招牌菜一定要試。义燒本身己燒好,再在客人面前火燒數秒,熊熊火焰,隨隨的香氣樸鼻以來。义燒採用了海鹽和酒醃製,夠入味。表面的蜜糖香十分惹味。

鬼馬即代表油條,老一輩的人就知了,是懷舊小菜。
牛肉火喉到家,香口惹味,非常軟腍。

鮑汁蝦籽柚皮
坊間少見的古派菜,因製造工夫太過煩複。聽講柚皮的處理方法是每日人手經過十多次渣光水份,務求去除苦澀味道。

阿爺巧手桑拿雞

他即場主理的這道菜是桑拿雞,鍋子共有兩層,面層是蒸雞,底層是雞湯。蒸雞用上了冬菇、雲耳、蟲草花等,重點是墊底的桑葉,散發著淡淡的清香,吃了能降三高,十分有益;底下的雞湯加了紅蘿蔔、粟米等熬足四小時,加上上層蒸雞流下來的精華,這口湯非常濃郁,放涼了湯面會起膠。

紫晶生炒骨

阿爺的首本名菜。一般餐廳的生炒骨會用上糖醋,但因為鼎爺喜歡天然用料,所以他們放棄了糖醋,改用了酸梅汁、新鮮檸檬汁及麥芽糖等來調味,功夫雖多,但味道更天然,吃起來不會嗆喉。

蔥燒汁脆皮婆參

海參吃得多,脆皮的你又吃過沒有?師傅先用蝦米、薑蔥、蒜子等將海參炆至軟腍入味,然後再沾薄漿粉去炸。切開吃一塊,好特別!可能是因為脆皮吧,這口感竟像吃爽口的肥豬肉,且多了一分鮮味。

見到新開業 又係鼎爺的手作 當然嗱嗱聲約埋三五知己即刻訂台食飯啦 來到見到裝修真係好優雅時尚古典集於一身 一坐低已經急不可待的攞Menu點㮸喇 見到好多嘢都好想食 下次一定要再約多D朋友仔上來試 哩度的服務都真係好好 會不斷幫你換新碟 又會問你茶夠唔夠熱 洗唔洗幫你換熱D 食到咁上下又可以走出露台食支煙 同朋友傾下計 所以環境真的很舒服 最驚喜係鼎爺出現 佢會同每一台客傾下計 問下味道如何呀 哩味送如何製作呀 有得食又有得學嘢 真係好貼心 最後當然係要同鼎爺selfie一下啦 好滿足的一餐飯 一定會再來

得知鼎爺的新中菜館 鼎會館 於九月在中環開業 跟朋友們就心動想去試一下於是就在鼎會館開業不久就前往吃午餐 鼎會館座落於中環H QUEEN’S裡面一進去就感覺到裝潢舒適優雅 不過桌子間空間比較少 有點吵鬧的感覺我們一行四人點了行政午市套餐 HKD498一位 可以自選小菜三款燒味雙拼燒肉感覺比較普通 脆皮比較淋身 豉油雞弄得很入味挺出色松茸螺頭燉嫩雞這個湯是我最喜歡的 入口很燙 湯底很清甜 濃郁足料南非湯鮑扣柚皮鮑魚汁不會很濃味蓋過鮑魚味道 柚皮煮得比想象中好 很軟腍清新不會苦澀酒釀乾燒明蝦球蝦球帶點辣味 蝦肉彈牙可口 挺好吃的一道小菜黑松露帶子炒滑蛋炒蛋比較普通 也沒有很重黑松露的味道 唯一可取就是帶子夠鮮甜油鹽水花蛤浸時蔬這道真是令人失望 花蛤鹹到吃不下 最後我們只吃光了蔬菜留下花蛤鮮魚湯腐竹稻庭麵 魚湯清甜 稻庭烏冬彈牙 但真的很小的一碗是日精美甜品 – 番薯糖水好清甜 番薯沒有渣 又不會煮得太軟身 挺好吃環境和服務方面沒有特別 不過不失 商務午餐去的話還是不錯的選擇

難得有機會到鼎爺間新餐廳食飯,一定要寫返篇食評啦!鼎爺煮中菜既功力唔洗質疑,睇電視已經知有幾勁~對比鼎爺第一間餐廳,鼎爺私房菜,呢間餐廳相對上較為便宜,因為可以單點咁食,私房菜就要包圍,呢到既定位亦比較大眾化。呢日食既係午市套餐。豉油雞非常之入味,塊皮係精華,非常juicy ,燒肉層次分明。色澤都好靚~~~個湯係全個餐最正既一點,湯味濃郁鮮甜,入味到爆~回味無窮呀!鮑魚同樣鮮美入味,夠彈牙,旁邊個舊睇落去好似薯蓉,但係其實佢係西柚皮!要用好多心機,先可以將呢個西柚皮煮到唔苦唔澀,雖然係咁,但係我就麻麻地鍾意食個皮呢碟豉椒脆魚都好唔錯價錢唔算平,但我覺得值得一試!!!
