終於試到,這店很受歡迎,撘枱是必然的。原來不是我想像的藥饍湯,有雞湯主題,也有自行配撘的似車仔麵,我選了姫松茸雞湯改了烏東底($72). 嘩,d雞湯濃,雞又滑,可能加錢改了麵底,我碗雞份量比隔鄰食客的多。特别要提他們的特製醬油,微棘吊味一绝。吃完之後,感到疲憊又壓的身體被受到滋養,十分感激。

今日參加行山活動後,山友帶我到上水馬會道午餐。其中之一間食店的名字很吸引,簡單的深色牌匾,襯托「鳳嗚居」三字,頗有風味。門外已有十多人排隊,卻不需半小時便能入座。見菜單上除了藥膳湯麵,也有醉雞湯飯。朋友說店外經常排長龍,在上水非常有名的食店。排隊輪候大約15分鐘,便可以入座。留意到大部分食客都很有同理心,吃完後逗留多十數分鐘便離開,讓排隊等候的客人可以盡快入座。我點選醉雞湯飯和一杯凍百香果。醉雞湯和白飯是分開上枱,湯的酒香撲鼻,可惜藥味太濃,飲兩湯匙已感「足夠」。雞胸和雞髀的肉質都很滑,雞味都唔差。下次會再光顧👍🏻

四川麻辣雞煲:豆卜,火鍋不能沒有您,吸湯一流,精華所在。游水海中蝦,看準時機大滾即落,打醒十二分精神只需2分鐘變色即起﹗爽甜彈牙無比,蝦汁鮮甜奪魄,蝦膏甘香入魂﹗豆苗,瘋狂地吸湯吸油,大大注塞入口,先來菜甜爽爽,最後辣到跳舞感覺刺激舒暢﹗西洋菜,鮮甜爽脆,菜甜味極濃。四川麻辣雞,湯粉麵的永續問題就係胸柴翼鞋,依家火鍋自己烚得剛剛好,胸綿髀彈翼滑不得了﹗滾埋辣椒豉油品享用真心如虎添翼。蝦子麵,吸收所有食材的精華,百味交錯嚥嚥韌韌,連湯帶汁全部倒落肚仔去,幸福滿足。

新鮮本地雞腎,鮮甜到入心,爽脆雞甜味濃到飛天。新鮮本地雞子,雪藏火雞子無得比,蛋味香濃而外脆內軟,綿綿爆汁。新鮮鯇魚骨腩,我係想要脆鯇的,買錯了﹗難怪只係 $20 蚊。自家製辣椒豉油,有著新加坡海南雞的黑糖豉油味道。

滋補醉雞鍋,喜愛一個人的雞煲﹗寫住2至4位份量?是否4個小朋友呢?我一個胃全部清晒飽到上心了,比起醉雞湯河粉好味百倍喎﹗嫩雞一隻、贊岐手打烏冬、唐生菜、活大蜆、新鮮鯇魚骨腩、新鮮本地沙插,巧飽呢。新鮮本地沙插,坊間好多朋友覺得肉韌,但我由細食到大非常喜歡這爽脆的口感,完全唔覺得韌喎,是否蒸過火使得過熟?而且有一種獨特的味道,越食越想食。新鮮鯇魚骨腩,買錯普通鯇魚都照食吧﹗新鮮已足足鮮嫩。活大蜆,開口即撈即食,肥嘟嘟脹卜卜充滿海水味道及鮮甜味。贊岐手打烏冬,最完美的結局就是用上烏冬、出前一丁、蝦子麵或河粉﹗唐生菜,過過口癮沒有菜甜味,爽爽粗糙。滋補醉雞,大滾自己浸雞,肥美嫩滑彈牙多汁,鳳脂甘香,沾埋辣椒豉油無得頂﹗

自家辣椒豉油滋補醉雞湯贊岐手打烏冬,所有海鮮雞牛豬蔬菜精華已溶到濃湯之中,讓手打烏冬自由地浮沉一下吸盡汁液,變得濕潤嚥韌彈牙,大啖大啖連湯帶烏冬一齊掃入口,真的人生一大樂事。溏心蛋,黐牙不彈滑,蛋黃不香甜。加添味淋調味,味淋散發酒味較為強烈,印象中初開業時好食架喎。

豬紅小雲吞牛筋丸麻辣湯紅薯粉,湯底水汪汪所有食材各散東西,馬虎求其掉到湯中凌亂不堪入目,我唯有耐心地續一救回放得整整齊齊照張遺照吧﹗兩粒牛筋丸開邊,嚥嚥韌韌散發濃烈黑椒味,過咸且濁。豬紅依舊無醃無浸原味血腥一咬粉碎,感覺水水韌韌的。小雲吞沒有蝦的迷你鮮肉雲吞,肉鬆糖味重而皮厚滑滑。成餅紅薯粉沉低,黏成一團環環相扣,緊緊抱住還以為係韓國水冷麵,花上半分鐘將她們拆散發開才能舒服地享用。捲曲的紅薯粉有著強勁彈性,帶湯力強跟麻辣湯簡直天作之合﹗

魚腐蟹柳金菇麻辣湯贊岐手打烏冬,無需那麼多湯呢,外觀水汪汪扣晒分數。如果配湯飯,依個湯量就非常正確。麻辣湯實在太出色,忍不住狂灌大半碗湯,麻辣兼備醇厚味濃先辣後甜。魚腐?方形?似鱈魚豆腐假爽索索聲,蟹柳鬆軟水潤腥腥地,金菇爽甜最正常。贊岐烏冬煮得嚥韌嫩滑充滿米香,連麻辣湯灌入口,香辣醒神醒腦好好味。

蔥油雞半隻,見到用鑊上還以為熱的,原來只是淋下大量蔥油在室溫下品嚐。雞件全熟沒半點血絲,雞胸軟綿不乾不鞋,雞髀堅滑十分嫩,兩者同樣雞甜味突出,回味無窮。我最怕就係青蔥,聞到會即刻反胃,不過都膽粗粗試一試。蔥絲夠熟爽爽清香沒半點腥嗅或草青氣味,連我都食得到呢﹗搭件雞併埋蔥絲配白飯一流。

鰻魚飯,賣相膠膠的極不討好﹗匙羹切不開的鰻魚、筷子夾不斷的鰻魚,雖有用筷子夾起原條直接咬吧!微暖膠感十足,極爽彈的質地,沒有烤過燒過的感覺,微波即食叮熱吧﹗

冬菇蟹柳流心蝦子丸番茄湯即食麵,四款湯底都烹調得出奇高質香甜醇美,魚與熊掌不能取捨,靈光一閃決定嘆番茄湯啦!味度極濃黏稠,鮮茄味道無與倫比,酸甜兼備滾熱辣,飲到停不下來﹗到最後唔覺意再次飲到見底喇,失禮晒。依然食不到魚腐牛骨髓蟹子丸,有緣時就會食到﹗冬菇有誠意出花菇厚厚滑嘟嘟菇汁甜美,蟹柳鬆軟吸湯清甜,流心蝦子丸香口彈彈的魚蛋外殼,咬開流出甜甜蝦子醬,熱烘烘特別好味道。勁熱的鮮煮靚麵,不是煮定放湯一食便知龍定蟲﹗黏厚番茄湯緊緊掛在麵條之間,爽彈燙嘴的口感使得我欲罷不能,捲著鮮茄好、蟹柳好、冬菇好,甚至齋啜都依然濃郁味美,實在沒有能給我投訴的理由﹗

餐肉牛腩響鈴喇沙湯河粉,每次幫襯我都會諗定什麼食材配什麼湯底最適合最好味最發輝得到的﹗魚腐豬膶都沽清,唯有轉餐肉響鈴。餐肉厚厚的,而且烚得鬆軟嫩滑不是求其掉塊凍餐肉鋪係面,真係估您唔到誠意十足﹗牛腩高檔次結實啖啖肉,不是牛腩邊碎,彈彈有嚼勁,輕輕牛肉味淡淡牛羶味,稱心滿意﹗響鈴貼心一開三,索湯無得頂,半脆半濕又香口襯到絕﹗河粉份量特別多,彷似吃掉整碟乾炒牛河一樣,幸福飽飽﹗我最喜歡的幼河粉,還要係我最愛的質地,多謝師傅﹗綿滑完整的,不散碎可以大啖大啖豪氣地品嚐,索盡醇美椰香微辣喇沙湯,黏黏漿漿濕潤充滿湯汁,滾燙得越食越起勁﹗

細三兄弟,炸物拼盤是也。炸魚片頭激彈帶爽的質地但有著魚腥味,炸墨魚丸皮香肉粉粉的口感。炸爆漿肉丸其實係乾乾豬餡,微弱肉汁滴滴,那有漿、那有爆﹗每款炸得甘黃透徹香口出煙,食得過的﹗何解又係泰式雞醬甜笠笠,不是任何炸物配雞醬都好食,給我茄汁或甜酸汁更醒胃。

腐皮蟹柳金菇清雞湯出前一丁,清雞湯特濃醇美彷似飲到微弱酒香,泛著微微的腐皮豆味好有趣。腐皮係鮮腐竹來的,滑嘟嘟夠廷身有咬口而豆香出眾,蟹柳孖住黐到實,明顯入晒雪整雙掉去烚,好彩鬆軟吸汁味清甜,金菇份量也不少,爽爽索索菇汁清甜。辣椒油真的唔落好過落,完全破壞晒湯汁及丁麵,桂林辣椒油影子突出,咸咸不香不辣,失敗。滾水烚出前一丁,麵條充滿滾水味道,討厭﹗算數狂架不香不辣既辣椒油都無補於事。

花膠醉香雞湯飯,索價 $88 大元,而普通醉雞湯飯只需 $48 蚊。為塊花膠苦等廿分鐘,附近遲過我落單幾張枱都食完埋單。您塊野好有可疑,比多一次機會您都無改善﹗腥腥地脆卜卜以為食緊水魷一樣,明顯完全無浸發過直接掉去烚點會好食,唔識就上網查下!浸發一日後可以儲存係冰箱最少幾個星期,浪費晒堆花膠,雖然只係平價貨都不要浪費!早前大讚鮮茄濃湯雞嫩滑高質,面前依隻雞大失水準,胸肉乾鞋韌韌給多點牙力趙吧!不是生滾浸熟的嗎?因為要跟花膠一齊烚所以煮過時嗎?髀肉保持結實富彈性,還免強可以的。醉雞湯熱辣辣送到迅速先來幾口,濃厚紅棗甜味夾雜清淡藥材味,醇美順喉酒香沖漬著,去掉以前的苦澀味道,大有進步值得一讚﹗識食一定係將飯續少續少加到湯中以保持湯汁不會降溫不會沖淡,而不是將湯相反地倒落碗白飯那裡呢!飯粒吸盡濃郁湯汁燙住嘴灌入,舒暢滾動,無話可說。

清湯蘿蔔牛腩湯飯,心血來潮好想飲湯,自製湯飯﹗初時見到還覺得湯實在太多不美觀,最後原來送飯剛剛好,還差點不夠飲呢﹗急不及待呷兩啖湯,忍不住再呷多幾啖,極度醇厚甜美,滾熱辣足料好好飲呢﹗白飯要慢慢邊食邊加,不想使到燙湯降溫,不想使到湯汁微稀,每口都要保持清甜高質素﹗少少飯大大啖湯再搭舊牛腩塞入,肥美鬆化的牛腩彈彈吸引,肉汁飛射﹗牛味香而不羶,竟然散發種與別不同的味道,原來是清香花椒八角,有著神秘的魔力,使得我越食就越想食﹗狼吞虎嚥得不下來直到連飯都飲到一滴不漏方可停止。以前被我評到一文不值的烚蘿蔔,我全部清掉,熱辣辣爆汁爽甜,終於都長進喇,非常出色的演繹﹗

豆卜紫菜牛柏葉清雞湯河粉,豆卜要先擠壓幾下,讓更多油份水份釋出再吸盡雞湯享用﹗炸皮香口嚥韌爆湯暢快。牛柏葉灼得爽彈散發甜湯味道實屬罕見,河粉份量特別多飽肚抵食,長長窈窕完整嫩滑。清湯滾燙最好味,熱到颷眼水都照樣灌入口,甩皮起卜都在所不息。紫菜才是精髓,咸鮮味道溶入高湯之中,絲絲入扣動人心弦,連湯都飲到一滴不漏。太過美味掛住食,只影得一張相。

番茄濃湯雞贊岐手打烏冬,白切雞明顯比以前出色,雖然都係略肥,但雞味濃髀肉嬌嫩胸肉軟綿多汁,雞皮腍滑甘香。番茄湯底熱烘烘送上,立即急不及待連呷幾口,特濃鮮茄味道清爽微酸食慾大增,仍在疑惑到底有否添加茄膏呢?迷底很快就會解開。真心好味道好好飲,忍不住邊食烏冬邊飲湯,大啖吸大啖啜。當溫度降低,茄膏味道漸漸浮現,初初輕輕的,越飲到底就越是強烈,其實幾乎全部湯被我消減。師傅都算很有誠意地餚,有大量鮮茄提鮮提味的,茄膏份量未至太過份,感覺比羅宋湯多一點點。嚥韌的贊岐烏冬米香突出非凡,烚得剛好沒有粉口半溶過腍,跟番茄湯十分合襯,掛滿濃湯不停吸啜舒暢無比。晏晝番茄湯河粉、夜晚番茄湯烏冬,好似突然健康左。其實晏晝我本想食咖哩飯,但取消左。其實夜晚我本想食麻辣丁麵,但收左檔啊!

喇沙湯肥牛豬大腸手撕雞米線,肥牛味濃嚥韌,瘦肉牛脂甘甜爽爽。豬大腸滷汁入味不咸帶甜,腸夠肥美彈滑軟塾。手撕雞鮮雞沒隔夜,食得到清淡雞味帶咸香。喇沙湯非常出色比起藥膳雞湯更優質味美!熱到燙嘴最好飲,芬芳撲鼻幼滑香辣充滿椰味,失控地邊食邊飲湯,不經意被我殺掉大半碗呢﹗米線還要是幼身彈滑有趙頭,沒有發脹沒有粉腍,我最喜歡的質地。讓靚湯浸著米線,每次都搭載肥牛大腸及雞絲大大啖隊入口,百般滋味在舌頭,那有不好吃的理由。

豬紅蘿蔔秘製腩肉麻辣湯莜麵,巨形蘿蔔三大舊厚厚圓視覺效果非常震撼﹗那麼大膽比凍野我食?冰凍蘿蔔仲要充滿滾水味無調味,白水烚不是高湯烚,每件一口放棄掉丟。豬紅內外滾燙,外脆內嫩咬開爆汁,何解又係滾水味又係無任何調味?秘製腩肉秘在那裡呢?還以為牛腩,原來係豬腩,腩肉膠膠黏黏,質地全勝,咸香得宜。唐生菜、莜麵、麻辣湯熱熱的好好味,莜麵嚥韌彈滑掛湯好好味,夠麻夠香味道濃郁都好好味,辣到汗水微冒額頭濕濕好鬼過癮﹗
