To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). 坊間素食店大部分都是中、西式為主,中環蘭桂坊居酒屋Kyoto Joe 竟然有罕見的日式素食放題,兩小時素食晚餐放題每逢週二至週三晚上6時至10時供應,成人每位$530,每位自選一客主菜,前菜、爐端燒、卷物、炸物及熱盤等超過20款素菜則是即叫即製,無限量任點任食。餐廳以奪目的紅色為主調,靈感源自日式鳥居,牆上畫有代表日本文化的鯉魚,象徵好運,開揚的景觀可飽覽中環商業區的景致,亦可遠眺維多利亞港的壯麗海景,戶外座位景觀更開揚,視野廣闊,入夜後把迷人璀燦的夜景盡收眼底。前菜日本雪國山菜冷奴冷豆腐入口絲滑,帶著淡淡的大豆清香,揉合黑松露的馥郁菌香。沖繩苦瓜沙律清脆多汁的苦瓜沾滿梅醬,苦味變得柔和而不刺口,喚醒沉睡的味蕾。海雲低卡富含膳食纖維,擁有獨特的黏滑口感,清爽滑溜溜。綠天使他他混合了五款不同素菜和脆脆,墊以生菜,微辣而口感豐富。卷物食材配搭新派破格,四款卷物飯粒握得緊密,軟硬適中,夾起來不易散開,秋葵卷表面用上日本腐皮包起燒香,墨西哥卷內有牛油果、墨西哥辣椒及芝士,辛辣惹味,雜菜天婦羅勒卷夾雜脆脆口感和草本清香,外皮薄脆的粉翠卷緊緊裹著由富士蘋果、蒟蒻、杏鮑菇組成的內餡。爐端燒拼盤有齊濃薑汁蘿蔔、獅子唐、甜蕃薯、豆腐和素雞,火喉拿捏得準繩無誤,高溫燒烤後仍能保留食材的原味及水分,更能濃縮蔬菜本身的天然清甜味。炸物拉絲蓮根天婦羅外層麵衣粉漿夠薄,蓮藕帶有爽脆咬感,點上熱情果醬酸甜醒胃。紫蘇葉素雞天婦羅素雞其實是將豆皮層層堆疊,紫蘇葉獨有的清雅幽香還可減輕炸物的油膩感。椰菜花天婦羅椰菜花加入甜醬、是拉差醬及芝麻作調味,反而有點像中式咕嚕肉,打破大家對素菜寡淡無味的刻板印象。熱盤素餃子餡料以素代肉,扎實多汁,但就沒有肥豬肉的大量飽和脂肪。焗雜菌集合金菇、冬菇和本菇三種菇類,爽滑有彈性,釋放出樸實原始的木香氣息。煙燻魚刺身盛合+$180放題除了素食之外,自選主菜亦有適合魚素者的海鮮菜式,一開盒隨即飄逸著仙氣般的煙霧,可說是眼睛與味蕾的感官美饌,刺身大片厚切,肉質豐腴細嫩,煙燻過後將魚油及鮮香發揮到極致。銀鱈魚西京燒+$68銀鱈魚豐腴雪白,豐富的油脂使肉質更嫩滑細緻,配上微微甘甜的西京燒醬汁,調味不會過濃而蓋過本身的魚鮮味。兩杯無酒精Mocktails Strawberry Surprise $68和Berry Beri $68入口透心涼,酸爽清新的莓果氣息可以消滯解膩。 continue reading
