 Tried the sirloin steak for set lunch. It comes with soup and drinks.Steak was not seasoned at all; they have salt at the table but the pepper is white pepper. Also its  not as tender as I expected. On the good side, service was very attentive . Also they would charge different price for the sauces. I asked for pepper sauce but the sides dishes, potatoes and salad was all dipped in the sauce.

餐廳名字「Nebraska」原來有個故事。相信絕大部份香港人也不知道 Nebraska 是美國52個州的其中之一,原因簡單,Nebraska 位於美國中部,並非旅遊熱門地點、也沒有什麼大城市,主要的經濟活動就是農場及牧場。但如果講到 USDA prime black angus beef,就相信大部份嗜牛一族都一定會知道是什麼,而 Nebraska 就是美國中部其中一個盛產USDA prime black angus beef 的州份。所以,餐廳名字已經說明一切,「Nebraska」所採用的就是最優質的美國牛扒。

既然由第二代主理,基本上已經完全找不到「樂意」的老式懷舊裝修風味(註:所謂懷舊只是以今天的眼光去衡量,在上世紀1970、80年代,卻已經是高級餐廳裝修風格了!),取而代之的就是簡樸舒適的典型美式扒房裝修,其中一角還加設了趟門,以便分隔成為一個獨立小型私人包廂。

餐湯是羅宋湯,用一個小托盤盛載湯碗及一片蒜蓉牛油焗法式長麵包,簡單企理;小托盤一角又印上了餐廳標記,時刻提醒客人,唔放過任何一個宣傳機會。羅宋湯濃稠適中,並不是那種稀如水的清湯、也沒有稠如蕃茄蓉,湯味酸甜均衡。同時又隔走了過量的西芹、蕃茄等熬湯材料,只餘下一些最後階段才加入的椰菜,所以椰菜仍然保持爽甜,並沒有煲到軟腍腍。這種款式的羅宋湯最啱筆者口味,遠勝於那些只有大量雜菜及番茄酸味的羅宋湯。

烤牛扒的上菜方法採用了白色瓷碟,其實沒有什麼特別之處,所有正統美式扒房都應該採用這種方法(部份或會用木板上菜)。特別一提只因為「樂意」年代已經跟足美式扒房用白色瓷碟,並非港式西餐的鐵板扒餐;所以,「樂意」是本地經典老牌扒房,並非港式西餐,江湖地位也因此而來。講返件牛扒,表面有非常明顯的明火燒烤而引致的微微焦燶,也是這些焦燶才能夠帶出烤牛扒的香氣(當然,如果是炭火,效果會更好),用鐵板生煎無論如何也不能產生這種效果。

牛扒靠近邊緣的部位一定會稍為偏熟,最適合我家小女兒;中心部份則是剛剛五成熟,依然保留淡鮮紅色。始終是頂級美國牛肉,牛味濃郁、肉汁豐溢、肉質鬆軟,每一啖都能滿足嗜牛一族的口腹之欲。

羊架真的非常大件,雖然只有兩支骨,但非常肉厚,而且所有羊皮羊脂都切除得非常徹底。起初也擔心如此大件的羊架,會否非常粗鞋、難以咀嚼?切開厚厚的羊架,見到粉紅色的肉心、沒有多餘的血水,七成熟的火喉控制得相當準確。咬落去雖然未至於非常鬆軟,但肉質完全不粗糙、又沒有渣滓、兼充滿肉汁,真係有啲估唔到咁大件兼厚身的羊架有如此質素;不足之處就是肉質偏硬、未夠鬆軟及羊味偏淡、唔夠明顯,唔係好似食緊羊架。

是日款式是 ew York cheese 拼咖啡芝士雙層餅,餅底由曲奇餅碎壓成,表面一層薄薄的白朱古力漿、襯上黑朱古力紋理,仿雲石紋圖案也實在相當吸引。cheese cake 質感結實之餘,入口仍然相當軟綿、順滑、黏稠,口感相當好。味道方面,New York cheese 較淡口、咖啡芝士也不算香濃,仍有改善空間;但以一間非甜品專門店來說,已經是一件相當好的 cheese cake 了。

以質素及份量來說,午餐價錢算合理;但講到正價餐牌價,尤其是牛扒,「Nebraska」與其他高級扒房差不多是同一個級數,比她更貴的就要數到酒店級頂級扒房。牛扒以外的價錢則稍為低一點,未去到高級扒房級數。但整體而言,在「Nebraska」食晚餐鋸扒算幾貴,以這個價錢,無論環境、服務、氣氛應該會有更好的選擇;總結一句,「Nebraska」的午餐的確抵食,晚餐則要試過才知道。

Had dinner with my friends to celebrate my birthday and found the steak prices higher than other good restaurants in Central and Soho!My steak was nice but I wouldn't rave about it, will we go back again probably not because I was surprised that the prices are too expensive. My third visit and second time with two other friends to tackle the Tomahawk steak, this time only 1kg (vs 1.2kg in the previous visit).   Cooked medium and the inside was pink, juicy and pleasingly warm.  The charred outside provided a satisfying crunch while the texture was tender towards the middle - a little too fatty at one end of the steak but that has more to do with the cut rather than the cooking technique.  Overall as good as last time and I prefer the smaller size as we can still eat

Poor value for money. Spent a lot but left very unfulfilled. Steak was cooked poorly but the worst is it was obviously a poor quality cut pre-preparation. Certainly expected more for $1500. Salad was pretty weak too. Mixed on service: the older guy tried hard but it was a lost cause... unique HK phenomenon of having lots of ppl standing around but they are all inattentive at the same time... wasn't sure what they were trying to be: old school steakhouse like Mortons or hip like a Japanese joint.

之前Step返灣仔舊公司探同事時一起享用午餐,當說起灣仔美食,大家不其然說起很多很多不同的食店,如日本拉麵、刺生丼、喇沙、Burger店、私房菜等等,原來灣仔在Step離開以後,多了很多很多食店開張


無他的,灣仔也是一個不斷地轉變的地區,愈來愈多新的住宅屋苑落成
,令該區注入了新的客源,消費能力也是不容忽視呢??!!(實在是很不公平呢??!!為何是Step離開了才不斷開張呢??!!

當大家講得興高彩烈時,突然秘書姐姐跟Step說:『Step,講開美食,有一間食牛扒的西餐廳,那裡的牛扒除了味道不錯,還很有特色呢??』

『咦,牛扒是我的最愛
,那麼位置在那裡,等我和娘子一起去試試…』Step問。

『位置就是在莊士敦道循道衛理聯合教會香港堂那邊,名字叫Nebraska
!!之前老闆在那裡訂位和我一起用膳,所以才知道那裡有間正正食店…』秘書姐姐微笑說著。

到達店的門口,門口的設計簡樸自然,灰色石磚拼上黑色的玻璃趟門,加上由餐廳裡照射出來的啡黃色燈光,感覺加了幾分神秘感,而玻璃趟門打開後可以令Nebraska搖身一變成為一間酒吧!!

四周的牆身用上了灰色的石磚砌成,而石磚與石磚之間還加入了黑色縲絲鐵片在中間,牆上還掛了不少木製盾牌,再配上用水管鐵通做成的掛牆燈和吊燈,加上燈光有點昏陰,全個感覺就像置身在歐洲的古老餐廳之中,很有氣氛和情調,幸好摩登設計的餐椅和淺木色的餐桌,減少了裝潢所帶給客人的冰冷感覺

講RAW的話當然少不了的就是廚師推介的黑板,只用鐵線吊著黑板掛在牆上的水管裝飾之上;四周也是一灌西餐廳的特色放了很多不同的紅酒樽作為裝飾,而檯上還放有餐廳推介的紅酒和礦泉水,供客人隨心飲用

咬了一口後,餐包烘得香脆可口,咀嚼時卜卜脆完全聽到『唰唰』的聲音;麵包的麵粉密度甚高,令麵包在口中一樣有咀嚼感;大家不要以為這塊是普通的蒜蓉餐包,當中蒜蓉醬還加了芝士,令餐包表面一樣烤得鬆脆,加上還加了一點香草在表面,熱哄哄的香味非常捧;雖然芝士加上了蒜蓉,但整體鹹味適中非常惹味!!


不過還是同意娘子所說,這個餐包的質感還是用來配上餐湯一起食用比較好,所以Step吃了一口之後,餘下部份還是留給用來配送餐湯呢!!

再來的就是由Waiter推介的招牌前菜Crab Cake蟹餅
這個是每日限量供應
,原因廚師想保持著蟹餅新鮮,每次只會弄適當的份量,賣完後便可以用新鮮材料再造;

送來時可能是屬於前菜的關係,蟹餅的份量並不算多,而蟹餅表面也像是炸得有點過火了,金黃色中帶點焦黑,感覺也有點乾

急不及待吃了一口,蟹餅中的蟹肉絲在口腔中慢慢散開,蟹肉絲鮮味十足,鮮甜可口,啖啖蟹肉的口感,實在非常滿足;表面得香脆鬆化,雖然炸得有點過了火,但蟹餅裡卻很Juicy濕潤,一點也不覺得乾身

加上除了蟹肉絲外,廚師還加了磨菇、白菌、乾蔥、西芹、青紅椒等,令口感層次變得更為豐富,不致於只有蟹肉絲般單調,也令蟹肉絲的鮮味更為突出
,當然蟹餅的味道出眾最重要還是要材料新鮮,否則一定大打折扣;

和之前Step在別的餐廳食過的蟹餅相比,之前吃的蟹餅是一粒粒蟹肉所組成,口感當然比Nebraska好,但味道卻沒有Nebraska的蟹肉絲般滋味,各有各好,味道卻是一樣的美味!!


旁邊還配了一碟千島沙律醬,用來伴蟹餅一起進食,但Step和娘子皆覺得不用點醬已經非常足夠,可以食出蟹餅的原汁原味;而如果感覺蟹餅有點油膩的話,可以吃伴碟蔬菜沙律,用來清清口腔的油膩感覺!!

先來的就是娘子的法式焗洋蔥湯,送來的時候並沒有加芝士粉,而Waiter則問娘子要不要加芝士粉令湯更為惹味,娘子當然沒有拒絕,所以湯面上便多了一層芝士粉…


Step立即用湯羮看看湯料,開始時還會以為一大件的湯料是煲熬後的原個洋蔥,但後來入口後才知道這是一件麵包!!洋蔥湯的湯色非常濃郁,湯中亦不易找到洋蔥的踪影,相信被廚師煲熬到溶在湯中…

Step先喝一口湯,洋蔥湯湯色濃郁卻沒有半點油份,入口時味道清啖得來又帶點洋蔥的甘甜味道;雖然洋蔥的湯料大部份已經溶在湯中,但餘下在湯中的洋蔥,在口腔中會有慢慢融化的感覺,非常捧


其實娘子對洋蔥味並不算喜愛,但娘子卻不抗拒這個洋蔥湯,娘子解釋湯中的麵包味道中和了一點洋蔥味,加上麵包被洋蔥湯浸得口感軟綿綿似海綿一樣,吸收了洋蔥湯的鮮味,再配合芝士粉淡淡不太濃的芝士鹹香,令麵包的味道與口感有著言語說不出的合襯感覺!!

至於Step的蟹肉磨菇湯,送來是和一般的忌廉磨菇湯沒有太大的分別,不過只要用湯羮載起忌廉湯,不難發現湯中有著數塊體積不少的蟹肉,令Step和娘子頓時變成心心眼!!

入口時,磨菇湯質感絲滑,磨菇被廚師打得非常碎,已經和忌廉湯融為一體(雖然間中會感覺到磨菇的口感),味道來說忌廉味較磨菇味香濃
;不過最令Step和娘子驚喜的就是湯中的蟹肉,不是之前Crab Cake的蟹肉絲,入口時每一啖都是充滿著一粒粒size不少的蟹肉,蟹肉不但新鮮,而且鮮甜可口,肉質爽滑煙韌,令Step感到非常滿足


開始時Step還擔蟹肉在磨菇忌廉湯中會帶點腥味,於是便落了一點胡椒粉,但原來是Step過於擔心,新鮮的蟹肉鮮味,輕輕的滲在磨菇忌廉湯之中,整體味道出奇的合襯


不過以Step的口味來說,還是希望可以喝到多一點磨菇的咀嚼感,這樣蟹肉磨菇湯可以更為完美了!!


整得一提的是兩個湯喝完後喉嚨也沒有乾涸之感,這個湯絕對是真材實料,沒有加任何味精!!

Waiter送來時,一塊脹卜卜的肉眼牛扒,被特制的松露汁先包圍著;而側邊則放有一只蠔殼,這個蠔殼就是用來驗明正身,證明牛扒中夾著的生蠔就是來只這個生蠔殼,而並非是一般的貨色!!

Step當然先食牛排,在牛排上面看到廚師已經放有幾粒粗鹽在上面,原因肉眼牛扒沒有任何調味,上乘的牛排只需要用粗鹽就已經可以突出肉眼牛扒原始的鮮味


Waiter說這塊『氈包』式牛排的生熟程度一定是Medium Rare,Step用餐刀切開肉眼牛排,血紅色的肉汁頓時慢慢流出,Waiter所言非虛,不習慣吃較生牛扒的人士不知會否對這個肉眼牛排有點抗拒呢?

當Step再切肉眼牛柳時,發現生蠔正正就是鑲在肉眼牛柳中間如三文治一樣;生蠔在Medium Rare的牛柳生熟程度之下,生蠔帶點半生熟的口感,新鮮可口,味道帶點海水味,而令Step感到喜出望外的是生蠔也吸收了一點牛排的肉香味,令生蠔出奇地美味,當然牛排也是吸收了生蠔的鮮味,一樣是滋味無窮;


此時此刻,Step不得不讚嘆廚師的廚藝功架,又要控制牛排在Medium Rare生熟程度,又要將生蠔保持在半生熟狀態,實在是非常困難呢!!??


包圍著牛排的松露汁,原來也是Nebraska秘制的,據Waiter所講,以前這個『氈包』式牛排用的是Brown Sauce,現在為了提升高級明貴的感覺,便用了松露汁


這個松露汁用上了白菌、忌廉、乾蔥、白蘭地、白酒、松露等調制而成,只需要輕輕一點,便可以帶出牛排的鮮味;不過Step認為真的只是輕輕一點便可以,因為松露汁的味道濃郁,如果太多的話便會蓋過肉眼牛排和生蠔的味道,不過肉眼牛排被松露汁包圍,所以不再點松露汁已經夠味了!!


當牛肉味道遇上生蠔的鮮味,這樣新鮮創意的配搭,意想不到的合襯好味道!!

這個美國黑毛豬扒,是來自美國農場殼飼的黑毛豬,而側面有一碟醬汁,就這是蘋果醬汁,還有一個煙肉碎焗薯和雜菜沙律!!

Waiter所講,這個蘋果醬汁也是Nebraska秘制的,廚師在烹調黑毛豬扒的時候,發覺沒有一種醬汁可以突顯出黑毛豬扒的鮮味,所以最後專程調制了這個醬汁來配搭這個黑毛豬扒,這種對味道追求極致的要求,實在令Step刮目相看!!

Step搶先娘子一步用刀切開黑毛豬,入口時,第一個感覺肉質鮮嫩鬆軟,肉味濃厚鮮味不俗,問過Waiter,這塊黑毛豬其實只是Medium Cook,以保持嫩滑可口的口感
,不用擔心豬肉未有熟透,原因這個是殼飼黑毛豬,肉質質素高而純正,半生熟進食也不會有問題;

Step覺得這個黑毛豬已經不需要甚麼調味,原因肉味甘香濃郁,廚師只是用Grill燒即可,但既然有這個專為黑毛豬而設的蘋果汁,一定要點一點試試;用了這個又酸又甜的蘋果醬汁,竟然令這個黑毛豬的鮮味更好更正,味道真的是非常合拍,正啊!!


娘子每食一口黑毛豬,一邊點這個蘋果醬汁,娘子說非常喜歡這個帶骨美國黑毛豬扒配蘋果醬汁,Step在吃過之後,也被這個味道與口感所吸引著,頓時忘記了自己的『氈包』式牛排??!!


不過坦白說,兩道主菜的味道取向不同,各自各精彩,各有各的美味!!

原因這個意式咖啡其實就是一杯single shot Expresso,咖啡味道濃郁,再配上雲尼拿雪糕,感覺變成了一杯香甜的清涼的Cappuccino
,娘子當然食得非常開心,不過Step就覺得用雲尼拿雪糕做Expresso的奶和糖,味道有點過甜呢??!!

最後結帳時每人大約為760元(連加一),Step和娘子食得心滿意足,雖然價格來說較為高昂一點,但食物的質素上乘,古法烹調的美味牛排,為極緻美味而調制的醬汁,這一切一切都令Step和娘子對Nebraska這家Steak House留下深刻印象,怪不知秘書姐姐誠意推介這家餐廳給Step,令Step在灣仔又發現了一間值得一來再來的美味餐廳!!

So the first day, I went and ordered the sirloin steak 

Grilled angus sirloin (mushroom sauce) •$168 • 7/10
 I like steaks ranged from medium rare to medium. The grilled Angus is medium and heat control is perfect. The mushroom sauce is abit watery and hard to 'scoop' the sauce with just a dip. The beef is tender, moist and juicy and I would say the sauce dragged the beef taste down but overall a high quality steak

I went there again the other day for lunch and this time ordered the prime ribeye

USAD prime ribeye • $258 • 8/10

This time, i choose the USAD prime ribeye with medium rare. Grilled without sauce and the flavour is very nice. The simple sprinkle of salt does all the work and taste better with the sauce (yesterday).

Beef is definitely more tender than the sirloin i tried and is mouth-watering. The beef essence is intense and enjoyed the steak. Most of the people might skip the entremet, but here, i would like to focus also on the entremet.

The potato i believed is the yukon gold, which is creamy, paired with well-cooked onion makes you wanna eat more. The mixed leaf salad paired with balsamico crema is just sensational. The only regret is that i didn't order a wine orelse it would be a complete meal. Would definitely pair with wine next time !! But around $250 a ribeye compare to a $160 sirloin, really depends if people want to pay for the high cost-taste ratio.
But overall quite like this restaurant. Tried both days and the consistency seems to be good which is one of the key to become a good restaurant!

Other Info. : Promotion of half-bottle of 2006 Chateau Lapeyre St-Emilion grand cru on the table, pairs well with the steak, $290 is acceptable but not great value.
