朋友極力推介nobu,決定今晚同老公試試,餐廳環境昏暗,適合情侶用餐,比起州際steakhouse寧靜!服務好細心,不停替食客轉換熱的綠茶.我們叫了salmon in new style sashmi,sashmi set作為頭盤半生熟的salmon 好滑,而dressing好香芝麻味,幾清新的背合.另外sashmi set 有湯,飯+salad,好一般的套餐.熱盤有black cod saikyo yaki,好有水準的一道菜式,rock shrimp tempura with creamy spicy sauce,薄薄的脆漿包著蝦肉,非常香口,底部有沙律菜,中和炸物的油膩感!A3 saga beef老公話吾錯,seafood pan fried rice係外層剪到香脆的炒飯,有點似rice burger,幾得意!甜品就選擇了chocolate bento baow with green tea ice-cream,這個質素一般,steakhouse 的molten cake 比較出色.

I had been thinking of trying Nobu and finally I had a chance to do so.Good The quality of food is really high there. All the meat, fish and veggies were so fresh. It was the only part that I appreciated.Bad 1. Some posh restaurants have forgotten it is restaurants' duties to feed customers. It is the number one golden rule! I had been thinking of trying Nobu and finally I had a chance to do so.

Good

The quality of food is really high there. All the meat, fish and veggies were so fresh. It was the only part that I appreciated.

Bad

1. Some posh restaurants have forgotten it is restaurants' duties to feed customers. It is the number one golden rule! If you walk out a restaurant with an empty stomach, that is the biggest failure of restaurants.
I had a set dinner with toro as appetizer, lobster salad, beef as main course and desert. I was still hungry after the 4-course dinner. It wasn't only me who was still hungry, but also my friends. If a restaurant cannot feed customers, it fails!

2. Dressing was too strong
The food was so fresh that didn't need much dressing, however, it was either to spicy or sour which covered the original fresh taste of the food. Too bad! How can a 3-star restaurant make this kind of silly mistake?!

3. Noisy environment
There is no doubt that the harbour view was brilliant, but the restaurant was as noisy as a 茶餐廳. Tables were next to each other and I could even hear what other people were discussing. You pay 3-star restaurant price for a 茶餐廳 environment.

4. Only ONE washroom
I cannot believe there is only ONE washroom in such a renowned restaurant. Yes, only one female washroom and NO male washroom!! Guys, you need to use the "Disable" one, sorry.

5. Slow service
I had to put up my hands for about 1 minute before waiters noticed me.

In conclusion, it was a VERY disappointing dinning experience. Sorry to say that but I will not visit Nobu again. Being ripped off once is surely enough.

NOBU Signature Bento Box 係集齊哂Nobu出名的菜式~:

Sushi and Sushi Roll Assortment: 壽司飯軟硬適中,食得出粒粒分名,而且係 bite size,所以同個魚生大小比例剛剛好~魚生中,最好味係中間那件白色魚,肉質彈牙,無腥味,只有魚鮮味,正~!

Sashimi Salad with Matsuhisa Dressing: 呢個係tuna整到外層熟,入面生,但我唔太鐘意個dressing 太咸,搞到只食到魚生口感,但食唔到魚生本身的鮮味~

NOBU Style Seafood "Pan-fried Rice": 呢個極之普通,只是有飯蕉香的飯團,配上seafood,但味道好淡,比其他失色~

Black Cod Saikyo Yaki:
個銀雪魚極之出色,係今餐的NO.1~好爽滑,唔會有食銀雪魚個種好多魚油脂肪的感覺,另外個味道真係無得頂,食唔出佢用咩煮到咁好味,但個味道真係好難忘,好好味~

Rock Shrimp Tempura with Creamy Spicy Sauce: 呢個係今餐NO.3~d蝦好爽脆,每隻都包裹住一層好thin的一層天婦羅脆漿,配上特製sauce,好脆口,成件事好清爽,因為一d都唔漏,係會一口一口咁食落去,而且放耐jor個皮都重係好脆~正!!! 未食過咁好味~

Wagyu Burger Steak:漢堡扒,一d都唔鞋,但牛肉味差少少~

Grilled Shrimp with Spinach Salad and Dried Miso: 唔太好食,d spinach salad有陣好濃烈的怪味,食唔慣~

Grilled Seabass with Genmai Salsa
:鱸魚,雖然幾滑,但味道不及銀雪魚咁出~

Spicy Tuna Salad: not that spicy, 一粒粒tuna,呢道魚生好食在一d都唔腥,又無筋,只有鮮味,d鮮味係食完個口係留有一種魚的鮮味,同埋魚生溫度剛剛好,不會太凍,令真的食到魚的鮮味~

Yellowtail SashimiJalaerño: yellowtail 好爽口,配上個酸甜汁,好match,加上佢上面個辣椒仔好正,佢只係帶來味雷少少辣的感覺,刺刺的,但又唔會辣到影響個魚的鮮味

House Special Maki~呢個係今餐No.2,因為幾種魚生同甜蛋一齊食,甜蛋的甜味完全帶出魚生的鮮甜味,配上外層的羅白皮,脆脆的,好清爽,呢個好回味~

甜品叫左好出名的心太軟配綠茶雪糕: 個心太軟是70% dark chocolate~好濃味,少少苦,最正係外皮脆脆的,入面流漿,最緊要係無唔熟的麵粉味(外面食到有時會有)~一口cake,一口清新的綠茶icecream,一d都唔漏~個icecream茶味好真,好清香~超正!!!!

Overall我覺得係值得花錢黎呢道食,有環境,有好服務態度,有明顯比平民日本菜好食好多的味道,個種好食的感覺絕對係一個驚喜,因為你會覺得點解可以咁好食~~~~認真推介銀雪魚,天婦羅蝦同魚生,真係好正,所以其實去度叫個Signature Bento Box 都已經可以好滿足~!

今次除了一人點一個主菜外我們還想試一點side order,所以另外點了兩個菜:
Home Rolls- 招牌的Nobu 太卷, 145個大洋做出來的效果同看的相片對比9成一樣,那一成是在最底下的其中一個太卷那薄薄蘿蔔皮鬆了出來,太卷內的蟹肉最鮮味
,而且因為這些餡料全是沒有什麼調過味,最能感受原來那食物的味道,反而中菜在這方面很多時會因為放調味去加強某些味道而令食物本身的味道被蓋過了,
天婦羅一客- 兩隻80個大洋, 簿簿的脆漿包住中碼的蝦, 蝦味很濃,可能是點的
天婦羅鼓油開得比一般的淡口的緣故,可以接受,
太座: 西京燒銀鱈魚- 因為是一個柯打, 鱈魚扒是真中間的,厚約1吋,扒邊燒得稍微焦焦的, 伴以梅汁而不是mayo特別想令人感覺同外面的日式做成差異,反而有趣的是這個放魚扒的碟在四個角有一圓形窩位,梅汁就是唧在窩位內,彷彿這碟是特別為這個汁而做的,但當然唔會係咁啦,只是廚師的精密計算而已,魚肉方面滑是一定的了,個人則喜歡它的顏色(焦焦的邊同金黃色的面),這款料理最怕是焦邊中間還白白色的那種唔湯唔水嘅外觀,
“包包面”小姐推介:雜錦魚生便當- 她說這個便當魚生很新鮮又多種類,如果唔揀她們的招牌便當這個也是很好的選擇350大洋,其實我其沒有唸住食咁貴的便當,
不過見她誠意推介,就抱住”儘管試試”的心態ORDER了,一來到見到的便當盒其實是同平時的盒一樣大細, 打開看到的果真是色彩繽紛,雖然每個品種只是兩片,但其實都很足料了,
尤其這店的青芥辣真的很Mild, 因為我平時是不吃青芥辣的,主要是不喜歡那攻鼻的感覺,但這裡的青芥辣居然可以搽在刺身上一片片的吃,可能新鮮磨出來的青芥辣真的比那些粉開出來的攻鼻感覺相差很遠,整個飯盒印象最深刻的是赤貝肉,那兩小部份赤貝肉其實並不是整片赤貝肉,而是赤貝的某些部份,十分的爽口,咬落口感非常之彈牙
,另一樣是魚生與飯之間的一層是醃了味的沙甸魚肉和青瓜,甜甜的很久沒有吃到這東西了
,以前很多地方都會有但不知何解現在很難吃到了, 還有這裡的蛋壽司口感也相當特別,原來是有魚肉在內的,變成一個魚付蛋壽司,少了蛋那種實淨的口感同蛋黃的濃香但多了魚的鮮味,口感變得軟滑,各有各的長處,
我跟太座一致認為這裡的壽司飯比平時的日式餐廳落少咗d壽司醋,所以飯
拿上來時並沒有一股酸溜溜的氣味,可能同因為是不想在用餐的大堂留有一股壽司醋酸味有關, 這裡用的米也很有嚼勁及光澤,單看Home Rolls的橫切面 就很清楚感覺得到,
我倆吃完便當後,真的沒有位置可再柯打甜品了,不過講真的這店甜品頗貴,吃得下也未必會叫, 因為它賣的是西式甜品, 要付錢也寧可食日式甜品,

一年一度的端午節又來臨,難得在星期中有一天假期,因此計劃與太太先到祈望已久的洲際Nobu試吃一頓日式午餐,然後再去看一場Openrice送贈戲票的電影"前度",就這樣我倆度過了一個優閒的公眾假期。古語有云「未食五月糉,寒衣不入櫳」,端午節過後,天氣將會份外炎熱,最適宜先吃些俱消暑解熱的生冷食物,因此很想找一處環境較佳而又不會太擠迫的日式餐廳去享受一頓午餐,最終決定選址在曾入選過全球最佳餐廳十大的Nobu。此餐廳並沒有裝潢華麗的修飾,反而帶有海洋色彩。天花板面砌上旋渦的圖案作海洋主題,以梅花間竹的裝飾將海洋和貝殼代表的陸地分隔著; 牆上滿佈著密麻麻的氣泡圖案,可感受到設計師愛享受陽光與海灘的程度。年輕的女侍應安排我倆座在靠近落地玻璃窗附近的圓餐桌,除了能觀賞整個維港景色外,最難得的是餐廳座落於二樓,亦能透過身後那塊落地玻璃,從上而下鳥瞰部份位於地庫的Habourside自助餐廳及地下的Spoon法國餐廳部份區域,極富時代與空間感,印像中,能有這樣穿透不同層數的酒店餐廳設計並不常見,亦見心思。男侍應在我倆正當坐下的同時,已經遞上餐牌。以往我倆喜愛要兩份不一樣的套餐,為的是可以互相分享及嘗試

侍應在我倆正當坐下的同時,已經遞上餐牌。以往我倆喜愛要兩份不一樣的套餐,為的是可以互相分享及嘗試不同食物所帶來的味覺感受,但是次和以往不同的是我倆因太愛吃和牛了,Nobu Lunch所供應的三款套餐中,就只有Nobu Matshuisa Bento Box包含和牛漢堡,曾一度想過應否為了一個和牛漢堡而要這個套餐,因為預期自己會吃到鞋口的烤鱸魚,可惜自已又較為愛吃另款一套餐的銀鱈魚西京燒,經過一番極速思量,最終仍是選擇了這個 Nobu Matsuhisa Bento Box。當我們一想到"便當"盒內那六個食物格的面積時,和牛漢堡的份量有多大已心中有數。由於我倆都是食肉獸,不禁心裡自問那區區一格"便當"盒的和牛份量,真的能夠滿足我們嗎?太太本來向侍應示意要一個Nobu Hong Kong Bento Box的,最終因為看在"和牛漢堡"的份上選擇了和我一樣的套餐。以下便是Nobu Matshuisa Bento Box所供應的六款食物:

侍應把套餐放到我們的跟前,順帶來一個溫馨提示,建議我們順序先從熱食吃起。提外話,當時年輕女侍應捧著"便當盒"送到我倆的跟前時,從她面部反應,是絲毫沒有一絲笑容,甚至望向經理時有一點緊張,因為經理也同時在場,但當離開時,明顯地放鬆了心情,也開漸露一絲絲笑容。希望一眾資深的經理們不要給侍應帶來太大的壓力,食客是感受得到的。每個入行的侍應,包括一眾經理也曾有過新入行上手的過程,將心比己嘛。

Grilled Seabass with Genmai Salsa:賣相甚有墨西哥式風味的烤鱸魚,是以烤製方式來烹調。廚師放了一些已混合了甘荀粒、洋蔥碎、青椒碎、紅蔥粒及蕃茄碎的圓米飯內來作配料裝飾, 一般烤過的鱸魚肉質大多都是"鞋實實"的,但這裡的烤鱸魚卻烹調得出奇地夠水準。雖然鱸魚天生肉質的嫩滑及多汁程度不及銀鱈魚,但這裡的烤鱸魚是甚少有的爽滑,在肉質方面看來亦有點像銀鱈魚,魚味濃郁亦有點魚油香,不知其產地來自何方呢!帶酸味的墨西哥式配料圓米有點咬口,甚至有點吃著素飯的感覺。

Wagyu Burger Steak:熱切期待的和牛漢堡卻是令人有點失望,首先沿著漢堡邊嘴嚼,邊位的肉質頗為乾實,其漢堡帶有一點薑味。幸而中間的位置尚算有點鬆軟,但鬆軟的程度與時新快餐店比較下還有一段距離,不竟這是烤過漢堡嘛! (或許是忘記吩附侍應所要的生熟程度,但侍應應有責任詢問食客嘛!)
。但最想反映的是牛味肯定是有,並且完全沒有半點渣滓,但和牛的味道不夠明顯,可幸中間部份的漢堡,仍能保留少量的肉汁。配菜的蘿蔔蓉有助減低油膩感覺,本菇的菇菌味道亦相當濃郁,只是我的焦點是漢堡而不是那些配菜。

Grilled Shrimp with Spinach Salad and Dried Miso:無論用來墊底的菜又或是燒蝦味道都是一絕。燒蝦散發出誘人的焦香,烤過的味道亦相當濃烈,其爽實的鮮蝦肉味道令人回味,連蝦殼也不會錯過,除了剩如的尾部外,真想整隻連帶蝦殼照樣吞下肚。說到乾麵鼓菜,更加是"估佢唔到",乾麵鼓的味道激似煙肉,微辛之中帶鹹重,如能將乾麵鼓的鹹味減少,效果相信會更加好。

House Special Maki:主要由三種不同顏色、不同種類的魚生再加上的玉子、青瓜及蟹子組成的雜錦壽司,看來平平無其但內餡卻是味道豐富。將壽司放進口裡慢慢的嘴嚼,嚐到的先是玉子散發出一絲綿甜綿的口感和味道,然後是三種魚生帶來極鮮的魚味,外層除了包著紫菜外,另外再用一塊片得透薄的蘿蔔環卷著。蘿蔔卷、青瓜及蟹子增加了壽司的爽口感覺。為這個雜錦壽司集齊鮮"甜"爽口於一身。

Spicy Tuna Salad:辣味吞拿魚沙律其秘製醬汁中,帶點含酸辣的泡菜味道,但酸辣的程度沒一般泡菜來得重手。醬汁並沒淹蓋吞拿魚那鮮濃的魚味,味道豐富之極。說Nobu是Fusion菜真的一點也沒說錯。與含醋酸的沙律配菜混合來吃,新鮮又健康。吞拿魚粒的份量也不少呢!


Yellowtail SashimiJalaerño:相對其它食物是較為遜息了。從前在加國旅遊時,在Bloor St.光顧過一間韓國菜館,吃過平生以來最好吃魚味最濃郁誘人的Yellowtail,由那時開始便認為世上最好吃的魚生就是Yellowtail,從始便對Yellowtail留下極為深刻的印像。不知怎的,在香港未曾能再回味過這種味道。這裡的Yellowtail Sashimi近乎沒甚魚味,但確是很爽滑。它們的醬汁主要是以醋酸及青辣椒的辣味道為主,但醬汁再好,也沒有意思,更何況醬汁只是一般,味道令人大失所望。


麵鼓湯:湯內可嚐到兩條本菇及數粒滑硬適中的豆腐,是一般麵鼓湯的味道,

啤酒雪糕配花生酥:這個甜品並不是套餐包含的,需要自行另叫。幸好在出發前溜灠過Openrice的網頁才知道有這一特式甜品,因為餐牌內並未有刊載這一款甜品供應。總是覺得完美的套餐應該要包括甜品在內的, 再者也覺得啤酒雪糕較一般雪糕較有特色。極之喜愛這個甜品,它沒帶有一般啤酒的苦澀味道,而麥芽味是相當的濃郁。據餐廳經理所形容,Nobu與日本新瀉縣一間名為北雪的酒廠合作,以OEM方式生產Nobu品牌啤酒,只會供應給全球Nobu分店。吃時緊記淋上輕帶果甜的桃汁於甜品內,會發現冰凍的雪糕含一種果麥的味道。花生酥內的花生味道較想像中淡,有種粉酥的味道及口感。餐廳經理其後更請我倆一嘗Nobu品牌啤酒,冰凍的啤酒味道果然與啤酒雪糕亙相呼應。


總括來說,NOBU SUNDAY LUNCH SET會較是次的NOBU Matsuhisa Bento Box 抵吃。論是次所吃的這個套餐,好吃的仍佔大多數,是否抵吃則見仁見志。有一點倒想提及,對比NOBU 在洲際酒店的官方網頁上所放上的舊午餐牌,不難發現加價的幅度令人咋舌,不知當我完成這一個食評後,來年還歡不歡迎我續會員卡呢! 是次已會員卡結脹的總數是$772

Having never dined here before, we opted for the bento box lunch sets so we could try several things. We decided on two Nobu's Signature ($298), and one Hong Kong Bento ($308) box.

Nobu's Signature Bento Box
The 'set' was made of two boxes of three and two compartments, so five small dishes altogether. We were told to eat the hot food first, then cold. The hot food included rock shrimp tempura, black cod saikyo yaki, nobu 'fried rice'. Cold dishes were 3pcs of different sushi, and a maki roll, and a seared tuna salad.

I was excited about the shrimp tempura when I looked at it but it was not crunchy at all, and was over-dressed by a rich sauce which tasted a bit like mayo/thousand island mixed together. The batter was thin enough but it was so pale it was clearly not fried at a high enough heat. Shrimps were very good in quality, but was spoilt by the cooking method. The black cod was good. The fillet was well cooked with the outer sides slightly burnt from cooking which gave it a crisp texture. The insides were soft and flakey I wanted more! I know saikyo is a sweet miso and a lot of sugar is added to the marinade, but none of that was tasted in the fish..perhaps an extra day of marinating would have given it more of the flavour i was looking for. As for the 'fried rice', it was more like rice which was shaped into a cylindrical 'cake', and fried, with seafood and some peppers on top. The seafood was tiny shrimps and squid, with no flavour. The rice was bland and tasted really really oily.

As for the cold dishes, they were pretty good except for the dressing on the tuna. It was so strong and so much of it was on top of the tuna that it masked the whole tuna. It was sodium-overdose in this salad! The sushi was good, but better if they were colder.

Hong Kong Bento Box
Again, it was recommended that the hot foods be eaten first. Hot items included Nobu 'fish and chips' and chicken teriyaki. Cold items included a cold udon with sesame sauce, a rare beef salad, and sashimi (3 kinds) including tuna.

The chicken teriyaki was very good. Marinated very well and the chicken meat was so tender despite being from the breast. I did not try the fish and chips, but was told it was pretty good with a little lemon squeezed on top. The udon was excellent - there was a perfectly poached egg on top which the egg yolk when pierced, dressed the udon noodles very well. The sesame sauce which was provided was also very good.

The sashimi was good, except again it would have been better if colder. We were advised to eat the hot items first so they wouldn't get cold. But the same happens this way... the cold items, having sat for a while at room temperature, are no longer 'cold'.

Service was worse than the food. All the Chinese waiters/waitresses that served us were very pressuring - to order drinks other than tea and dessert when we were clearly stuffed, ranting on about their menu which already explained each dish and just over-doing it in general. I felt stressed listening to him!

Suffice to say, I won't be back any time soon for lunch. For 300 per head i can do so much better else where with better service and food.

and I have ordered my favorite main course - Cod Fish. this one was called
Black Cod Saikyo Yaki, which was one of Nobu's signature dish... and i simply LOVED that. Sauce was great. it was evenly spreaded on the cod and the meat was really smooth and tender! Right when you cut out and put it into your mouth and started chewing, the meat slowly melted inside. this was definitely awesome.

the other main course was
Beef Steak Toban Yaki another nice dish! meat was tender (undoubedly!). The taste of the beef was strong and it blended well with the fried egg. The captain came over and had a casual chat with us. He said the quality of the beef was definitely excellent since Nobu Matsuhisa was an old friend of the supplier. So the beef quality would be better than those offered in the market.

What's more was that we had
Nobu Fried Rice and
Shrimp Udon with Asparagus. I liked the udon, which was pretty creamy and it felt more like a pasta dish. The fried rice was rather mild.

we were already full at that moment but dessert is certainly the thing that we could not miss! we ordered
Chocolate Bento Box and
Banana Tofu Brulee~ LOVED the banana tofu brulee! not too sweet and filling, with a nice smell of banana and a soft texture of tofu
very delicately made. and the Chocolate Bento Box was actually warm chocolate pudding with green tea ice-cream. Not much of a surprise, but it was decent.

It was a really nice boxing lunch day. It was not packed at all, and great food was cooked and served nicely. Love to try it out again

到 reservation 時我已見個女仔帶位同位肥西裝人吹水中,到座下無人招呼..而佢地仍吹水中......

及後原肥西裝人係manger..so cool!佢剩係咁推我要貴的set dinner,我地唔要佢就面黑黑行左去....


整晚我地見到呢間nobu無咩人手!平均舉手2次才有waiter 應!p.s 係waiter!!個經理就真係驚珎!!在5 stars hotel 來說,太失覺了

最後可能係規則個肥manger居然走過來問問看,可能係個牛肉換左2次,伯我地complain ....但係我地居然聞到煙味從佢身上透出來......


總括來講 it is a very crazy dinning experience...

一行3人入第一次去Nobu好少日本餐廳的裝璜似中國菜我們坐近望海位但就係圓檯硬板凳好古怪我們柯打左三個set lunch分別為刺身, 壽司, 天婦羅刺身新鮮壽司的飯底還可天婦羅既炸粉好厚主要食海景不算差但就不會想有下次囉估不到洗手間係兩個獨立傷健用的坐廁幾多星酒店呀?

甜品可說一試難忘. 麵包布甸奶油味飄香, 老遠也嗅到. 其表層是炸的, 內裡卻細滑又不會散開, 完全不是平時街上見到的貨色. 加上冰淇淋, 連碟子也是從冰箱拿出來的. 巧克力心太軟一戮即破, 內裡又熱又甜的巧克力漿瀉出, 和較清淡的綠茶冰淇淋一起吃, 是很好的配搭. 不消幾口便吞下了它. 這個甜點和酒店內另一家Steakhouse Bar & Grille的同樣出色!

欣賞 Nobu 的景觀, 望向最美的維多利亞海港是一種享受,但厨子的心態卻叫人失望1輿友用午餐 其中一份牛肉,友人不嘗棘早通知服務員可能性的用其他suace,但結果上桌時sauce仍是原持有的suace!!友人通知服務員可否換掉,服務員誠懇表示抱歉,為有等候換上,神奇地數分種後牛肉便再送上我們還說厨子效率真好.可是牛肉進口方才的棘味仍在!我們再通知服務員詢問是否原本的牛肉只是沖丟舊有的suace,然換上.........................最後要麻煩駐場Gm,在十多分種後才待到新的牛送上,因見及此我們對Nobu厨子對客人食物的品質和技術叫人失望,態度更是叫人失去再光臨的信心

When I first moved to Manhattan, Nobu, located in Tribeca which was extremely close to where I lived and worked, was one of the restaurants that I rushed to try. Why? When I first moved to Manhattan, Nobu, located in Tribeca which was extremely close to where I lived and worked, was one of the restaurants that I rushed to try. Why? Because it was THE place – it’s the first Nobu or the flagship store, so to speak, and you frequently see celebrities like Nicole Kidman, Jennifer Lopez, the Olsen twins, etc., to dine there. At that time, I was quite impressed by the combination of food and chic décor, which wasn’t common in Japanese restaurants in NYC at that time. Unfortunately, as the Nobu’s empire expanded, the quality of the food went in the opposite direction. The head chef, aka the Iron Chef Masaharu Morimoto, opened up his own restaurants in Philly and NYC. Tons of competitors, from haute fusion restaurants to small Japanese eateries, put Nobu’s signature dishes on their menu; some even managed to surpass Nobu’s renditions at a cheaper price. Gradually, I found myself distant from Nobu except when invited by friends. I somehow stopped going to Nobu in Manhattan.

When a friend organized a reunion dinner at Nobu at InterContinental Hotel, I tried to put my prejudice aside. I realized that many of them were excited about the dinner, as they had never been to Nobu before. After all, I haven’t been to this particular branch, so maybe there would be surprises? As a large party, the restaurant already helped as to set up the menu which included most of the signature dishes which were arranged into platters large enough to share rather than in individual sizes (we had two large platters of everything). Once we placed orders for our drinks, the cold dishes promptly arrived.

The Yellowtail Sashimi with Jalapeño, a famous Nobu’s original creation, was invented by Chef Matsuhisa in the attempt to get Westerners to eat raw fish long time ago. But were the ultra thin slices of hamachi, which completely lost their texture, also an effort to fit the Westerners’ palates? For those who were used to eating sashimi, this dish was probably doomed to be too uninspiring, with the thin slice of jalapeno barely giving any kick to the tastebuds.

Fortunately, they did get the Tuna Sashimi Salad with Matsuhisa Dressing right. The dressing tasted exactly like the one I had at Nobu NYC (note: at one point, this dressing was available in bottles in US supermarkets, so mass production shouldn’t be a problem for them). The sweetness of Maui onion was balanced nicely with the acidity of the rice vinegar. The intense black peppery seasoning was dominant and was needed to cover up the otherwise bland tuna tataki pieces. I happily mopped up all the dressing with the daikon “noodles” and almost forgot about the tuna.

The large pile of Rock Shrimp Tempura with Creamy Spicy Sauce was served hot and was seasoned properly. Nevertheless it was unable to completely invigorate my palate with the wet-doughy batter coating and overwhelming mayonnaise sauce. This dish was far better at Morimoto, an evidence that the student can sometimes go beyond the teacher.

If there is one dish that Nobu always gets it right, it is the Black Cod Saikyo Yaki. I have had plenty of cod saikyo yaki when I worked in Japan, and Nobu’s version isn't one that is just good enough for foreigners. It is indeed an excellent rendition of this authentic traditional dish. It is also the signature dish that happens to be consistently good over time. While cod with miso glaze has become a ubiquitous dish (much to Nobu’s influence) and is literally available in every Japanese restaurant in NYC, the one at Nobu remains to be the one of the best available. It didn’t disappointed this time at Nobu InterContinental, with the saikyo miso penetrated into the plump, meaty, and delicate fish. Not to forget is the hajikami (the pickled ginger stalks) on the plate. They aren’t just there for garnish; they serve as a great foil to the sweet fish meat, much like the gari you have with sushi.

Each of us also ordered individual dishes such as sea urchin and king crab tempura, saga beef tataki, before the platters of nigiri sushi, maki rolls and Nobu signature rolls arrived. Sushi is a weak offering at the Nobu in Manhattan, and it seems that I wasn't able to escape this unfortunate fate. None of the nigiri sushi was particularly impressive, with the fish just of average quality and freshness and rice not molded very skillfully. The signature rolls with fried soft shell crab wrapped in sushi rice, seaweed and daikon once again reminded me of the Nobu in NYC, as they tasted very much the same. But the rolls also reminded me of many average fusion restaurants, like the neighborhood sushi eateries or chain establishments, which also churn out something similar with flavor more or less the same.

The savory portion of the dinner was completed with a bowl of udon in soup, which was as average as you could get beyond instant udon. The dessert platters of fruits, mochi ice cream, and petite four were dramatically presented all at one time. But with the fruits so sour that puckered my lips, and the mochi ice-cream that resembled those from Dairy Farm, who cared even if they were plated on diamond plates?

In the end, this dinner confirmed my belief about Nobu. It was once a great restaurant, one that provided innovative dishes that tried to make Japanese cuisine appealing and approachable to a wider audience. The motive was noble; the dishes were unconventional and delicious. But that was 10 or 15 years ago. With the rest of the world continues to improve, progress, and innovate, the benchmark for excellence in Japanese cuisine has been significantly raised. Nobu, on the other hand, remains where it was in the past. The menu hardly ever changes, and quality, on the other hand, drops with the nonstop expansion. Now, when I go to Nobu, instead of paying for food, I find myself paying for a brand name in history.
