A serving of duck's tongue costed 20 bucks and in fact, it tasted good with an intense flavour of the 'lo sui' cooked into the flesh, which was spongy and yummy.

Yet i still cant help feeling a little embrassed as i was, in the strictest sense, french-kissing with the duck the tongue originally belonged to.



Even so, the kiss had been a yummy one.

Oh lord, am i turning zoophobia myself?

Lunch Hour同事提議到鹵八吃鹵味,反正未試過,當然要去試吓喇!店中所用的鹵水鵝都是三四斤重的大鵝,掛在廚窗已有吸客之效。一碟鵝片鹵水蛋飯有約八片鵝片,色水對辦,鵝皮亦不算厚。鵝肉經烹煮過後肉質仍算軟腍入味。鹵水汁味道不算十分濃烈,不會過鹹,味道反而覺得恰到好處。鹵水蛋方面,製作不及鵝片出色,略嫌不夠入未。例湯咸菜胡椒豬肚湯,溫熱暖胃,倘若胡椒味道再調濃一點更好!

除左普通鹵味之外,潮州人對鵝肝都情有獨鍾,佢地既鹵水鵝肝,好粉,唔會有多餘既臭味,推仲給唔怕膽固醇的人,不妨一試,話哂法國餐廳,一塊要百幾塊,呢到的,一個都係百幾蚊,雖然質素唔同,但係都十分美味,唔同煮法,當然有唔同既味道同感覺。

到了灣仔春園街,不愁沒有飯開! 從街頭到街尾十數間食肆中,響噹噹的佔了一半以上,好像是金鳳、潮苑、新景園……連南記亦在此開分店揍熱鬧,而我今天要介绍的是以潮州鹵水鵝出名的卥八鵝店。據負責人所說,他們的鹵鵝全是採用潮州的獅頭鵝,所以鵝身特大,而且肉質香軟,非一般鹵鵝可比。 而就我多次在此用膳時所見,確實其門如市,更有熟客專誠從半山驅車到此買鵝,有的又抱怨找不到座位,負責人便推說在灣仔大舖難求,聽了就連我也為自己能在店內進食而榮幸!鹵八最出名的當然是獅頭鵝,由於鵝身大,四份一隻(大約有半隻雞的份量)已經夠一家三口飽腹。 負責人會問:「你要上”樁” 定下”樁”?」(意即謂你要上半截還是下半截?) 當你再問:「哪一截好D?」,他們會跟你說:「隨便你,下”樁” 會多肉D嘅!」,不過事實卻是……下半截雖然多肉,皮卻厚點脂肪多點又重稱點;反而上半截皮薄肉嫩,鵝片(鵝胸肉)也有八、九片,你不用擔心會連鵝頭給你,它是搶手貨,要另外買的。 另一個秘訣是千萬別貪大,大的皮較厚,肉較靭,吃了便會以為鹵八鵝名過其實的了!四份一隻鵝的價錢大約是八、九拾元左右。 懂得選擇了吧!你亦可坐下來品嚐卅元的鵝飯或卅二∕三元

你亦可坐下來品嚐卅元的鵝飯或卅二∕三元的雙併飯,那裏的切雞也不錯啊! 還有,加配例湯亦只需五元,味道亦佳,尤其是在星期一、三和五才供應的胡椒咸菜豬肚湯,又暖胃又可口, 值得一試!
最後帶出一個問題,到底是鵝飯還是鵝片飯好? 在價錢方面,鵝片飯較鵝飯貴九元,鵝片飯的質素較有保證,不過鵝片肉的紋理較粗,亦較難入味(所以要在上面加鹵汁);鵝飯不能要求指定部位,質素沒有保證,但幸運地吃到近翼部份的鵝臂時,嘩!極品!“入味,勁軟滑”,因沒有皮下脂肪,我習慣連皮入口(只是這部份才肯)……此時的鹵水味不在表層,而是由整塊肉中渗出來……我說此部份比任何鵝掌、鵝翼、鵝肝等更為優勝! 品嚐得到是你的幸運!吃到上半截肉的運氣亦不錯啊! 鹵八– 品味俱佳!

Whenever I go for goose at this place, the locals always warn me that eating goose will result in acne attacks, well I have had it for a few consecutive days and it doesn’t happen to me!!Although the thought of an acne attack sends goose pimples forming!Same with fried food, without drinking their so-called “herbal tea” I do not get sore throats either, the only scientific reason I can think of is that the fried food hot, so it probably burns the throat resulting in a sore throat the next day.My

My favourite dish here is the goose slices (sliced goose breast) with rice, it is pure meat, and the skin has also been removed.
I always request it without sauce, because it softens the rice, and the sauce is very oily and I wonder how long its been there after cooking the geese in it.
Instead I prefer the sauce from the bags, it is much more concentrated and less greasy.

The goose slices are rich, but also depends which part they slice it from, one of is much nicer without the artery running through it.
As well as goose, I also tried the liver, very big in size too.

Although the food is good, I think the locals have a better digestive system than me, because the hygiene of roast meats in Hong Kong isn’t that good. They are usually left by the window, and sometimes there are flies.

因為工作, 一支公去左春園街, 在金鳳和鹵八之間選了鹵八近兩點店裡仍然人數不少, 叫左滷水鵝併豆腐飯, 好快已經有得食誰料一黎到, 賣相跟我想像中差很遠, 鵝很多肥膏, 心想下次應該貴d都要叫鵝片, 無法啦, 唯有硬食碟頭飯滷水汁較少, 因為我喜歡汁撈飯, 所以開頭唔敢食太多有汁飯 鵝件滷得入味, 唔會一味得個咸字, 滷水汁有"綿"既感覺, 唔錯, 但可惜真係多左d肥, 相信鵝片會好好多豆腐切法是四面有兩邊是炸皮, 切法比例上都能吃到炸皮跟豆腐, 但滷味相對不夠, 試過就夠還是那句, 喜歡吃鵝就吃鵝片吧

經過無數次, 以為只做外賣, 原來入面有位喎, 下午4時左右, 沒有下午茶餐, 叫了一碟鹵水鵝片飯, 加一碗例湯, 先來湯, 味道略淡, 飲不出湯有加味精, 就算有都應該係好少, 全碗飲清, 鵝片飯賣相不錯, 唯與隔離街”生潮軒”比較, 略為不足, 無他, 因為”生潮軒”的餐是分開飯餸上枱, 加有豆腐和伴菜, 但價錢相差無幾, 但然而, 這店的鵝片質素比”生潮軒”有過之, 鵝羶味十足, 肥瘦適中 每片鵝的皮佔整片鵝肉約六分一, 根本不需要切走鵝皮, 連一起吃也不覺太肥膩, 唯一不足是鹵水味不夠重, 加上辣椒油材料不佳, 油太多而沒椒碎, 愛辣人士不太滿意.

一個人吃東西,可以很簡單,走到灣仔,見未在春園街這間尚未吃過的店子,就走了入去堂吃一點東西吧,不想吃太多,赫見餐牌有潮州粥,當然要點來配滷味,一流,鵝肉吃得多,鵝雜不多吃,見看來店子認真,值得一試,但同時又不捨不得鵝肉,最後貪心的要了鵝雜配鵝片。在等吃的時候,見到不斷有很多顧客是買外賣的,而且大都是說要掌翼的,掌翼是想買也未必有,莫非此處的滷水掌翼乃神物,心想下次來一定要試試。也過了好一陣子,終於有得吃了,吃滷物,滷水尤其重要,此處的滷水,味道不可以說是很濃,但就是很沉隱,滲透力夠,在口中發出持久的滷水香,很是不錯啊!用來浸過的鵝肉真的很是鮮美,但同時也很入味,而鵝肉獨特的羶味尚能保留,仍舊很強,肉質不算嚡,雖比較實,但已經是合格有餘的了。再來是令人振奮,也令人很有罪惡感的鵝雜,鵝雜有鵝肝鵝腸鵝腎,先嚐較為清爽的鵝腎吧,腎不太爽口,咬起來是有點硬實,但滷得很入味,花多點牙力也是值得的;之後吃一口鵝肝,此鵝肝不同彼鵝肝,此鵝肝為膶,由於不是填鵝式的餵肥牠吧,所以吃起來不像法國的肥美,但很夠膶香,加上了濃濃的滷水,也未能掩蓋那份更醇實的膶香,撞在一起一流。最後當然要吃鵝腸,個人一向也愛吃鵝

再來是令人振奮,也令人很有罪惡感的鵝雜,鵝雜有鵝肝鵝腸鵝腎,先嚐較為清爽的鵝腎吧,腎不太爽口,咬起來是有點硬實,但滷得很入味,花多點牙力也是值得的;之後吃一口鵝肝,此鵝肝不同彼鵝肝,此鵝肝為膶,由於不是填鵝式的餵肥牠吧,所以吃起來不像法國的肥美,但很夠膶香,加上了濃濃的滷水,也未能掩蓋那份更醇實的膶香,撞在一起一流。

最後當然要吃鵝腸,個人一向也愛吃鵝腸,最好要是鵝腸壁內佈滿脂肪的鵝腸,可是今天吃到的是非常健康的版本,簡直就是健康人仕的正面教材,因為真的是一點脂肪也沒有,幸好鵝腸仍舊爽口,而且入味,可說是勉強合格吧;而用來墊底的豆腐竟有豆味,也是另一驚喜來的。

用上上述濃郁的滷水汁及滷物,用來下潮州粥是絕配,粥內的米粒是可以夾得起的,對版,加上粥有米香,令我忍不住撈起滷水汁來吃,美味也。此店子的那缸滷水,尤如一位老而彌堅的老伯,有的就是一肚子墨水,一種經年月累積的老味,真值得我懷味。

當值的日子,比平時遲一個鐘食晏,不想留在金鐘吃麥記,於是沿皇后大道中一直走,在合和中心附近轉入橫街,就到了「老伯」鵝店。鹵八的格局比較狹窄,幸已過了午市繁忙時段,店內大把空位。找了一個「面璧位」坐,看看牆上的餐牌,款式選擇甚多,樣樣皆是心頭好,鹵水鵝、豬頸肉、豬大腸、鵝腸、鵝肝、鵝腎、紅腸等,奈何飯最多只可三拚,此刻真想有一大什燴。良久,終於選擇了雙併飯 ($29),以鹵水鵝片拼豬大腸,如果好吃的,下次再嚐其他。飯來了,賣相豐富,鵝片、豬大腸及菜心足足覆蓋了大半白飯,急不及待先試一口鵝肉,皮與瘦肉間有一層肥,入口豐腴而不覺膩。豬大腸處理得當,沒有半點異味,放入口內,慢慢享受大腸獨有的質感,水準的確極高。味道如此精彩,功勞當然是來自鹵八的陳年鹵水汁,味道濃郁之餘,更是咸中帶香,非常吸引,令我一開動就不能自拔,瞬間把碟頭飯吃得一乾二淨。離開前,阿姐向其他客人推介是日老火靚湯,不知味道如何,下次再試其他鹵味時,順道試試滋補一下吧!

午飯考慮了很多選擇聞說公司的司機哥哥經常駕車來這裡買外賣作午餐最後三人決定一試這間鹵水鵝店子很細小一張長&高bar枱 + 三、四張二人枱 + 一張四人枱在門口等了十來分鐘其間真的很多人來買外賣店子專一地賣鹵水食品但種類卻有很多(可參考上圖)既然有這麼多選擇,本著香港人永不執輸的精神,盡量試多幾款三人叫了兩個雙拼飯 + 一個鹵水鵝雜墨魚 + 麻辣三絲 ~ 三絲味道不錯,墨魚正正常常鵝肉 + 豬頭肉 ~ 鵝肉味道很好,切得細細舊的,另豬頭肉亦很香,但好肥呀!!鵝雜 ~ 種類很多,其中鵝心最令我印象深刻,另鵝腸亦很爽口~店子確實細小不過,來這裡都只有一個要求,就是食物味道而今次的確滿足了我這小小要求還有很多品種或許還會有再來的一日,到時再嘗嘗別的~後記:三個人對鹵水認識也不多,大家像問題兒童一樣不斷問問題搭枱的人忍不住向我們一一介紹(很友善的姐姐)或許店職員內心已在罵我們「搞搞震」了!哈~

墨魚 + 麻辣三絲 ~ 三絲味道不錯,墨魚正正常常
鵝肉 + 豬頭肉 ~ 鵝肉味道很好,切得細細舊的,另豬頭肉亦很香,但好肥呀!!
鵝雜 ~ 種類很多,其中鵝心最令我印象深刻,另鵝腸亦很爽口~
店子確實細小
不過,來這裡都只有一個要求,就是食物味道
而今次的確滿足了我這小小要求
還有很多品種
或許還會有再來的一日,到時再嘗嘗別的~
