滷水喺潮州菜嘅經典,點可以錯過,滷水鵝單睇外觀已經非常誘人,鵝片堆得滿滿,切片大細厚薄均一,肉質柔軟,好有鵝嘅肉香,滷水醇香沉實又入味,果然喺老店嘅手勢。墊底嘅滷水豆腐,口感滑溜,有豆香,同樣滲出醇香滷水味。

有一碗或一窩份量嘅選擇,嗌一碗其實都夠晒兩、三個人分,咁嘅份量正正啱晒我哋。潮州粥又喺有其獨特性,粥底唔會太綿,但米粒亦爆晒花,食起嚟有粒粒感,而加入咗方魚、肉碎,除咗食味豐富咗之外,添加咗一份好似柴魚嘅香味,伴滷水及春菜嘅濃味菜式好夾。

潮州菜中都有唔少精緻手工菜,石榴雞就喺其一,因為造型特別,形態似石榴,又以雞肉入饌,所以叫「石榴雞」,外皮喺煎蛋白薄皮,再以西芹條紮實「袋口」,但又真喺估唔到煎蛋白可以做到層皮咁有柔韌性喎,包起咁多餡料都無穿無爛。內裡包裹著喺雞肉粒、蘿白粒、冬菇粒、冬筍粒、唐芹粒,每樣都刴得好細膩,又喺一番心機,至於口感上有細緻,有清脆,有濃香,有清爽,慢慢細味真喺感受到嗰份層次。最後淋晌石榴雞嘅芡汁,喺雞湯芡,甚具畫龍點睛之效。

最後,竟然仲奉送甜品,雖然喺普普通通嘅綠豆爽,不過,亮點喺後面樽嘢。當時小弟見個侍應放低甜品時都奇怪,做乜多樽樽油,一問原喺陳皮醬,陣陣陳皮果香,甘甘哋,加咗落啲綠豆爽度真喺唔同晒。

今晚黎左朋友介紹的呢一間有五十年老字號潮州餐廳到食晚飯。冇幾耐店員就送上個咸菜(另外收$12)同功夫茶,功夫茶入口好舒服,茶味係我中意的入口甘甘,但又唔會覺苦澀。Menu入面除咗潮州菜,拿手功夫菜,更加有唔少炒小菜選擇,款式多而且價錢豐儉由人!乾炸蝦棗 $128有八大粒,入面蝦肉溝埋馬蹄粒,入口好爽口彈牙,炸得幾好,唔會食完覺得好油膩,一啲罪惡感都冇。鵝肉拼白烚大墨魚 $200鵝肉份量都幾多,最重要係食到啖啖肉,唔會有好多骨👍墨魚片好鮮嫩,底下仲有滷水豆腐,做得幾入味。八珍豆腐煲 $98份量足料又多,除咗有豆腐、魷魚、蝦、肉片、雞肉、冬菇、菜同魚片,真係好豐富,豆腐好嫩滑,大讚。方魚肉碎粥 $65我第一次食呢樣食物,都幾大碗下,而且肉碎都幾多,方魚即係大地魚乾,用佢黎吊起個味,再加上芫荽,味道食係上黎真係幾夾。仲送埋糖水,熱的綠豆清心丸,真係好窩心☺️呢度好適合一大班人黎,多人就可以叫多幾款唔同嘅嘢食。

用餐環境:房間靠近機房及廁所,加上樓底非常矮,像坐在渡海小輪近引擎座位,整個感覺太差了,令人很不舒服,又不肯給轉房。食物:各種食物比某連鎖中餐集團差太多了,完全不像老牌潮州菜。 潮州翅似漿糊。春菜煲肉少而菜亦過熟,賣相極不吸引。紅腸拼墨魚,墨魚並不柔軟,只有數片,沒什麼味道。冇相,原因因為賣相全部都不吸引,連影都費事影。全部菜式,唯一比較好少少係個方魚粥。服務:茶水不夠熱,服務水平非常一般。總結:貨𣎴對版!無下次!

之前就來試過一次 味道很不錯今次來沒想到人潮比之前還多‼️排了好一會兒隊伍才安排了位置有得坐粉絲蒸九肚魚🐟火候把握得剛剛好,魚肉鮮嫩滑爽而且搭配了豉汁調味,簡直完美~一點也不腥,而且粉絲吸滿了湯汁好好吃金牌雞燉翅 很滋補🥰湯汁濃郁醇厚 雞肉鮮嫩多汁而Q彈的魚翅更是錦上添花~ 簡直就是奢華版的養生湯品雙菇扒豆苗🥬新鮮的豆苗口感脆嫩 綠油油的很鮮嫩搭配著菌香四溢的冬菇和口蘑🍄‍🟫熱氣騰騰的吃起來好美味 清爽又解膩

以前住上環常去尚興,菜做的合口味有許多不錯的回憶。今天跟太太和小朋友第一次到訪新店確頗為驚嚇。 中午落座點了五個小菜分別是蝦乾白菜,梅羔骨,魚烙,鵝掌煲和石榴雞。 前三個菜味道跟老店保持一致。 鵝掌煲上台後竟然是酸敗的,太太很驚嚇因為已經用汁給小朋友拌了飯吃。跟適應反應後她們拿回後廚並退了菜;最後一個石榴雞遲遲未上期間催了兩次。落座一個多小時就後適應回來反應「石榴雞沒有了」。不理解為何是這樣的運作模式。 立即叫買單,因太太已不高興亦未要贈送的甜品,只想儘快離席。帳單遞上後五個菜取消兩個,其餘帳目未作任何處理。太太對之前酸敗的鵝掌煲被小朋友吃到心中不滿,要求店員給說法,侍應和領班去廚房問過後回覆「因天太熱,所以酸壞」;「太太回覆現在天很凍」 領班再回覆「因是凍貨,冰箱水滴進了材料,所以出現這個問題」 ; 真實原因我不做猜測,但這個回覆起碼是直接的。 太太遂要求老闆娘予以折扣,最後兩輪拉扯後七折買單。 老闆娘最後黑面收錢; 錢是小錢但太太的意思是必須要讓店家付出實際的金錢代價方能有所警醒。作為尚興多年的老客,新店的第一次體驗可用「十分遺憾」來總結,雖然日後不會再訪,但作為告別還是想給店主
