Upon ordering my drink, we had the Salmon Rillette with Chives,Pink Peppercorns & Trout Roe with Rye Crackers to start our meal. Doesn’t look too complicated? In fact it didn’t involve a lot of cooking technique, but, the chef made it a decent dish so all the ingredients are really well balanced. Meaty but never to filling.

Black Truffle Arancini dipped in Smoked Paprika Aioli is a very interesting dish, didn’t know it is stuffed in rice until I had my first bite, it was a really creamy bite. Dip it in the sauce will make it richer in texture, for me , just having these rice ball is good enough, although I am a huge fan of Paprika.

Soldiers & egg is one of their signature in this place, slow cooked duck egg with sea urchin, spring onion to dip in the toastie. The dip is very rich and creamy, mixing it with sea urchin, definitely made it a good bundle with alcoholic beverage. I can never have enough of it.

US Roasted Beef Grilled Sandwich with truffle mustard mayonnaise, caramelized onions, sharp cheddar, tomato and Truffle Fat chips was our main dish! The beef was juciy and tender, with the sweet caramelized onion , cheese and truffle mustard mayo, not just giving out a complex texture, it has a very strong and unique aroma when the staff brought this dish to our dining table, I was indeed really fully, but I couldn’t help finishing up my piece of sandwich. I am loving it.

Before we move to the sweet treats, we had Fried Artichokes with Spring Onion and Mint Aioli. It is just an awesome vegetarian option, first of all I didn’t think it is vegeterian, it is not oily and goes so well with the mint aioli make it kinda refreshing.

Desserts were recommended by my friend Ms C. We had their signature sticky toffee pudding and our flourless chocolate cake!

The sticky toffee pudding, was very soft and moist sponge filled with the finger licking thick toffee sauce, topped with a scope of ice cream, even if you are telling me the whole piece are all fat, I would still consume the whole thing, I felt like I was in heaven!

Thinking the sticky toffee pudding is way too good? After my first bite of the flourless chocolate cake I realize that there is something which taste as good as my favorite sticky toffee pudding. Optimum sweetness, soft with a smooth texture, doesn’t taste like a cake more a soft creamy pudding, the sweetness of this dessert came from the cream. The best thing about this dessert is , you wont feel you have eaten a lot even though you finish the whole thing, that made us less guilty of having this lovely yummy sweet treat.

It was a really satisfying dinner, and of course like I said I love the alcoholic drinks here. The first few times I went to this place I had cocktails and this was the very first time I had whisky. Liking the food, atmosphere and drinks, I couldn’t find any reason of not coming back again.

這杯酒也有故事,不過才疏學淺不勉強翻譯了,有興趣才看吧:The Ribston Apple was grown in 1708 from one of three apple pips (seeds) sent from Normandy to Sir Henry Goodricke of Ribston Hall at Knaresborough, Yorkshire. The original trunk did not die until 1835. Remarkably it then sent up a new shoot that lived until 1928. That is 220 years of consecutive apple production! The Ribston Pippin was hugely popular throughout Victorian times and remains popular today.

I got utterly excited when the Braised Wagyu Beef Cheek stew was set on my table. With the drooling aroma permeating the air, I could not wait and took a slurp of the broth immediately. The broth was pretty much like Beef Bourguignon, but less intense in flavour. The Wagyu beef cheek was insanely tender to a point that it tasted more pulpy than tender. The beef had a rich alcohol flavour but lacked of beefy flavour which was rather disappointing. The only 2 things I found fond of was the broth and the toasted potato cubes which had a crispy edge and creamy inner.

Interior decor was well done, quilted leather sofas and armchairs, art noveau drawings, dark lighting and private, cozy corners

The cocktail menu was extensive with a natural emphasis on whiskey. Wine menu was pretty limited. Drinks were a bit on the pricey side but it not totally out of range, came down to around 100-150HKD per cocktail/glass of wine. The apple punch was a favorite among the group. they also had mulled wine as a seasonal option but was given in a tiny glass mug. The gin tonic on the other hand was given in a burgundy wine glass which was pretty interesting.

However the service was appalling. I understand it was start of the peak time for the bar (9pm on a saturday) but the lack of propriety was too much even for uppity bar standards. Our whole group did not arrive on time and everytime a new arrival would sit down, while we were amidst exchanging greetings the waitress would cut in (without an apology) and ask 'What would you like for a drink?'. At one point our friend who had just arrived didn't even have a menu in front of her and was asked the same question by the time she got her scarf off. Not to mention our almost empty glasses of cocktails were whisked away with the speed of an emergency ambulance. And as you can imagine we were reminded that we had to return the table at 11pm by 10:45 and given the bill.

It was a nice vibe and I would have marked it as a good place to get a drink despite the music but the service was horrible, making us feel like we were taking up space where we weren't wanted. I doubt I will be making a repeat visit to Stockton after this experience.

Scotch egg ($80)是經典的英式酒吧小食,不過不是每次都能遇上做得好吃的。Stockton這scotch egg就很合我心意。蛋外層仍脆,淡淡香辣的免治肉腸包著軟心蛋,還有微辣的aioli醬,味道十分惹味。吃完一片後真有想追加多份的衝動呢。

Fish and Chips were great too. It was served with pickled tartare sauce and thick cut fries. I remembered the times when I used to live in Britain because of this dish. It was crunchy batter/soft flaky interior combo in style!
We also tried the whiskey-based Athole Brose. It suits to our taste. We can’t drink too much that time since we are already full.
I want to come back soon because I really want to try other dishes as well as their famous rhum.

在雪茄咀部先輕輕沾上 Port 酒,吸啜的時候增添了一股甜絲絲的味兒,使煙葉的香氣變得更加芳香。多謝 「STOCKTON」專業人士的指導,令我多了一點點知識!

「STOCKTON」以一位 Middle Name 為「STOCKTON」的英國作家,採用其著作中描述1890年倫敦酒吧的氣氛、環境、陳設而打造,怪不得「STOCKTON」的格調與韻味別具一格,這次在完全沒有準備的情況下,不單錯過了拍攝照片的機會,還錯失了一嚐「STOCKTON」獨特的雞尾酒與美食,下一次必定會在我的中環,細味著您的倫敦氣息!

既然是英式酒吧,怎可以沒有Fish & Chips呢,這兒用上鱈魚來做,所以名字改為Rock Cod & Chips。炸魚格外香脆,內裡卻很嫩滑,而且薯條都炸得香口,唯獨鱈魚的油份較重,有點油膩,但未尚不可,另類的享受。

如果我說整晚的食物都不及一件Sticky Toffee Pudding with Vanilla Ice Cream的美味,可能真的太誇大了,但事實勝於雄辯,一放下,不及三十秒月重剩下的只有幾滴Toffee Sauce。感覺柔軟濕潤,但又不會過腍,甚有彈性,一入口,那股焦糖香卻充斥於口裡,令人難以停口。

The entrance of the venue was quite a sly one, tucked away in an alley at the edge of Wyndham street (Are alleyways the new marketing strategy for Maximal Concepts following the success of Brickhouse?). Excuse the quality of my photo, but the shades and darkness all add to the mystique. If you manage to find the alleyway, walk to the end and then up the stairs, you will not be greeted by a large banner or signboard; rather, you will be face-to-face with a closed door and a keypad. Just as the James Bond in you attempts to conjure up a password for the door, a tall slim lady with a gracious smile walks out as if expecting your arrival all this time and guides you into this secretive lounge.

Under the candle lights and dim brass lights, you can observe the old English furnishing of the interior - with darkwood furniture, brick walls and Chesterfield sofas, reminiscent of the age where men wore top hats and preferred scotch over beer. Oh and of course, what better to add some flair to the place than some animal specimens and deer mantles.

As worthy as it was describing the decor and atmosphere, let's get to the meat of this review (no pun intended). Our first two starters were Country Terrine ($120) and Cracked Mud Crab ($180). The Country Terrine was served with piccalilli. The piccalli was comparable to a chilled minestrone soup, which offered a lovely refreshing contrast to the meaty, nutty flavour of the terrine. The mud crab was paired with charred avocado and came with leaves to wrap it in. Although I didn't noticed how the avocado was charred, the texture went smoothly with the crab meat, contributing to the creamy body of texture with the crab meat.

It's always fascinating how brilliant ideas can magically transform the simplest ingredient into a decadence. The Scotch Egg ($80) was wrapped around a meaty outer-layer which was further held by a crispy outershell. But the genius was in the creamy, butter, spicy sauce, which tied all the ingredients together into a meal on its own.

There is no better way to clear your palate with some intricately designed cocktails. The Ribston Apple ($130) was smooth, almost like a juice. Apple served a good base flavour with the rum in addition to tanginess from grapes and finished with cinnamon overtones. Brass Monkey ($150), I was told by the waitress, was similar to a whiskey sour. And indeed it seemed like the same drink, which was not entirely a bad thing.

The drinks menu, bound by leather and written intricately (with stories behind their cocktails) was definitely a lot more comprehensive than the food menu, which is something I will be back to explore, whether in moderation or (most likely) not.

The epitome of English food - Fish and Chips ($260), was served with pickled tartare sauce and thick cut fries. The dish was well executed: fries were crispy on the edges and flaky inside; the soda batter worked well on the Rock Cod, which had firmer meat than usual sole fillet. It was good, undeniable, but I do not think the price tag can justify something as common as this. 

As a final note, I have yet to try their signature dish - Ultimate Whole Lobster Salad, and I will definitely re-visit as I feel that I have not fully experienced all the details on offer here.
