每當想食蠔,一定會番嚟Open Oyster。 各式各樣嘅蠔,一定有啱心水。如果揀wine lover,開一枝酒,蠔仲會有discount,大約$4x 一隻。鍾意飲酒食蠔嘅朋友,呢度真係不二之選。我唔係打手啊!真係每次嚟都feel到餐廳職員好有heart,好詳細咁解釋每種蠔嘅特色,今次仲介紹咗一枝好好飲嘅酒俾我哋,好啱女仔飲,夠甜!我哋每人menu上每種蠔都要咗一隻,有十幾廿隻,埋單都係2千幾,好抵,下次再番嚟!!

呢個開胃小食入口先食到蕃茄嘅酸味,加上軟綿綿唧香滑芝士,配上超級酥脆嘅多士,口感非常有層次!為呢次美食美酒盛宴打開序幕!


Piper Heidsieck Brut NV (Match Amuse Bouche)
呢支係氣泡酒,泡泡非常強勁,直到飲到最後一啖都仲好有氣。呢支酒仲係由十八世紀開始賣俾路易十六皇后,非常有名!支酒聞落好香甜,仲有陣陣啤梨同檸檬味,飲落好清新,同開胃前菜一齊食非常夾!

Virginia USE (Crassostrea virginica)
呢款係美國東岸原生本土生蠔人,係美國5大蠔種之一。呢款蠔蠔身好厚肉,入口好清甜順滑,有蠔味,但唔heavy。


Kumamoto USA (Crassostrea sikamea)
呢隻蠔有個幾特別嘅故事,雖然佢個名叫熊本蠔,但其實係熊本係搵唔到的,因為係第二次世界大戰事,日本戰敗後就交出左呢款蠔俾美國。同呢隻蠔係比較少出口,所以今次係幾難得嘅機會試到!雖然蠔身比較細,但鮮味十足!


Olympia USA (Ostrea Lurida)
都係嚟自美國西岸嘅生蠔,蠔身比較細隻,咸味較重,同會有金屬味,好有風味!


Castle Black Ireland / France (Crassostrea gigas)
蠔身非常飽滿,口感creamy同十分鮮甜,仲有淡淡海水味,唔會好鹹,非常balance.


Belon France (Ostrea edulis)
嚟自法國嘅蠔王Belon, 蠔味極濃,入口有金屬味同海水鹹味,裙邊爽脆帶勁,之後嘅餘韻持久不散!


Chablis Domaine Billaud Simon 2021 (Match Oyster)
以上嘅生蠔都係配上Chablis 嘅白酒,呢隻白酒由1815年開始已經開始釀製,係一支歷史攸久嘅白酒。呢款酒係一支好balance嘅白酒,會有啤梨同青蘋果🍏香味之餘帶點檸檬味

Seared Tuna with Mango Salsa
吞拿魚輕輕煎香四邊,令四邊香脆,內部半生熟,保持嫩滑的口感,加上清爽的芒果莎莎,呈現出豐富的口感和美味的風味。


2nd Appetizer
French Prime Baby Blue Mussels with Pesto Cream Sauce
BB藍青口超級嫩滑,鮮味十足!而青醬忌廉汁非常惹味,香氣十足,用嚟點法包🥖的話,可以一個人食晒一條都無難度!


Pouilly-Fume En Travertin, Henri Bourgeois 2022 (Match Appetizer)
而頭盤就配左由Henri Bourgeois 酒莊釀造嘅白酒,呢款酒有清新的果香氣息,淡淡青檸、柑橘味道,伴隨著微妙的礦物感。口感豐富而平衡,酸度清爽。

Spanish Iberico Pork Rack (Acorn-fed)
橡果飼養嘅西班牙伊比利亞豬,唔使多講都知道係肉質細嫩,帶有豐富的油脂,烹煮之後都一樣保持到肉質鮮嫩多汁,每一啖都係油脂香味同緊致嘅肉質。


Pan Seared Cod Fillet with Prawn & Crab Meat in Cream Cheese Sauce
鱈魚柳煎烤得恰到好處,保持了魚肉的嫩滑和鮮美,滑到唔使用咬就直入喉嚨。而蝦肉和蟹肉的組合為整體帶來了海鮮的鮮味和甜美!


Sancerre les Baronnes, Henri Bourgeois 2022 (Match Main Course)
呢款酒擁有明亮的淡黃色,散發出清新的柑橘和青蘋果的香氣,礦物味道比較重。口感清爽而平衡,尾韻悠長而清新,用嚟配合重口味嘅Main Course 非常合適

佢嘅西班牙豬鞍煮得非常出色,油脂分布非常好,入口肉軟硬適中,豬油慢慢滲透入口腔,好香口,令人回味。

我俾佢嘅忌廉芝士嘅汁吸引咗,鱈魚非常嫩滑,加埋蝦同蟹肉都好新鮮,成個感覺好豐富,而且個薯蓉配上芝士汁超好味。

已經嚟過呢間餐廳幾次,每次都食得好開心,店員耐心介紹各款蠔的味道口感大少。記得問店員有冇off menu的蠔,因為佢哋會因為啲蠔靚唔靚而入貨。呢兩次去都有驚喜!以前試過一些食蠔嘅地方,蠔得廚房就麻麻地,但呢間廚房都幾好味!選擇都幾多,小食、扒類、意粉及意大利飯都有。我自己則喜歡佢嘅西班牙的iberico pork chop! 味道都處理得好好,保持食物的肉汁,同時有碳火的香味。美中不足就有時人多,要等耐少少。坐室內室外都咁舒服!
