Having received in some guides as the No.1 Tempura Tendon shop in Japan, apparently many people had high expectations. Although I don't normally visit newish shops before they settle down in due time, I over-heard from the staff here that they are pretty fully booked for weeks ahead already. Since there was a free seat at the Counter, I decided to visit impromptu for dinner. The prices here are a little aggressive compared to Tokyo's original but I walked away being satisfied with the Kanto-Tokyo style tempura tendon rice, which usually involves thicker batter but coated on top in a sweetish sauce by default.

They have been operating in Japan for many decades. They have now opened a Branch in Hong Kong. It's run by the Okinawan EN Group in Hong Kong, and already very popular within a week. Better to book ahead especially for lunch..

The pricing policy here is not cheap, in fact it is almost double the amount paid at the same shops within Japan. The Signature 7 Items Ten Don is $250 + 10% in Hong Kong. In Japan, the same dish is nearly half price to here at only 2,500 Yen.

Okinawa Snow Salt and Sea Salt, with Spices -
The Okinawan salt is expected, knowing the En Group's Okinawan pedigree and also previously this floor housed En Group's other Charcoal grill restaurant. Both salts worked well with the Tempura items, although from my experience the Okinawa snow salt works best with red meat.

天丼 イ HKD $140 - Tendon with Calamari Kakiage, Prawns & White Fish
Very accurate tasting especially the sauce and batter. Very pricy though! In Japan expect nearly half the price or sometimes more. The full 7 pieces Donburi is $250+, in Japan I can easily find a place at a fraction of the price.. Nevertheless taste wise it was as Tokyo Kanto as it gets, especially with the sauce ~ 8.5/10

Eat the tails! That is one of the advice I receive from my past Japanese colleagues, as that's where the intense prawn flavor lies, as long as it is fried properly and crunchy enough. A question which I always have in my mind is, where did all the prawn heads go in such a Tendon shop?

Ika Squid Kakiage Tempura -
The Squid was soft supple, cut into nicely diced chunks. Surprisingly I enjoyed this Ika Kakiage a lot, it had flavor, very right texture and doesn't over whelm you with too much veggies.

Apart from the Highish Pricing Point -
I walked away being quite satisfied, especially with the very accurate sauce, which tends to be slightly greasy and soften up the tempura a little, but is very Tokyo-esque authentic. Having tried a basic version and feeling accomplished, next time I might try the more upper end Signature version with the large Anago Sea Eel. But that is at least $250 ...

正打算來秋光吃天婦羅前,首先你要知道/要有心理準備:

從秋光的facebook 專頁得知,它是由EN Group 引進香港,這家飲食集團的幾家和食餐廳都有涉足過,最有印象的要算是正正在秋光樓下的「樂宴」,其沖繩料理做得不錯。一踏進店,看到卡片架上除了有秋光的,還放了其他該集團的餐廳卡片。其他餐廳多是走居酒屋路線,不知是否從商業角度出發,秋光不是像淺草的本店般,獨沽一味賣天婦羅了。

店子不大,約有四十個座位,有面對師傅的bar 枱、普通二人方枱、四人卡位和塌塌米廂房。即使坐bar 枱都看不到師傳弄天婦羅的情景,因為前面的是刺身櫃,製作天婦羅那油煙氳氤的鍋則放在裡頭,好的就是不怕滿是油煙,不好的就是觀摩不到炸天婦羅的手勢了。

整體來說,裝潢走簡約的和風,燈光柔和,尤其是四人卡位和塌塌米座位是挺適合聚會的。店家亦沒有告知有最長用餐時間,多坐一會也行,加上沒什麼油煙味,感覺就是致身於一家主打天婦羅的居酒屋。

端來的是"dinner menu",但其實午市都是相似 - 多是同樣的天丼款式,同樣的價錢,只是可享用的較多,會附上前菜、湯、沙律、水果和飲品。多數餐廳的午市都會較晚市抵食(不過分別在於抵食多少),這家都不例外。

秋光在日本的飲食平台tablog 不算得分很高,但憑天丼贏了全國獎項,來朝聖就不得不試得獎名物。天丼可理解為「天婦羅蓋飯」,由$130-250 不等,是食材的運用和分別之別。最便宜的只有野菜,最貴的會有多種海鮮,吃到的量和款式亦較多。窩心的有份量較小、適合女仕的份量(詳見下文),是適合小嚐風味的不俗之選。

不喜歡大堆頭的,或是不喜歡當中某幾樣食材,可以索性逐樣單點,只吃自己想吃的。小至$20 的南瓜,大至創意的「白身魚忌廉芝士天婦羅」($60),豐儉由人,不過右頁那些稍為偏離傳統天婦羅的款式,想試的話只能單點了。注意單點的原條炸鰻是$120,不在此單點頁。

餐牌不是到此為止,這店還有供應壽司刺身、一品料理、甜品等(餐牌詳見文末),真的像居酒屋多於天婦羅專賣店。當然,天婦羅還是主打,在香港飲食界生存,可能硬著頭皮都要為大眾化口味加插一點居酒屋料理。中環四季的稻菊亦是如此,在日本是天婦羅專賣店,在香港卻是主打天婦羅但有懷石料理吃的高級食府。

發現桌子旁的調味架放了七味粉 - 對,提味上關西的是蘸鹽,這家關東的是用醬汁,不過好像在蘸醬汁後都可加些七味粉,但香辛會蓋過了本身已十分濃郁的味道吧?不合個人口味,因此沒有用上。

友人是「飯桶」但我不是,「扮細食」的點了個「適合女仕或小食量人士」的天丼すみれ($160)。下單後約十分鐘奉桌,份量比想像中大,絕不是麥記開心樂園餐跟普通餐的大小之別,看看跟茶杯的比例便會明瞭。其實不是很餓的男士都會夠食,蓋在飯面的天婦羅份量,比得上二百多元、正常大小的天丼,當然食材的價值是有別的。天婦羅不單覆蓋著米飯,還滿得伸出碗面,那像飛翼的伸出碗邊的正是原條炸鰻。

某程度上餐牌的大特寫相片拍得太美,被這「乜都有」的終極天丼吸引著。來朝聖嘛,既然幸運地book 到枱不用等,那就吃得豪一點,多試幾款天婦羅。五代目不是意指五款天婦羅,而是指師傅谷原秋光(因此名為秋光)是老店「土手の伊勢屋」的第五代目傳人,以身分來命名的,應該是招牌菜吧,起碼賭得上自己的名。這客天丼包含七款「時令食材」,每天都可能有點不同。今晚我們嚐到的,有牡蠣(蠔)、白身魚、蟹腳、原條海鰻、白飯魚、虎蝦和魷魚鬚,另外還有小量野菜。

出於好奇,在一品料理中點了個我想吃的和風卷蛋($50)。賣相和製法跟玉子燒有點區別,是意料之內。份量不算多,卷狀的打斜切,三件淡黃的卷蛋並列地豎在碟上,佐以蘿蔔蓉。奉桌時還有餘溫,暖暖甜甜的算是不俗的前菜。始終不是玉子燒,追求不到那剛剛熟的嫩滑感。蛋黃香氣滿溢,不過我還是惦念著一門或是一遊的玉子燒。

如果是有師傅在面前逐件的呈上,多是以海老行先(在我經驗上),跟著就是由淡至濃,所指的是食材本身的味道和麵衣份量,那就先吃海老吧。這件海老正好展現關東流派的特色,這店用上麻油和沙律油作炸油,油本身都帶有濃郁的味道,和關西的淡味油相反。加上有用蛋,炸起的表面會較粗糙,麵衣亦會較厚,即是較厚粉了。

海老頗大件,但咬下一口亦難看到蝦肉,我像是夾著80%麵衣、20%蝦的天婦羅。麵衣夠酥脆,鹹香豐郁,蝦肉亦見鮮甜爽彈,是新鮮貨色。不過就是油膩了點,任蝦肉多爽口,口腔四壁仍是因為油分而沾著麵衣碎。

如果單點,我不會點長蔥,向來是容許蔥的存在而不太會整根放進咀裡的挑吃鬼。內裡的纖維細緻,味道有點嗆但還可接受。炸得不俗,纖維間仍充滿水分。純粹個人口味,長蔥這濃味傢伙,配上濃味的麵衣,真的有點重口味。

日文名稱是獅子唐辛子(ししとうがらし)的青椒,不帶唐辛,但帶點甘苦。算是幾項野菜中味道最「奇特」的,也算是水分較多的。較刺激味覺的甘苦味,中和一下吃上那麼多麵衣的油膩感亦不錯。

口感上沒有預期中的驚艷,鰻魚肉不算厚,垂直咬下是吃麵衣多於魚肉。如果你愛蒲燒鰻魚的軟糯,這未必是你杯茶。薄肉失去了嗜鰻魚的爽口嚼勁,幸好還算細膩順口;但薄肉加上頗多細小的骨(但未至於影響口感,可若無其事的吃掉),口感一般。魚肉的確夠長,甚為壯觀,可是在口感上是扣了一點分數。

除了天婦羅是重點,可不要忘記底下的飯。飯中均勻的佈滿天婦羅的偏甜醬汁,不需要花力氣、小心翼翼的撥開天婦羅而拌勻。有醬油的緣故,清爽的米飯勉強可以夾起。在席間有想過這究竟是否日本米(門外在排著用日本產米的木牌),後來看到報導說,是用上北海道七星米,屬於糖分不高、黏性較低的米。只是我們有眼不識泰山,原來日本米都可以來得清爽。

作為胃口不小的女生,這「較小份量」的天丼絕對夠吃。份量足夠固然是原因,但亦有一個原因是有點油膩。不停的吃上很多厚厚的麵衣,開始上頗滿足的,不過去到最後卻有點飽滯感。

友人的五代目天丼當中有些我沒有的食材,偷來淺嚐一下-

炸蝦見得多,炸松葉蟹腳還是第一次見。這件蟹腳已算是七種食材中的一種,肉是集中在一端,好像性價比不高。帶肉為主的一端有沾上麵衣,吃下肉質鮮甜,不過就是少了點。

通常吃到的天婦羅多數是很容易一件件的拿去炸,其實細碎如海膽、白飯魚都可以作天婦羅,我見過的是以紫菜或是紫蘇葉包著,令到食材不會散開,再拿去炸。這裡的白飯魚卻是沾滿炸漿就拿去炸,看見白飯魚堆在一團,狀甚有趣。

可能剛開業的運作未順暢,點了的SUNTORY 威士忌梳打遲遲未到。起初點了杯mega size ($88),但因為已吃到尾聲,改點了regular size 的($48)。問過職員吃天婦羅配什麼酒好,在啤酒、梅酒中還是推介清新中帶點威士忌醇香的這杯。解膩的可惜遲來了點,不過有勝於無。

吃上了近兩小時,離開時已接近last order 時間,但門外仍有等候的人,人氣可別小覷。相比起同是關東流派、在中環交易廣場的あげ半 Agehan,價位相若,未至於很親民,一碗最貴在於一隻蠔和不算多肉的蟹腳收$250,性價比一般,未必能感動走實際路線的食客。腦中記著這是淺草名店,心中告訴自己「連廉航機票都省掉」,荷包還不算難掏。知道關東流派的特色而來試,明白厚粉是正常,奈何確實油份偏重,容易生膩感。試過了關東貨色,我知我心屬關西的清爽派了。

第一次寫食評,請多多指教。呢間秋光最近成日係fb見到廣告,今日去灣仔上堂,一於趁lunch時間去試下~一入到去見好多人都訂左位,好彩我自己一個,就walk-in坐左吧枱。menu夠簡樸,我亦好快揀左個天丼定食-呂。等左無耐就黎左前菜,分別有個燒牛肉沙律同食落質地似海草既物體。海草酸酸地好開胃,燒牛肉有驚喜,好好食,又嫩又好香牛味~令我好期待主菜主食黎啦,好香,影完相趁熱食。一咬落去,好鍾意半淋半脆既感覺(因為有汁),再加上呢種炸漿,令我諗番起去日本旅行去天婦羅老店食既味道價錢唔平,大約係日本食既1.5倍,不過都好大份,唔單止蝦大,魷魚野菜餅勁多魷魚又大粒,每粒差唔多半隻麻雀咁大,再加上原條海鰻,食完真係連我呢個大肥仔都覺得好飽第一次食海鰻天婦羅,果種感覺真係好幸福雖然食完有d濟😂最後仲有飯後果同餐茶,飲飽食醉就走人lu~要讚既係雖然岩岩開店又多人,侍應姐姐忙到踢哂腳都仲好好笑容同有禮貌,抵讚!!!加油
