, 但好吧, 一場來到, 不應錯過的。龍脷的確很滑不留口, 魚肉比想像中好, 因切得好厚, 不是坊間的薄薄片的, 啖啖肉, 我想外國人一定最愛了 。

乾煸四季豆: 另一川菜想食菜式, 四季豆不會炒得太乾身, 肉末辣椒同炒, 味道不過不失
乾鍋茶樹菇: 上菜時鍋下有火加熱著, 保持溫度, 菜式比想像中濕身, 因在鍋上總不能太乾, 配有肉絲, 青紅樹同炒, 色彩配搭, 味道OK。

辣局衆辣友久未聚頭難得今次好齊人,可惜還欠久咳未癒的劉總,老友你要快D好番啊!這次揀了這間全程充滿*驚喜*喔!!😏餐廳裝潢雅緻,我們一行9人被安排坐廂房內,坐得十分舒適。小吃各$20/客,腰果香酥脆,泡菜香辣惹味,弄得滿生心期待呢!先來數款涼菜,{蒜泥白肉}$75,真係唔好意思我想食辣嘢唔係想食甜品囉!汁醬甜得過份,還好的是腩肉質感不俗!😅繼而係{口水雞}$75真係唔明白點能夠凍到有冰感的口水雞奉客,雖然我哋叫嘅係冷盤,但係並不是凍盤囉!雞肉並無特別嫩滑可口,醬汁嘅味尚算香口,但對我嚟講辣度未算到位!{夫妻肺片}$90這個我沒試,要交給好友們好好欣賞,但聽聞醬汁跟口水雞沒兩樣!{辣子雞}$168香氣還算足夠,吃下亦都係沒什辣勁,但係雞肉就濕濕碎碎而且份量偏少,以這個價錢我覺得唔值得去試囉!{水煮牛肉}$188我覺得全晚最抵食係呢個㗎啦,雖然我冇試過味道,但起碼份量足夠我們一檯人嘛!{水煮桂魚片}$388呢個水煮魚就經典了,食到最後才發覺我哋一檯九人竟然有四個人沒吃到桂

{水煮桂魚片}$388呢個水煮魚就經典了,食到最後才發覺我哋一檯九人竟然有四個人沒吃到桂花魚,其餘好友亦都係吃了一件咁大把,但係碗內已經沒有剩餘的魚片了!跟侍應了解情況才先O嘴,他跟我們說這兒份量係足夠的,因為這個水煮魚只供三四人份量,之後我沒話好說了!

相比之下,水煮牛肉 ($188) 會足料很多,每人差不多可分兩片。而且這水煮系列中的紅薯粉超煙韌超彈牙,好好吃,引得我們加點2份 ($40@)。但$80的紅薯粉,份量只夠舖紅湯的底層... 讓我們一直納悶:為什麼只上一份薯粉,另一份呢????

之前介紹過嘅鄧記川菜館,佢哋除咗四川菜出色外👍餐廳1F位置仲有個吧枱比大家去飲下酒,連佢啲Cocktail都一樣不得了😈新穎得嚟又有驚喜第一杯白酒Mojito用咗芫茜做底👉仲加入青檸跟白酒調出來,飲落完全唔會覺得唔夾😌仲有一點小清新而另外其中一款四川白酒cocktail就係用咗這枝酒精52度嘅瀘州老窖裝住一小杯😳再用另一杯裝住蕃茄汁、辣椒、橄欖油、風乾番茄、香草鹽等,飲法係一啖白酒一啖蕃茄味飲品😜一樣做到混合效果輪到當晚我最愛的一款😍一樣係用白酒主打,再加入百果園水果跟香茅等材料打成酒跟泡沫😝調酒師更喺酒面加入玉桂粉、香草等香料😏另......專注嘅人係型棍嘅另外仲可叫一些餸菜去佐酒
