全部吉列豬套餐介乎 $150~$200,定價與其他用餐環境更舒適的日式吉列炸豬扒名店不遑多讓,甚至更貴;不過,「Porker」標榜採用鹿兒島三元豬,還要自家低溫熟成;相對其他名店,同級價位可能並非日本產豚肉,價錢分別的原因正在於此。話說回頭,低溫熟成(dry-aged)牛肉就聽得多,原理是在低溫環境下容許牛肉的多餘水份揮發、提升肉味;另一方面,牛肉的天然酵素可以分解部份蛋白質結構,肉質會變得更加鬆軟。至於熟成豬肉,就是第一次聽說了。

豚肉味噌湯是一絕;呈淺褐色,味噌已經完全與湯底混和,並沒有沈澱下來而引致味噌湯的味道不平均。湯料又加入了甘筍、白蘿蔔,充滿蔬菜的清甜。「Porker」主打吉列炸豬扒,當然不會吝嗇將豚肉的零碎部份切成碎片加入熬湯,所以,除了木魚昆布鮮味之外,多了一層薄薄的油脂浮在表面,兼有濃淡恰當的豚肉鮮甜。即使一向不太喜歡日式味噌湯,竟然一飲而盡,甚至想再來一杯!

Porker 定食(熟成豚西冷及豚柳)($200) 兩款炸豬排各一件。先試最厚身的吉列炸豬柳。豚柳超過 3cm厚,中心部位無可避免呈輕微粉紅色,不過,由於是日本產豚肉,即使不是百分百全熟應該也可以吧?整條豚柳長長窄窄,所以切出來的豚柳外形也有如一個小孩拳頭。豚柳肉纖維最幼細、也最少脂肪紋理;所以肉質最柔軟,但同時肉味也較淡、肉汁也較少。

吉列豚西冷。西冷即是豚的後截肋排肉。肉纖維較粗身、但同時也帶有少許脂肪;所以肉味較豚柳濃郁得多、肉汁亦非常豐富。由於鹿兒島三元豚乃優質豚種,即使肉纖維較粗、又是厚切,肉質完全唔粗嚡。

吉列熟成豚肉眼定食($185)乃每日限定。雖然同樣炸得金黃、表面的麵包糠同樣香脆,但豚肉眼切得比較薄,外觀就及不上吉列豚西冷了。只不過,如果講味道,由於豚肉眼最肥美、豚脂比例最多,所以肉汁最豐富、肉味也最濃,每一口都有豚脂香氣,唔怕肥膩者首選。

三款吉列豬扒的質素皆相當好:肉質鬆軟、肉汁豐、有肉味、但又沒有那一陣豬臊味;如果純以美味角度來說,也實在沒甚可供挑剔的地方。但另一方面,價錢確實不算便宜。如果店主可以提升一下套餐內容,例如白飯任添、椰菜絲任加,同其他日式吉列豬扒飯專門店睇齊,就會更加理想。事實上,容許敢說一句,全部客人最多只會添一碗白飯或加一點點椰菜絲,對於成本的影響應該十分輕微,但對於餐廳的形象就會有非常正面的迴響,店主絕對需要認真考慮。

The owner is a Japanese lady who is super nice and friendly. But there is a local guy work there seem to be a restaurant , he is a bit rude when we asked what exactly is the recommendation dish in the restaurant. He just acted super annoyed by this question even I told him it is a birthday celebration when I arrived the table 30mins before my friend show up.

Anyway. All the dish is highly recommended. Check on my bill for the name and price and there are all really tasty.

至於豬柳,光睇這切面就知對勁 ---- 肥瘦相間的層次,肉質軟嫩多汁,入口滲出淡淡的脂香但又不膩,實在好吃....

不過,小弟更為欣賞是這裡的炸功,肉吃起來不油不膩,麵包糠外皮極之酥脆夠薄,而且皮肉相連絕無甩皮甩骨,值得一讚....

此時,醃點炸豬扒的好拍檔,呈深褐色的杰濃醬汁來吃,再掏一口黏黏的白米飯落肚,不羨仙....

叫咗[滑蛋吉列熟成豚肉眼蓋飯],等咗10分鐘,終於有得食。
上菜配有一小碟漬物 + 麵豉湯,貌相好吸引。

麵包烤得剛剛好,一咬落去,先係脆,然後軟。
然後到生菜絲的爽脆,配有微酸的蘋果醋,令人醒神。
接住係主角炸豬柳,外脆內軟,豬肉有獨特的香味,令人不禁一啖接一啖。
可惜份量太細,唔夠喉 + 唔夠飽,如果再叫多份就荷包萎縮了...

This place really feels like a modern-style Japanese izakaya. The atmosphere is lounge, quiet, good food and good drinks (red wine, sake...).One of the rare places to try menchikatsu (minced pork cutlet), and they are really good ! Cheese menchikatsu or in a sandwich... Normal pork cutlet are also very good, we can taste that the pork meat is well chosen.In the heart of Soho, the best neighborhood  to hang out at night in Hong Kong.

One of the rare places to try menchikatsu (minced pork cutlet), and they are really good ! Cheese menchikatsu or in a sandwich... Normal pork cutlet are also very good, we can taste that the pork meat is well chosen.

豚西冷、肉眼和豬柳也各試了兩件,感覺上豬柳的肉味較重,肉眼的肉質就比較軟,西冷則普普通通。外面一層吉列粉其實都做得不錯,脆而不厚,只是附著的油份較多,若加以改善就很好了。

米飯也不能忽略,用的是珍珠米,口感實在,煮熟的程度剛剛好,黏但不濕。另外豚肉湯也做得不錯,比起隨隨便便付的「沖粉」味噌湯有誠意多了。再來要說的是椰菜絲,絲切得很細,也是清脆爽甜。不能不提的一定是醬汁,無論是沾肉類的,還是拌椰菜絲的,一嘗就知別有心思。豬扒醬比普通吃到的多了一點酒味,因而更濃郁;芝麻醬裏加了些花生醬,入口就加了一份堅果味道。

Located on Wellington, it's a small door. Go down several flights of stairs until you reach the bottom and you'll find avery small little bar like restaurant. It's seriously cramped but yet it was also full. We waited a bit and were given a table as the people who reserved it hadn't arrived yet. It seemed a majority of the patrons were Japanese and they staff also spoke Japanese as well.


Menu is in English, Chinese and Japanese. They have various cutlet sets that include a bowl of rice, miso soup and the shredded cabbage salad served at usual pork cutlet restaurants.  They also have curry rice and donburi .

In addition to the sets, they also have a la carte dishes, all using pork. It was a bit like an izakaya for pork. They also have a decent sake selection along with various beer that I noticed they served in a mini glass that was ice cold. They offer a sake tasting set of three sake for $90. Full House ($220). Out of everything on the menu, boyfriend chose this. I guess you go big or go home, right?  This was three different pork cutlets: cheese mince cutlet, sirloin cutlet and tenderloin cutlet. This came with a bowl of rice, miso soup, pickles, potato salad and shredded cabbage salad. Only the cabbage gets one free refill. But this was amazing. The meat was moist and juicy. The coating was not too thick and seasoned well. It had a good crunch. The best was the one with the cheese. Loved the potato salad as it was super creamy.

The miso soup was sweetened by the taste of pork. The only thing was the pickles could have been pickled  a bit more. They offered tonkatsu sauce which was a bit odd and we didn't like it much. We stuck to the Japanese mustard.

Tenderloin Cutlet Sandwich ($75). I wanted this so this is what I chose. It was really small but this was excellent. The meat was juicy and tender. It was even better than the tenderloin in the Full House set. There was a wasabi mayo on one side with the cabbage and tonkatsu sauce spread on the meat side. This oddly worked. I wish it was bigger but this was a great little bite.

A bit on the expensive side and portion size is not big at all but this is definitely not Ca-Tu-Ya as it's loads better. Definitely the best pork cutlet place in town and will be back.

The food is of course based on deep fried pork, and it does not disappoint. Between four guys we had two of the dinner sets: which includes various combinations of either Tenderloin, Sirloin, Ribeye or Minced pork meatball (Menchi), along with rice, shredded cabbage (only one refill), soup, potato salad and some pickles. The sets are about 200 but you can also order the cutlets ala carte for about half the price (without the rice/pickles/soup and only one helping of cabbage). I love the cabbage so the one refill rule is a bummer but I get it since izakaya guests tend to linger longer than at a typical restaurant. 

We also had two orders of the MUST-TRY tenderloin sandwiches, which are prepared with a bit of shredded cabbage, yellow mustard and tonkatsu sauce. The balance is perfect, and I’d have never expected mustard to work so well. I still think about this sandwich a week later...
We also had a bunch of drinks and some drinking snacks – the okra with plum and potato salad in particular were both freshly prepared and excellent with alcohol.

Something else that really caught my attention here is that they serve Denki Bran! Here’s the interesting history of the drink (goo.gl/EevqXk), but suffice to say it’s not a common drink in HK. With that in mind, the rest of the alcohol menu is also impressive; tons of sake, two types of shochu, and wine and beer as usual. They also store opened bottles for you, which is a nice touch if you like to eat alone.

Overall, a great place for a bite and some drinks. The food was great, but the ambience, wonderful service, and varied drink selection really puts it over the top. Definitely recommend you check it out if you like either Tonkatsu or Japanese bars, and it’s essential if you enjoy both.
