我最初還以為「白鮨」身處在「太古廣場」內,會是像一些高級日本菜餐廳一樣,會做一些像「廚師發辦」等的高級日式料理,價錢不便宜的日本食材。

結果我一看見「白鮨」的「迴轉壽司」輸送帶,我就感到有點點失望,因為我還以為,「白鮨」會是那一種,格調比較高尚的日本料理餐廳。

就算「白鮨」沒有開放式廚房,沒有日本菜師傅做「廚師發辨」,我都不介意算數好了。但是餐廳內多了一條壽司輸送帶,就令我對「白鮨」的印象,稍為打了折扣。

我暫時放下對「白鮨」壽司輸送帶的負面印象之後,我的「白鮨定食」的第一道菜,沙律前菜「蕃茄海藻沙律伴溫泉蛋」率先完成被送到上檯了。

「蕃茄海藻沙律伴溫泉蛋」的味道,略帶微微的白醋酸味。蕃茄是微型的小蕃茄,小蕃茄新鮮中略為混雜酸味。沙律菜以青瓜為主,青瓜口感爽脆再加少許沙律醋的酸味。

我沒有刻意戮穿溫泉蛋,乾脆直接吞下原隻溫泉蛋,去感受一下原隻溫泉蛋的原味,雞蛋的原味很濃厚。整個沙律感覺很清新,不過估計喜歡食濃味的人,或許會感到失望。

等我吃完沙律前菜之後,當時我還以為「白鮨定食」的菜式,食品會是一道接一道菜地輪流上檯。但是實際版本的卻是,其餘菜式除了甜品之外,全部同一時間送到我的面前。

雖然「白鮨定食」的食品,一次過地以大型餐格分開盛載送過來,沒有我事前預計那麼逐步傳遞,但是「白鮨定食」的食品味道,就比事前預算那麼好味。

首先我要講的食品是「銀鱈西京燒」,「銀鱈魚」以日本傳統的煮法「西京燒」方法去製造,「西京燒」的醬汁味道比較甜,所以銀鱈魚亦沾上來自「西京燒」醬汁的濃厚甜味,魚肉不會太鬆散之餘,還吃到醬汁甜香。

另一方面,「白鮨」的廚房處理銀鱈魚過程很小心,我全程吃不到,任何跟「銀鱈魚」魚骨有關的東西,令我吃銀鱈魚可以無後顧之憂。

「蟹肉配大蝦天婦羅」果然「菜如其名」,「白鮨」看來真的造到,我想食了很久的正宗「日本天婦羅」。因為「白鮨」的「天婦羅」,不單止有炸大蝦,而且還有炸蟹腳跟炸蔬菜,做法跟傳統日本人做法相若。

炸大蝦天婦羅的肉身真的很厚,天婦羅的粉漿也很厚實,明顯我吃到是正宗日式天婦羅,多於唐揚炸蝦炸蟹腳。炸蝦天婦羅口感很新鮮很彈牙,炸蟹腳口感爽口,更加不是尋常蟹柳可以比擬。

甚至是炸蔬菜,蔬菜經過炸粉漿包裹處理後,仍能保持新鮮,正如古代日本人處理蔬菜的手法一樣。

炸蔬菜天婦羅經過油炸之後,仍然有爽脆,一咬即斷的口感。今次我總算第一次感受到,正宗在港日本餐廳,親手製造的天婦羅炸蝦、炸蟹柳跟炸蔬菜。

跟着食的是「白鮨」的「香煎鵝肝配牛柳」,「白鮨」用上竹籤把鵝肝跟牛柳雖在一起,鵝肝上面還附上了少許的香蔥。

至於「香煎鵝肝」那一部分,鵝肝可能是因為有少許香蔥調味的關係吧,所以鵝肝口感感覺沒有我預期的那麼油膩,鵝肝的油脂在口腔內慢慢融化,散掉進入我的舌頭味蕾之上。

香煎牛柳配上塾底的濃味醬汁,牛柳口感軟腍之餘,出奇地還有了酸酸甜甜,非常惹味的效果。

今晚是很少有,我能整晚都開懷,在無人在旁的情況下盡情享用香煎鵝肝,跟醬汁煎煮牛柳的滋味。

鵝肝與牛柳以串燒的方式,梅花間竹地被串聯在一起。可惜我始終不曉得,是餐廳事先煎好鵝肝牛柳,還是兩者串聯在一起後再拿去香煎,但是可以很肯定的是,鵝肝牛柳有來自醬汁的強烈酸甜味道。

至於我整晚「星期日拉麵時間」的主角「和牛烏冬」,由於「和牛烏冬」的切片和牛,被直接放置於「烏冬湯」之上,所以和牛牛肉的油脂,也在不知不覺間融化進入牛肉湯底之中,令牛肉湯底多了一份牛肉濃味。

「和牛烏冬」除了有保留有牛肉原汁原味之外,還加入了少許紫菜在碗面,湯底也變得很甜,可以值得一口氣把鮮甜的牛肉湯底完全喝光。

至於「和牛烏冬」的烏冬麵條,烏冬麵身質感中等偏硬。每條烏冬麵條都很長很厚。而且烏冬麵條的吸湯能力不俗,每吃一口烏冬都能吃到濃郁的牛肉湯味。

最後「白鮨」的招牌「白鮨定食」,壓軸上場的甜品是「紅豆雪糕」。「紅豆雪糕」不可以說是一般尋常品牌的紅豆雪糕,因為它的紅豆粒體積也算很大粒的。

事實上,「紅豆雪糕」味道香甜之餘,還有原粒紅豆的實在口感,用料質素比我以前吃過的紅豆雪糕來得更實在自然。

最後我食完整個除夕大餐,結賬後發現價錢沒有我預期那麼便宜,計算加一服務費之後,整餐總共價錢也要差不多港幣三百四十元。我食完飯結賬離開「白鮨」,本想看看「太古廣場」附近有沒有道路可以去到維港看倒數,結果還是放棄,準備坐車回家……

能夠預約到的就更少
這一家日本餐廳
我們已經試過很多次
而他們依舊能保持水準👍🏻👍🏻👍🏻

又到lunch time時間又要諗一諗去食咩啦 今日突然想食日本嘢所以就上openrice搵一搵就見到呢一間白鮨 入到去見到唔算多人但係地方寬敞 今日就點左一個特上壽司lunch set, 落柯打之後等咗唔算太耐大約20-30分鐘就已經有得食喇 夾上嚟壽司飯一啲都唔散魚生都很新鮮非常鮮甜 因為有啲壽司店舖一道中午可能因為多人嘅關係所以令到壽司質素亦都會下降,夾落去嘅壽司飯都會比較鬆散,但係呢間完全無呢個問題非常抵讚

For this visit, I tried their new crystal sushi: Salmon Roe Jelly with Diced Crystal Sushi and Beetroot Jelly with taraba Crystal Sushi. Both were disappointing.

The gelatin on the Salmon Roe Jelly, was too hard, it did not have the soft tender texture that I experienced 2 years ago. For the one with Beetroot jelly, it was not much better either.

Neither of these crystal sushi were made with the passion of combining beauty and fresh taste that I remembered from their Causeway Bay store. 
Today these sushi were just overpriced, and not executed with fresh ingredients. The other 'normal' sushi that I

 took  from the sushi train was no better than what you can find from a cheaper sushi restaurant.
 As a saving grace, at least one dish maintained the high standard I remembered from before; the chicken Tsukune. It is chicken ball served with raw egg for dipping. It was moist and juicy , exactly the way I remembered.  
The bill came up to HKD388 for a lunch (5 normal sushi, 2 crystal sushi, 1 tsukune and 1 hot green tea)

店員有禮,上菜收碟有笑容!
如果只計食物,味道唔錯,價錢卻唔平!可能午餐會合理啲!

最好味係咖啡味,好creamy又有咖啡香味,完無諗過呢度嘅甜品會咁好食,好有水準,我地5個女仔個個都對佢讚不絕口,另外我都好鍾意薑汁味,味道濃又不失燉蛋嘅creamy口感同味道,一定要試下。

呢一餐仲有食左其他野,味道都好好。

在不知是天晴或是下雨的日子, 到那兒吃真的是隨心而發。這天, 就是撞著下了一陣激大的過雲雨。辦完了事, 便到Great Food Mall找吃的, 剛入門看見白鰭, 以為正嘢, 便入內試也。看到轉完又轉的壽司, 除了價錢貴多了很多之外, 其實不比元X的好多少, 小人便決定叫了一碗basic的豚湯义燒拉麵$88加一略為一試。整碗拉麵有溏心蛋、海苔、兩塊义燒及另上的紫菜。拉麵其實都可入口, 溏心蛋入味, 荀和义燒也對辦, 奈何那數塊精美的紫菜是超靭的, 根本嚼不開, 超超差囉... >_<即使不是專門的拉麵店亦不需hea到到此地步吧!! 壽司又不見出色, 又貴又做不好的拉麵又何須放上枱!!
