之後當然就係主菜啦!重慶水煮本地鮮牛肉,牛肉好大片,用左本地鮮牛肉,肉味好濃,質地有咬口,而且辣度都幾平和,唔會熗喉。
腰果辣子鵪鶉脾,用左澳洲既鵪鶉脾,肉既份量比較多。炸到脆卜卜外皮包囊嫩嫩既鵪鶉肉,一口咬落去,汁水爆出來,令人上癮既一道菜。

最後來番個主食,剁椒花膠撈飯,睇落以為平平無奇,點知食落好出色,花膠霖得來有咬口,加上少少辣既剁椒,好惹味。
酸菜海參龍蝦肉手工麵,鮮甜既龍蝦肉加上酸菜湯底,酸爽鮮辣勁惹味,再加上爽口海參,手工麵條彈牙得來好掛湯。

這間位於上環的井巷子by鋒膳,主打京川菜,假日午市還有free flow brunch,任食多款頭盤及任飲幾款香檳等,其中更有香檳王Dom Pérignon Vintage 2012,2012經歷風霜的葡萄最終成熟後包含了花香及果香,成為一代香檳王。除了4款酒外,還有任飲自家製竹蔗馬蹄甘筍菜米鬚水及羅漢果無花果茶。西班牙向日葵甘栗豚叉燒叉燒燒至表面帶焦香,肥瘦均勻,肉質嫩腍,而且有蜜糖甜香。夫妻肺片切成薄片,牛肚帶點咬口,淡淡麻辣香味,又不會過辣蓋過肉香,十分惹味。怪味醬口水鵝翼鵝翼已去骨,鵝皮爽口,怪味醬帶點醋酸味,可減輕飽滯感。煙燻肥腸入口陣陣的煙燻香味,肥腸外脆肉彈,裏面清理得乾淨,完全無異味。涼拌二十五年黑醋老鼠耳黑醋味比較純,完全無嗆喉,老鼠耳爽脆開胃。皺皮椒酸菜煮英國深海鱸魚鱸魚有三大件,魚肉雪白嫩滑,魚肉鮮甜,加上酸菜微酸惹味,連酸菜湯都很鮮甜。酸菜海參龍蝦球手工麵手工麵跟酸菜湯很夾,麵質爽口,龍蝦球新鮮彈牙,海參膠質豐富。最後食返碗冰粉清一清味蕾,非常滿足的一餐。

今日同老婆去了上環食中菜的free flow brunch。套餐除了有多款京川菜頭盤及主食外,還包了任飲高價的香檳,最便宜的只需加$100,最貴的就是2012年產的香檳王《Dom Pérignon Vintage 2012》,據酒評人所說此酒在收成最好的2012年,酒帶花香及果香,被評為一代酒王。而我們就試了普通的G.H Mumm Grand Cordon NV,送菜都不錯。井巷子片皮鴨:上枱時已包好,片皮鴨皮脆肉嫩,夾了些黃瓜等配料,有少許鴨油脂香。脆皮茅台乳鴿:乳鴿有淡淡的酒香,燒至表皮香脆,乳鴿剛好熟透,保持了肉汁。炸排骨:排骨外層粉漿很薄,炸至金黃香脆,排骨用了梅頭肉,肉質嫩腍。川味牛展:牛展切成薄片,炆至入味而且肉質略帶爽口,有少許的麻辣香,十分開胃的頭盤。青城臘腸菜花:菜花配上臘腸,有陣陣肉香同時又不會太油膩,菜花爽口惹味。皺皮椒酸菜煮英國深海鱸魚:鱸魚魚肉味濃且鮮味十足,酸菜湯味道剛好,不會過酸或過咸,還有些芽菜的配料墊底。酸菜海參龍蝦球手工面:手工麵吸收了酸菜湯及龍蝦鮮味,非常爽口,海參厚身且爽彈,龍蝦球新鮮彈牙。冰粉:冰粉爽滑,加上紅糖的甜味,正好消一消暑氣。

📍井巷子(上環)😋 餐廳裝潢大氣典雅,環境舒適,係同朋友聚餐的不二之選。麻辣鮑魚手撕雞麻香麻而不痺,香而不鹹。脆皮茅台乳鴨每人一小隻,份量不多。肉質平實,滲出淡淡酒香。我把鴨放進伴醬,老闆娘立即溫馨提示:「試試新鮮的味道吧﹗」顯出她對餐廳食物的自信。川辣生炒羊肉鬆拌荷葉餅片皮鴨常吃,今次以羊代鴨,其餘大同小異,但份外驚喜。白胡椒山藥雪蓮子班骨湯中和口感十足麻婆嫩豆腐伴炸饅頭豆腐嫩滑,又以饅頭代白飯,感覺新奇。重慶水煮黑白牛肉牛白肉質感爽口,以水煮烹調,天作之合——必試。麻辣蒜香小龍蝦麵麵條入味,小龍蝦新鮮,值得一試。冰鎮百合綠豆沙綠豆沙配以百合,清新可口,值得一試。最後餐廳送上月餅乙個應節,與友人預祝人月兩團圓。
