屯門紅橋嘅奇跡拉麵,早排疫情嚴峻,新開了一段時間,想試但冇開,昨日終於食到。.今次揀咗原味和烏賊濃味拉麵。湯底算厚身,但唔算好濃味,筍幾好味,蔥再多啲就更好。味玉唔夠入味亦做唔到溏心,慢煮薄切叉燒食落軟嫩,亦食得到豚肉味唔錯,可惜只得一塊。而麵嘅份量略嫌少咗啲啲,女士可能剛好,但男士應該會唔夠飽。而烏賊濃味拉麵湯底跟原味一樣,但味道多了一個層次,比原味濃湯好一點。.性價比都ok,口痕想食碗唔錯嘅拉麵應該可以滿足到。

話說小弟都叫半個拉麵控 咁聽啲同道中人交流後 發現屯門有間拉麵店幾推介 咁就試試佢啦係門口等咗大約5分鐘就入座 雖然店舖麻雀雖小,五臟俱全枱面上有傳統拉麵店會提供既冰水 係啲大熱天時下 即刻飲返一兩杯消暑先 然後剔咗個推介拉麵一飲個湯 以小弟既味蕾應該係魚介豬骨 濃厚既湯底但不油膩 如果都覺得油膩 枱面有枝昆布醋 加少少會中和油膩尷既感覺麵底雖然嚟係至愛既博多細麵 但咬口都有嚼勁 唔錯 蛋既都做到有溏心效果 但小弟認為如果用上醬油漬效果會更佳

呢個係1月限定款,湯底清甜,有淡淡鴨香味,鴨胸肉好滑!係第一次食鴨做湯底既拉麵,都幾有驚喜😗下次可以去試其他款口味😛

佢地唔係傳流東京老派,大大舊叉燒,咸到死既湯底,
反而慢煮肉走清新路線,我覺得好好食,當然,份量同傳統底有分別,但其實真正拉麵,係預你飲埋D湯。
其實我覺得份量都適中,岩岩好。

近幾年好多拉麵都係慢煮派,不再絕對濃湯粗麵等等,但其實越薄既叉燒係越難整,但好多都整得好難食。

食過幾次,雖然唔係每次都記得影相。今次推介兩款我愛既。
一個係清湯醬油拉麵。

前後食過兩次,一次係佢地初開鋪,醬油咸味重d, 之後佢地綜合過客人意見,就食材再調整,第二次 食,煥燃一新,清新得黎保留醬油味,魚介味 兩者好夾,我係醬油怪,我都好接受呢碗,無論你鍾唔鍾意醬油拉麵都好,都可以試下 。

油度適中,食落唔油,湯低唔係傳統咸底,我覺得幾易入口,佢肉同魚介味 整體上都平衡,唔係好肉味重既。
(因為我鍾愛醬油底),但都會偶然食其他。佢仲有其他款,我會慢慢試


之後因為政府宣佈 要禁夜市,佢地初開鋪就面對困難,佢地堅持唔做拉麵外賣,我問佢地原因,好簡單,想客人食到一碗新鮮出黎既,而外賣返去變得未必好食,堅持留最好既味道。

最後佢地試作左 一個夜晚外賣用既 飯類,當然,我為左支持小鋪,同埋佢真係有心做拉麵,我都唔想佢地咁快頂唔住。
面對 條街有間大既丸京,老實,唔好用丸京同 以前赤橋黎比啦,你問我,我食完我就唔會再去丸京,至少好味過佢地先。

飯,清湯,咖喱汁,同豬扒。
我好中意佢 配菜,酸洋蔥好好味,
咖喱係牛底,所以牛肉味會偏重,少少辣,好野味。

始終我拎返上去屋企焗住,炸皮都變淋左,所以食落去粉變厚左而搶多左味,
但佢豬扒炸得好好,好軟好多汁!整體上 佢地初整都可以咁好味真係唔錯。

最後 啪返碗佢地既清湯,爽呀!!

總括黎講,佢地仲有進步空間,至少,我中意佢地願意 研究,聽客人意見,再調整,用心專注咁去做。
香港小店經營困難,由其係而家呢段時期,好希望呢類用心做既小店,可以一直有得做。

大家去食完有意見,可以同兩個老細講架,佢地都好nice 架。
