個蟹膏粉皮真係好好食我對上嗰次淨係喺Rosewood酒店食喺高粉皮,我覺得今次呢一度上次都係一樣咁好食另外嗰個牌次非常正真係好驚喜,侍應應該做咗好多年全部都係老牌阿姐。嗰個係粉小籠包好香油味呀。仲有嗰個蜜糖脆鱔啊成塊薯片咁樣脆卜卜,直頭食唔停口!太好味,食完今餐要用10日減肥啊!要配飲茅台仲有嗰個馬求蘭菜。好好食。仲有個高力豆沙真正,下次一定再來👍🏻要encore 最後嗰個薑茶湯圓夠晒薑啊。又驅寒又好食。

友人早想來此餐廳食上海菜,所以早就預訂吃午餐。到達時即聽到一個像是高級點的經理拒絕一台沒有訂位的客人不能坐卡位,但後來遇到熟客,即使沒有訂位也旋即帶他們到卡位就坐,整個過程真是耐人尋味。來到上海菜館必叫的小籠包,皮算是薄的;但是肉餡的汁略嫌不夠多,加些醋可以說是收到增添汁液之效。點心之外,也叫了陳醋海蜇頭開一開胃。海蜇尚爽,惜陳醋味太過單薄,未夠醒胃。蜜汁火方除了有常見的夾包及火腿,中間還有一層脆脆的炸腐皮,吃下有層次,較為出色的變奏版。清炒河蝦仁用上細細粒的蝦仁,感覺很正宗,蝦肉爽彈滑溜,調味亦佳。火腿津白是正常發揮,鹹香的金華火腿影襯出津白的甜美,唯一美中不足的是湯太少了。嫩雞燴麵的雞湯不夠濃香,不知是雞絲或雞粒的雞肉細碎,而且麵頗糊口,是一碗試過便算的湯麵。又不是樣樣都好食,加上店員的態度如此差勁,雅聚之所,完來只是留給熟客的。如此這般,倒不如做會員制,根本沒必要再來。

有一個來自上海的老前輩曾經和我說, 在香港的最正宗滬菜酒家, 就是雪園, 豫園和留園. 可惜的是這老三家已經不在, 而雪園的繼承老雪園同樣已經結業, 打著豫園名號, 在銅鑼灣開設的同名餐廳, 水準就是一般, 反而高層的美景才是主打. 留園雅敘作為留園的分支, 能夠堅持到現在, 還受到米芝連加持, 下場可算是比較甜美的. 對我而言, 留園雅敘的生煎包是香港最出色的一家, 底部甘香香脆, 包面濕潤鬆化, 內餡爆汁有肉香, 平均要二十元一個也是必點的項目.紅燒元蹄和松子桂花魚也處理得十分出色, 前者皮腍肉嫩, 骨肉一切即分, 特別欣賞其醬汁濃香甘甜, 層次豐富, 豬皮上的毛刮得相當乾淨, 這道菜前期工作要花的心機和時間, 就是出色的要素. 後者外皮香脆, 就算淋上醬汁也沒有影響其酥脆, 魚肉鮮香, 比用黃花魚口感更為紮實, 少了魚油自然少了一分油膩. 用上香脆的松仁作配菜, 強化口感之餘也更貼題. 砂鍋雲吞雞的湯汁鹹鮮, 雲吞精細皮薄, 沒有糊化的感覺, 當然也比市面吃到的更為出色.Liu Yuen Pavillon is the Michelin started Shanghai styl

Liu Yuen Pavillon is the Michelin started Shanghai styled restaurant in HK that is the branch of famed but closed Liu Yuen restaurant. The pan fried pork bun is one of the best in the town with crispy lower skin and soft upper skin. Extremely juicy so need to be cautious when have your first bite. The braised pork knuckle and the deep fried fish with sweet’n’sour sauce are also the best in the town.
