久仰壽司之神的大名,因為得難book 枱,但又好想試,結果table枱都照食。不過,一路食一路羨慕坐吧枱嘅人,望住佢哋同壽司師傅嘅交流,覺得自己好可憐。講返坐table枱,就係逐碟上,壽司就一大碟幾件全部一齊上。唯一好嘅係個職員都會逐件逐件逐點逐點同你介紹,好過無la. 食物質素都唔錯,好味ga, 新鮮ga. 最有印象係醃製面珠燈,酸酸地好開胃又爽爽地喎,正。不過就冇咗食omakasa個感覺,似去餐廳叫餸食飯。一定要坐吧枱,一定要坐吧枱,下次一定要坐吧枱!

🥬 前菜:
1)牛蒡漬 - 質感爽口、味道偏濃
2)麵豉醬蒜頭 - 從不愛吃蒜頭的我,第一次把生蒜頭鯨吞!蒜頭吃下去非常爽口,沒有一絲辣味,完全不像蒜頭!麵豉醬味道濃郁,原來是從日本直接入口(店員介紹可提早向餐廳訂購此產品)
3)蘿蔔漬 - 入味軟腍,完全沒有筋
4)燉蛋 - 超滑的燉蛋,內裡有帶子粒和蟹柳等,略嫌質感較稀
5)汁煮蛞蜊波菜 - 蛞蜊和波菜都非常鮮甜,味道很不錯

🐟 4款刺身
1)活赤貝 - 活赤貝就是與普通赤貝有很大分別,那新鮮度和爽口感,完勝!
2)深海池魚 - 深海池魚與一般池魚的分別就是肉質帶點咬口,一點都不腥
3)胺康魚肝 - 從來不吃胺康魚肝的我,又再一次挑戰成功!全因它是醃漬過的,汁醬輕輕的把魚肝味道提昇,整體味道變得清甜兼可口,讚~
4)北海道生蠔 - 生蠔本身不算太濃味,但質感滑溜且creamy,不錯~

🐟 蒸魚:
吞拿魚鮫 - 用特製醬汁烹調的魚鮫位置,味道甜甜的,入口即溶,口感更有點像肉類,真是新體驗!

🍣 8件壽司
1)元貝 - 厚切的元貝上面灑上柚子皮和岩鹽,味道清新之餘,新鮮度和口感都非常上乘
2)墨魚、馬糞海膽 - 新鮮墨魚的膠質感、黏稠度一流,配上馬糞海膽同吃,味道昇華,非常合適
3)甜蝦 - 用上全世界體績最大的甜蝦品種,加上自家蝦膏醬,除了夾口彈牙的質感,還有那味道更濃郁的鮮甜味
4)灸燒北海道銀鱈魚 - 銀鱈魚經灸燒後再輕輕灑上岩鹽 ,溢出香濃的油脂就在口裡徘徊不散
5)醬油漬赤身 - 赤身相對是吞拿魚較瘦的部位,加上七色芝麻同吃,整體還不錯
6)吞拿魚腩 - 再來是魚腩部位,用上野生吞拿魚(魚身較深色),稍微配上魚子醬和金箔,整體口感、油脂分佈和味道都一流
7)腦天 - 套餐中最特別的就是這件吞拿魚腦後位置的一小塊肉,師傳說必定要灸燒至半生熟狀態,吃下去才不會太韌,它的味道非常濃郁,入口即化,味道真是好吃得難以形容呢!
8)灸燒右口魚 - 平常只多吃左口魚,原來右口魚是不常動的懶惰魚,所以肉身質感較有咬口,而油脂量比左口魚更濃郁,吃過以後讓人更喜歡~

🍚 刺身飯:
馬糞海膽、醃漬三文魚籽飯 - 小碗子盛載着份量滿滿的馬糞海膽,鮮甜度爆燈,加上三文魚籽是用自家製醬汁醃漬過,味道帶甜,而且每一粒都很飽滿,咬下去有脆爆感,還有點點的食用花作點綴,幸福感爆登啊!

🍮 甜品
柚子啫喱 - 貌似普通的啫喱,夾著淡淡清香的柚子味,感覺清新,底部更有柚子蓉,是用心之作!

在元朗的壽司之神,我很久之前已經聽過這個元朗名店,網路上有不少食評,我一個月前訂咗枱,期待這個午餐。店舖好像是今年裝修過,店內只有壽司吧太約十個位,有三位師傅主理。我今日選擇了$350+10% 的廚師發辦壽司13貫。廚師發辦壽司:帆立貝,墨魚,真鯛,深海池魚,青魚,銀雪魚,白子,天使蝦,甜蝦,赤身,中吞拿魚腩,燒右口魚,海膽。13貫食後感,最有印象係深海池魚,魚身有咬口,已經係最出色嗰件。甜蝦也鮮甜,中吞拿魚腩和海膽正常好味。其他的例如帆立貝,柚子味蓋過帆立貝鮮味。墨魚有燒過令墨魚香脆。白子太黐口,個人不太喜歡。赤身,真鯛,青魚,銀雪魚,天使蝦,燒右口魚,室溫,正常,沒有驚喜。總結:用餐感覺係失望。我自己感覺上,食廚師發板其實係想要其鮮味,可惜依餐飯俾唔到我。可能我吾識嘢,這個主理的方法,係將13件壽司的食材全部切好,放在師傅的主理桌上,我少少懷疑最尾嗰幾件會唔會令到鮮味溜走。為我主理的師傅比較文靜,所以交流亦比較少。希望下次有更好的體驗。

這次已經不是第一次惠顧這裡Omakase, 今次order $780/head 的lunch. 店裡有三位司傅,我們的是女司傅,另外有一位較年長的師傅態度好不友善。其實他應該知道客人就是客人,我們見到佢介紹食物亦不給客人眼神接觸,女司傅說話帶骨,她serve 我和另外一pair 客人,該客人問問題可能不專業,她的回應似覺得該客人什麼也不懂食完最後一件這兩位師傅極速執嘢,好趕落場。上次已見識過佢地會即刻去布後食刺身。感覺非常差,係趕客!雖然係lunch, 但都是客人!香港日本餐廳多的是,之前同佢哋拆伙那間好多了,永不錄用!omakase 除了食物,係service. 加上晚上亦肚痛不適,永不錄用!不過要一讚樓面service 好好!

The first time I went to this omakase restaurant I loved it! So I went here again the other day. This is the second time and I’m a bit disappointed. Everything we had this time don’t look as delicate as last time and the flavor is not that as fresh as last time as well...So they renovated the place, it’s way prettier and bigger now. It’s all bar table. So u can watch the chefs right in front of u. The two of us ordered two $350 omakase set with 13 pieces of nigiris, salad, miso soup and dessert.

抱歉 身為白子瘋狂粉絲嘅我 無辦法唔比佢5分滿分
本身已經去到最後一件寿司 師傅問我夠唔夠飽
如果唔夠飽嘅話可以額外整多個手卷比我嘆吓
不過我已經都幾飽吓...所以就拒絕咗呢個邀請🥺

而呢個時候 我就問最後一件寿司有無機會食到白子
無諗到師傅竟然話有 可以整比我食 太幸福🥰

用白子取替最後一件寿司都唔錯 對我來講係小驚喜
佢有別於我食過嘅白子 想必佢應該唔係鱈魚白子
一粒粒好似雞子咁 食落更加豐盈飽滿超CREAMY...

每一粒都好珍貴 我要好好沉醉於白子爆開嘅每一刻

我嘅第一貫海膽寿司☺️無諗到係嚟得咁突然 正
味道甘甜 海膽味濃郁 仲會有回甘味 幸福感滿滿

亦都估唔到 我食完馬糞海膽之後 隔咗件帆立貝壽司
就輪到紫海膽嘅登場 真係無諗過會有第二貫海膽
不過呢個紫海膽就無馬糞海膽咁有驚喜咁好食
雖然佢都好食 但係海膽味嘅濃度比馬糞海膽淡
佢唔係好濃郁 鮮中又帶點清 清中又有啲甜咁
係另一種享受 不過我個人都係比較鍾意馬糞海膽

♦️松葉蟹海膽

食完啱啱嘅紫海膽 師傅就比咗件好正嘅赤睦我嘆吓
點知之後就整咗呢件松葉蟹海膽 無可否認係心思嘢
我覺得松葉蟹絕對係主角 因為松葉蟹味實在太濃厚
反而海膽味唔係好食到 佢只係弱弱嘅小配角
海膽味完完全全比松葉蟹嘅味道蓋過咗 唔見咗🤣
松葉蟹好鮮 海膽都好食 但佢哋好似做唔到朋友咁
擺埋一齊無互相幫助大家去更上一層樓 相得益彰
反而唔係太融洽而各有各發揮 不過都係我個人感受

平時啲廚師發辦最多都係得啲好普通嘅面豉湯飲
呢個洋蔥湯好有驚喜 店員會提醒你飲之前要攪一攪
唔好睇佢好似好清咁 實際上飲落好濃郁好豐厚
個質感係清得嚟又帶點渾濁 再加上碗湯好足料
飲嘅時候啖啖都食到唔同嘅食材 洋蔥味又香
所以我真心鍾意呢碗熱辣辣嘅湯 真係好好飲👍🏻

♦️甜品 熊本縣蜜瓜

唔係北海道嘅赤蜜瓜 熊本縣嘅赤蜜瓜都收貨👍🏻
呢個時候未去到7-8月都食到咁甜嘅蜜瓜好開心
味道就唔多講喇 好多汁好甜 師傅又切得靚擺得靚

每樣食材都合我心意 當然師傅有問我最鍾意食邊樣
我二話不說就答佢係白子 其次就係赤睦寿司
其他寿司料理都好好食 真係詞窮唔知點講好

我都只係提早幾日去預訂平日嘅晚市 好易訂位
當日BAR檯都只係坐滿咗一半嘅客人 係我意料之外

不過我個人小建議係 希望師傅可以多啲同客人交流
感覺上氣氛會好啲 不過就咁望住師傅整料理都唔錯

出門後我同朋友講點解咁既,一路行一路諗總結2個可能,1)其他客人係熟客所以有所不同,但我又覺得隔離枱應該都係第一次去食,因為佢地都好陌生。
2)我諗番起,會唔會因為我一坐低就叫佢換左枱前隻壽司碟,因為真係好多塵好污糟,但我都好細聲叫服務員換左佢,但原來係要師傅係入面換,嗰刻留意到個師傅面有不悅,可能咁樣會有影響佢既出品。
但點都好啦!到最後2位埋單連加一$3256,真心唔值呢個價位。
我只覺得係殺雞取卵式做生意,可能貴店真係以為掛住壽司之神既招牌就當自己真係神,真可惜。
以上全部都係親身經歷,我肯講出黎係要貴店收到以上訊息,從而改善,而唔係想唱衰貴店,祝壽司之神生意蒸蒸日上
