Toro 味麵豉湯,麵豉湯都有拖羅味!?原來拖羅味係嚟自湯裏面嘅拖羅魚皮,魚皮油脂豐富,口感有少少爽身,喺口入面咬開,立馬爆發一陣魚油嘅香味,及後同靚仔老闆交談之下,先知道原來處理魚皮嘅工序係咁複雜,連做個麵豉湯都咁有心機,足見餐廳對出品嘅用心。

香港越來越多omakase嘅日式料理餐廳,個個都話自己用嘅食材喺每日由日本經飛機新鮮運到香港,其實都唔知真定假,只有佢講我就信住先啦,呢間日式料理餐廳好奇怪,逢星期三休息,同老闆傾計之後發現原來日本嗰邊每個月某個星期三喺公眾假期,唔會有新鮮食材嚟到,所以餐廳索性星期三休息,咁嘅實際行動目的只係為了新鮮食材,實在值得尊重。今日喺度食左個$400嘅omakase,有十款壽司,前菜有三粒BB響螺及三文魚白瓜醋物,響螺微暖,肉質煙勒,而三文魚同白瓜一軟諗一爽口,呢個配搭都幾得意。而壽司則款款不同,其中有魷魚壽司、元貝壽司丶吞拿魚壽司丶赤貝有梅子、三文魚子壽司丶吞拿魚腩壽司丶海膽壽司,全部都好食,當中發現呢位日本老師傅手工好好,每件壽司都是即場製作,間中會加上鹽巴及柚子,又或者加上三滴檸檬汁(冇錯,睇住老師傅精準的從新鮮🍋榨出三滴汁直接滴到壽司上,每次都喺咁),食完壽司之後有一碗魚皮湯,最後甜品,唔係雪榚,係日本無花果,好熟好諗同埋夠甜(唔係浸糖水嘅甜,喺果糖本身的甜),入口發覺唔會有紐西蘭或者土耳其無花果當中有嘅少少帶酸味,正。

食完壽司之後有一碗魚皮湯,最後甜品,唔係雪榚,係日本無花果,好熟好諗同埋夠甜(唔係浸糖水嘅甜,喺果糖本身的甜),入口發覺唔會有紐西蘭或者土耳其無花果當中有嘅少少帶酸味,正。

今日一起身就肚餓,諗起元朗有間餐廳門口裝修比較神秘,經過幾次都好想入去試吓,就揀今日啦...換件衫就揸架車出去,好彩仲比我搵到位泊泊好車就行入去,見到D客人都係坐係壽司枱上,我都唔例外。揀咗款十貫壽司餐,落完order就送上熱茶跟前菜,之後就可以坐係度望住個日本師父為我 炮製我嘅午餐, 由於係廚師發板每做起一件壽司我都好期待,當然有部分壽司我係唔知係咩魚,但我好想讚個壽司飯係我鍾意嘅酸度仲有少少微暖,其中有一款係蝦壽司,依個蝦跟我平日係街食嘅有好唔同,依個蝦比較彈牙同有一份嘅鮮甜味,另外就係件魚子壽司唔腥之外仲好脆身,食完壽司後原來仲有個麵豉湯,依個湯好好飲,因為佢哋碗湯入面有好多魚皮,初初仲驚會有D腥,當知完全無腥之外仲好甜,好似飲緊魚湯咁魚皮連一塊鱗都無,最後仲有個自家製嘅雪糕做甜品。

十件壽司依次序排列左出黎, 仲有件海膽軍艦, 不過唔夠位放咁多相了😭

點解特登要咁樣排出黎?

因為呢個次序係師傅特登按當日最新鮮既海產而較為淡味既白身魚打頭陣, 由淡味慢慢食到最後既魚子同海膽為最濃味.

每件壽司正宗日本黎既老師傅整架, 飯既握力要拿捏得好準確先唔會令舊飯太鬆易散, 或者捏得太實冇晒空氣感👍👍

有較為正既係真鯛壽司, 其次特別既係烏魚子粉平目魚壽司, 赤身醬油漬👍👍鯖魚壽司同拖羅壽司都令人食得津津樂道架😍🤤

成日聽朋友講元朗有好幾間隱世正宗日本人料理嘅餐廳,所以就要去搵間食個休閒又高質嘅,點解揀食lunch因為價錢比較優惠,唔駛用咁多錢又可以食到好嘢。需然係小店但裝修有一種高貴嘅氣派,首先安排好我嘅坐位,再細心奉上熱毛巾同熱茶...再遞上menu揀好咗後,再遞上三款前菜,先有個溫泉蛋,依個蛋係凍食加上半熟嘅程度剛剛好令我可以好優雅咁用匙羹慢慢食,之後到一個腐皮卷,依個係一口可以放灑落個口度,腐皮內應該係蔬菜類好好味呀,之後就到個酸味嘅凍麵,依個食完好醒胃,面仲有少少花去做 配襯。 之後就到主菜係10款壽司由廚師安排,當然成個過程除咗壽司好食之外,就係可以坐係壽司bar枱睇住師父親手為我做壽司嘅過程,依個過程好似睇緊一場表演咁,最緊要佢每次為我奉上嘅壽司我都好期待。

總體來說,這間廚師發辦的性價比非常高,吃這麼多件高質素壽司也只是四百多,抵食!

放假想同朋友去南生圍行下,順便過黎元朗食午餐,見到呢間日本餐廳食Omakase 套餐好抵食,質素又高,就決定試下。餐廳門口以黑色木裝修為主,係輕鐵站行過黎都好近好方便。我地今日揀咗10貫壽司套餐,坐吧台,可以一路食一路欣賞廚師的技術。前菜是海草素麵溫泉蛋,湯汁係清甜的䜴油汁,素麵係出奇地爽滑彈牙,清清地好開胃,溫泉蛋冰凍易入口,好嫩滑呀。依次係真鯛 , 海女魚, 烏魚子粉平目魚同黑魚子甜蝦壽司,肉質新鮮彈牙,味道清甜,特別係真鯛,魚香味重,肉質彈牙煙韌,有嚼勁。跟住係赤身醬油漬, 鯖魚,帶子同魚籽壽司,魚籽好大粒飽满,咬開魚香味超濃郁,清甜彈牙。馬糞海膽壽司,海膽味道濃郁,軟稔,入口即溶,紫菜爽脆。拖羅壽司,脂肪分佈平均,無筋,入口香味散發。蜆肉味噌湯,熱辣辣,好清甜,重魚味,唔腥,入口美味。食埋個甜品,黑糖糯米糍,咬開煙韌,黃糖粉味甜。
