拉麵建議採用捲曲面,掛上濃清湯底。喜愛清湯的媽媽,對此拉麵讚不絶口。

I tried the black paste ($10 extra), which was simply described as "black paste w/ excellent flavor, blended differently with seared garlic". To be honest, I couldn't see how it changed the taste of the soup.

They also offer other side dishes; their braised pork belly is worth a try. The dumplings were nothing to write home about, but I enjoyed them nonetheless.

This might be one of those places where I just have to find the right combination of paste and toppings to hit the spot, so 3 stars for now. One last tip - it's an open kitchen and small space; if you sit at the bar you will leave smelling like food!

There are 3 kinds of different soup base for you to add into the soup so that you can tailor made your soup. By doing so, you can try at least the original flavour as well as your desired flavour. 
Chilli sauce - pretty spicy in tasty but not the killer type that would last for a very long time
Black garlic oil - a lighter selection of garlic soup base with a little oilier in texture
Fried garlic sauce - very strong in garlicky flavour with a less oily texture, grounded garlic pieces can still be found in this very rich soup base

Gyoza does no disappointment to us. Every piece is housemade and they have a very golden crunchy thin skin. The sauce is mixed by your own using different vinegar, soy, and chilli oil. This is also the traditional Japanese way to enjoy gyoza as you get to have the most enjoyment eating something you really like to the root !

Although the address says it is on Staunton Street, it is actually located in an alley just below that (next to Bep on your right hand side if you are going up from the escalator). The size and the interior design is pretty much the same as the Wan Chai shop. I always go for the thin noodle and they have nailed the texture and the pure flour taste. Using Japanese flour, the white ramen holds a lot of soup on its surface, absolutely delicious.

As mentioned you may add extra toppings to your ramen to change up the flavour a little bit and the ramen shop do change their toppings from time to time. We had some pickles spicy cabbages, and veggies and radish this time, they were all very tasteful, a great compliment with the ramen bowl.

Soft boil egg is definitely one thing you have to order from the menu. Perfectly cooked, perfectly marinated, simple yet super sexy. We were also told that you may pay only half price for their imperfect soft boiled egg for a limited amount. Great for those who are not perfectionist!

Something different about this ramen shop is that you may order the soup base separately so that you can try the original pork soup flavour, then you may add your desired taste to your soup. 
They have 3 flavours for now, black garlic paste, red chili miso paste, and flavour sauce which is mainly a fried garlic sauce which is very flavourful.

I personally found the fried garlic sauce very unique, giving a very strong taste the the ramen, while the black garlic paste also gives a smoother taste of garlic and the chili miso paste is a bit more sour and indeed pretty spicy.

Each piece of gyoza is housemade by chef, therefore the shape and the skin is very even. Also, you get to create your own sauce by adding soya, vinegar and chili oil based on your preference.

Their gyoza gave a light crunch from the skin, while the skin is super thin with a bit of chewiness, and the dumpling is packed with ingredients of a mix of pork and veggies. A traditional Japanese delicacy to enjoy in a mouthful.

Their fried chicken pieces are particularly big in size because it uses a whole piece of chicken leg with skin, then deep fried until extremely crispy and juicy. The chicken is covered in a light batter that has been seasoned to give a flavourful savouriness, while the chicken meat itself still maintained its original flavour.

The batter is very different from any other fried chicken. It's very thin and it is not like a whole sheet of flour covering the chicken pieces. Instead, it's like attached to the chicken but still very airy. All the fat and juice is trapped in the chicken between the skin and meat. Very indulging but you cannot miss this when you come here.

With no disappointment, we now can enjoy good authentic Japanese ramen in Central with a very accessible location. Just take the escalator then it will be on your right hand side before Staunton Street! Come and make your own favourite bowl of ramen with your selections of soup base and toppings. Do not forget to order their snacks also because they are just as amazing!

一虎的靈魂湯底還算不錯,以豬骨和蔬菜熬製,隱約有不少背脂,添上辣韭菜後多了一重香味,應能滿足大部份香港人客。

一虎的叉燒很有神虎的風格,偏瘦,筋膜位多,容易入口,但不會感覺太肥膩。

味玉則只是一般。神虎的溏心蛋味道如何我已經不太記得,幸好之前我有寫過blog,重溫舊照片,兩邊的溏心蛋完全是兩碼子的事。近乎無味的溏心蛋,還需另加$12?開玩笑吧?

麵條可選粗幼,白色麵條配這個湯應該是最好選擇,因為一虎始於不是以重口味作賣點。其他配菜如香蔥、雲耳、味付筍等都是正常坊間水準,整碗麵除了味玉失色,其他都尚算合格。

其實我最掛念神虎的,是那一客手作餃子,雖然知道一碗拉麵已經足夠,但還是忍不住要點一客。

一虎的手作餃子是自家製的,餃子皮厚薄適中,餡料也多,但印象中舊店肉汁會較多,今天這客餃子咬開沒有預期的肉汁澎湃,還好煎得夠香夠脆,也不油膩,算是不錯吧。

神虎的味道已隨時間淡忘,感覺一虎沒有神虎好吃,尤其是中環拉麵店很多,難免被比下去。離開之時,在門口看到鳥華亭的咭片,原來兩者是同一集團。據說鳥華亭風評相當不錯,一虎看來還需努力。

結帳後店員給我一張印花咭,儲滿六個印花可免費換一碗拉麵,但不可用於灣仔一虎店。這裡的拉麵雖只一般,但自家製餃子還是很不錯,附近的朋友可以一試。
