Hanabi由前Masu 及Nobu 師傅Michael 主理。以前經常到Masu食Omakase,已覺得Michael很有創意。如今去到新鋪,鋪子小了(二十個位左右), Michael 可以有更多時間及空間去發揮。今晚點了$1200 per head 嘅Omakase, 頭盤很精美,有自家製櫻花豆腐,馬糞膽,Toro Tarte 。跟著先來刺身,有大Toro (唔識講有幾肥,請見圖),深海池魚及油甘腩,非常新鮮,很肥美!再來signature dish 金魚缸,上層是岩石蠔,下層煙霧彌漫,原來是用Applewood 煙燻的大Toro, 加上一層金箔,正式色香味俱全!食完後就是食到你叫才停嘅壽司,北海道凡立貝,Toro, 黑目立,仲有好多外面很少食到的鮮魚。全部調好味,不需加Wasabi或豉油。熱盤是石燒松板牛或西京燒。最後還有特制玉子,有點像旦糕。很滿足的一餐!一定再來!

昨天妹夫容沛光帶我去尖沙咀諾士佛臺Hanabi 食日本菜。非常好食,是近年食過最好食的日本菜之一。Hanabi地方不太大,只有12個位,但裝修簡潔,環境舒服。午餐有很多選擇,由HKD280-580都有,那天我們揀咗HKD580那一欵。選完Saka後,就開始食前菜八寸五点,精緻美味,我忘記咗全部名稱,只記得有南瓜,豆腐,牛蒡,菠菜及海藻。豆腐切成兩元硬幣形,很滑,但冇乜豆味。菠菜蓉加上麻醬,好冶味。最好味是牛蒡,對我來講,雖然覺得略鹹,但仍覺好味。然後是金時立,張目魚、 鱸魚,刺身各兩切,為咗要食到魚的鮮味,全部刺身我都唔點醬油,果然食到魚的鮮甜味,尤其是金時立,好似加咗少少糖咁。其中伴剌身上的薑更非食不可,我不喜食辣,也食了七八片,只是微辣,非常美味,必食。我問主廚Michael啲薑為何咁美味,他說是日本薑,再加祕方自家醃製,其它餐廳是做不到的。跟著寿司有,牡丹蝦,黑立,油甘, 醬油漬吞拿魚, 拖羅,穴子,全部都是Michael現場在我們面前即做,所有的魚都非常新鮮,Michael話所有海產都每日由日本新鮮運到,品質有保證。拖羅入口溶化,牡丹蝦除咗非常鮮味,口感亦好,唔係軟㝝㝝。其它壽
