史上最難食 ge 日本料理--鐵板燒,用料差,煮o個個仲差,頂!
一個二百幾元 ge 日式放題都仲好味過佢多多聲,如果要我比錢,我真係會反檯兼打人囉(講笑啫,我真係冇咁失儀囉)哼!

仲要啲服務非常之差,冇人斟茶架,唔叫都唔行埋黎,但成間餐廳得o個幾檯客咋喎,仲要個待應倒左o的汁落我部電話,佢都唔知,今時今日咁 ge服務態度點得架?

P.S. 同事話金鐘 ge 香格里拉大酒店---灘萬係好好食架,但真係冇信心會去試囉;雖然食左餐超難食,食材唔得,煮功唔得,服務態度唔得 ge 鐵板燒,但成晚都好開心,大家笑唔停;其實我未正式番新工,只係間唔中響屋企幫公司整左兩次野,但食飯都有我份,真係好開心 ^^

今天在九龍的NADAMAN試菜上,主人家有個有趣的idea,就是讓大家在菜和肉上選擇一個課題。雖然肉類的菜式在叫座力上有優勢,但連連飯局工作,嘗到一味又爽又清甜的日本筍子,加上木魚花提味,實較萬人like的和牛更窩心,而漂亮的手造碗子,回望也令人回心微笑。

發跡自大阪,以懷石料理起家,在當地已有百七十年歷史了;九龍店只稱得上本店的孫兒,然而每年一月一清早做的御節料理,弄了三十回,亦可說本地飲食的奇聞。當日還嘗到處理得不錯的鱧魚(鰻魚),處理後以冰鎮著,保留彈性肉質。配搭的梅子醬與早前京都之行的味道相去不遠,是用來去腥氣的,但這天魚質素佳,是無用武之地。

星期六下午海港城人逼逼,再次選擇到尖東的nadaman ,因為人少不用訂枱也有位!食物價錢比市川貴少少,同賀菊差不多,但勝在酒店坐得舒服,食物價錢已包括了進食的環境,今次吃牛肉香味燒定食,前菜有沙律,而牛肉香味燒濃淡適中,牛肉下有大堆洋蔥,加上伴碟的蔬菜,提供一日的營養!而最重要的係全場人客不超過20,可以寧靜咁歎一餐!其實港島區的灘萬比尖東的人多,冇訂位好多時冇得食,但勝在環境開揚,兩間各有優劣!1

其他魚版,海老等物不太特別, 不一一評論.

赤飯有點冷乾, 不算好吃, 希望食軟糯的糯米..
湯倒是不錯, 一小片金箔顯得高級, 內有雞肉,冬菇,年糕. 年糕略烤, 軟焾好吃!

380真的算貴, 這食物做得並不出色, 不過欣賞日本人一早吃這麼多就是了

有西京燒,蝦,沙甸魚干,伊達卷,鴨胸肉,數之子等,伊達卷吃落鬆軟,帶出甜味,未算做得出色,想起伊達政宗,歷史說到自己憎遲出生,但其實早出生的話都不算是一流將領.燒魚也夠嫩滑,蒲鉾(かまぼこ)和魚蛋差不多質感,數之子來得爽口,魚干苦中帶甘,,栗金団則用上蜜糖去混在一起,這種感覺猶如在一田所買蜜糖醃蕃薯,昆布卷如果可以厚一點會更好,冬菇滲入蜜汁,非常甜美,這個便當像阿甘正傳中的一句[人生有如一盒巧克力,你永遠不知道將嚐到哪種口味].

第二道菜是刺身,有金槍魚中拖羅、油甘魚、以及極難得的九繪魚。

可能受到地震影響,以 Nadaman 的水準,刺身品質只算一般。可是配上這白鷹 超特選白鷹 純米吟釀,食物的味道竟然得以大大提升。而此清酒淨飲時入口較強,像我這樣不常沾酒的人不能多喝;不過配合這些刺身後,酒味卻變得柔和起來,可見酒能增添食物美味,而食物能改變味蕾對酒的感覺,變化多端。

這瓶白鷹也是屬於馥郁豐醇的「醇酒」,與味道強烈的 wasabi 和豉油,配合得宜。

接着是「煮物」 :時令春荀土佐煮配鯛魚籽旨煮。

春筍多汁爽脆,加上鯛魚籽更是鮮美。

三芳菊 織繪 純米吟釀的「三芳菊酒莊」以香味濃郁為最大特點。此酒是「薰酒」的一種,酒中帶有清新花香,與春筍極之匹配。

「合餚」是燒帆立貝菜花沙律賓伴梅肉醬,右邊紅色的是梅醬,非常之的酸澀。

幸好配起味道豐富復雜、很有 aftertaste 的「熟酒」清酒太平山 天巧 純米大吟釀,完全不會排斥,sake 還顯得更加甜美呢。

來到「燒物」 ,是味噌醬燒日本"魚春"魚、酒盗醬炸海竹蝦、以及日本青瓜伴梅肉味噌醬。

魚柳是說不出的嫩滑香口,加上厚厚的味噌醬,簡直好吃得舌頭也吞下去。

清酒是竹之露 白露垂珠 出羽燦燦 純米大吟釀,「醇酒」,亦是「生原酒」之一,即只經過一次過濾、最原汁原味的清酒。

廚師長」小島孝夫也是東京人,這次出色的菜單便是由他負責設計。當他出來致謝時,大家都熱烈鼓掌讚揚。

食家老前輩唯靈、劉健威、少年食神 Michael 等均是座上客。他們大讚酒的精采,又在菜單上認真地做筆記,寫下每種清酒的特色和評語。

唯靈叔叔甚至對 Eric 說:「餸菜不錯,但配不起你的 sake 啊!」

最後眾來賓舉杯互祝,結束了完滿的一餐。這次 Nadaman 的 Sake Dinner 搞得非常成功,相信很快就有更多 Sake 配日本或各國料理的活動。

雖然只是"迷理懷石",但以午餐份量仍十分足夠. 先付三種: 自家制白胡痳豆腐最好, 香滑吸物: 個湯真係好"清".最回味是那個 "海老 dumpling" 超讚!"殺死米": 新鮮, 可惜只有油甘魚,甜蝦.也太單調了吧!七福蒸:一大碗,蛋滑味好,蟹肉鮮甜.燒物: 銀雪魚西京燒.肉結實味濃. 份量可不小. 雞五目御飯. 其實至此已經好飽,只略淺嘗. 飯很香, 用泡飯應一流.可惜已再放不下肚了.止梡: 豆味十足,未算太甜, 好味!今次多得有"E"人指路(技術支援), 謝謝"信哥"請客(財政支援)! 期望下次吃的懷石不是"mini" 的! Allelujah!

This's my first time here, tried the one at Island Shangri-la before.

Decent and mordern interior design, comfortable seating and very friendly services.

Lunch menu is attractive, there are many choices and now they are offering Christmas Champagne drinks as well.

I tried the sashimi set and my friend ordered the 怀石料理.

For my sashimi set, actually it includes a set of 3 appetizers, 6 selections of sashimi, grill fish, rice and soup. One of the appetizer is the 海参, Yummy! Sashimi is fine selected, very fresh; and the gril fish is nicely done and very delicious.


Another set includes more varieties, apart from the appetizers, the most impressive dish is the yam, beef cheek and 鱼精 tempura; all are perfectly presented, lovely

常常來灘萬,尤其喜歡中午來吃ミニ懷石,原因很簡單,ミニ懷石套餐6~8道菜,每道也精緻美味,每二個月更換一次全新Menu,不時不吃又有創意,才賣$400元,某信用卡更有折扣,實在超值!今天也不例外來吃個ミニ懷石,正值秋冬交替,食材特別丰富!第一道是自家製芝麻豆腐(有點沖繩風)+魚乾菠菜,作為前菜是不錯。第二道是壽司,有本鮪、穴子魚、象拔蚌和燒冬菇,本鮪マグロ(日本海捉到的吞那魚)味鮮肉嫰,比在一般港式日本料理吃到的大西洋或非洲吞那魚腩トロ都好食;象拔蚌又甜又脆還吃到海洋的味道。第三道鵝肝鷄肉饅頭,有點像廣東灌湯餃,但估計餡皮加入薯粉,內裡鵝肝濃香從QQ的餡皮爆發出來,精彩!第四道是我的深秋至愛 – 酸汁白子,一個字『正』!第五道牙帶魚麵醬燒配茄子和小芋頭,以爆米花枝和紅葉作裝飾,充滿深秋浪漫。套餐中五道菜式味道各有層次,料理人明顯花盡心思去討好你的味蕾。最後ミニ懷石套餐以煙肉香芋五目飯配味噌湯,和煙薰李配雪糕作為結束。這個ミニ懷石絕對吃得你飽飽,別再去想什麼「和尚抱著石頭捱餓」的故事了。

We have ordered a combination sushi & tuna sushi bowl, the ingredient itself was ok, but the sushi rice was real bad. There are no taste in the sushi rice at all. and is hard.The cold undo was so so, nothing special at all.This is not the first time we visit this restaurant, and the food is getting worst & worst each time. Disappointed !!

Don't ever order any grilled ***FISH*** from this restaurant. The FISH is so SALTY, and I have to keep drinking tea. We were told that the fish was directly from Japan, somewhere.... but the texture of the fish just showed that it is not fresh at all, and possibly marinated with too much salt to keep it fresh.Conclusion: DON'T ORDER the so called FISH from Japan. DON'T listen to any server who deliberately recommends it. It is only because the fish is expensive and not fresh and difficult to sel
