A bit hesitate when I heard there’s plum sauce dressing on top
But in turns it’s really light and refreshing

Compare to other heavily seasoned squid you can have elsewhere
This one is relatively light
A bit clingy at the mouth with a hint of ginger

-scallop
One can definitely feel the flow
Scallop used to be quite plain but the black charcoal salt does lifted the overall texture

-Jack Mackerel
A nice preparation for tuna
Mild taste of umami
Also being lifted up by salt
A hint of smokiness

-Kinmedai
The skin is slightly pan fried to give you a sense of richness
Am definitely feeling the progression

-spot shrimp
To be honest I’m not a fan of shrimp
It causes me allergic reaction
But this one got this slightly creamy uni liked smoked shrimp paste on top and make it entirely different from the rest

-mackerel
The rice starts to feel more sour
Balancing the heavier sashimi on top

I like how it’s not too fat
With the pickles on top to balance the oiliness

Grilled to make it moist and soft

無得飛去日本的日子,我係第一次在香港食omakase,鮨三川比到我在香港也能享用到一份平宜合理的價錢,並且高質的廚房發板壽師餐,真係十分驚喜。我幫襯係午餐的omakase, 連加10%服務費約$440元。餐內包前菜,12件壽司,湯,烏冬和甜品。我常常覺得香港食廚師發板一定係有錢人的玩意,但經過鮨三川的體驗,相信對享用omakase一定有令一種的見解。不但你只須用平宜的價錢,而且食到高質的食材,享受高級的服務,簡直係無懈可擊,非常值得推介。唯一可以挑剔就係食物的份量對男仕來講,可能係要加多一些。

我地簡左12貫壽司set,set包埋茶碗蒸,沙律,一碗烏冬同雪糕/咖啡。
食物質素中上,司傅由淡味魚開始整,到最後食濃味魚。
每件壽司司傅都調左味,調味帶出個層次感之餘,又唔會蓋過魚既鮮味👍🏻👍🏻 另外壽司飯細細舊,加埋個烏冬,食完成餐岩岩好。侍應全呈唔會打擾我地食飯,但又會係適當時候好醒目咁添茶,值得一讚!如果夾硬講唔好既野,可能係個雪糕無乜特別😂

能以雄渾注稱的魚肉食味,配上彈牙肉感,難能可貴。跟腦天的肉味體驗相似,不過底蘊更好,後者的節奏鮮明霸道,本身經已本能地散出肉香。一致的隔和美靠著頂頂的茗荷板回厚重違和感,令食味結構回復到整全狀態。

茗荷作為日本常見辛菜有薑的誘人氣味,抗拒又吸引,乾爽的質地被切成絲狀。除更快釋放出對立的香味外,更可以夾雜在彈牙厚實的魚肉裏,豐富嚼感層次。

制作手法當屬上品~~

🥢平政
即普通油金魚,沾丁點醬油便能最完美地體驗油脂香美。不過品質一般,只散發一小絲油香,不夠肥美。就脂香不足的野生魚而言,肉香也略嫌欠乏。可幸肉感尚算達標,嚼勁清楚鮮明。

🥢帆立貝
肉感極之清晰分明,咀嚼時仿忽絲絲散開。散發輕雅的貝肉食味,跟平常所品味的帆立貝與別不同,甜度隨貝肉慢慢釋放,異常內斂含蓄。竹炭粉作為底蘊般存在,令輕雅的貝肉味被更集中品味出來。

香港壽司店甚小為牡單蝦膏加工,普遍原隻刺身或直接沾上醬油享用即可。不得不讚鮨三川今次自信到位的演繹。雖說用火灸蝦膏來完整食味結構乃傳統不過的手法,由其海外店基本上都司空見慣。但是能跟蝦肉的鮮美互相揮影,又把各自的味道發揮得恰到好處實在不易,很多時候只會蓋過蝦味,蝦膏的質感又因為與食材相似而齊齊蒙混一團。

只把面層蝦膏適量灸燒,製造豐富層次度。質感與蝦肉亦分別鮮明,咀嚼時蝦膏以點綴存在,未有干預蝦肉黏嫩。上品~

🥢蛇腹拖羅
蛇腹拖羅雖然魚味不及霜降及中拖羅,不過有更大比例的油脂含量,入口即溶感亦比兩者明顯。由其以養殖吞拿來說,魚味已經比全天然的大大失色,與其事倍功半地花多重步驟去突顯小得可憐的虛無飄渺,倒不如直接用蛇腹的滑溜為食客提供一個另類的新鮮體驗。

經醬油提味下,養殖吞拿的魚味被提上來,豐富了食味層次,以致結構不至於太失衡。享用時,觸感好比魷魚黏嫩,不過要更輕盈數倍。

馬糞海膽的甜美令人難以忘懷,鮮味較淡也是本身特點之一,所以本人更喜歡更鮮嫩的紫海膽及更富奶油香的白海膽。只是滑溜度有點出乎意料,呈現入口即溶的質感,以中價位廚發店而言有如此水準絕對是難能可貴。

自己很小在香港品味廚師發辦,主因性價比太低。面對租金高昂、文化差異、薪資不可減機制,試問還能有多小心思置身於中?除非動用數千元的。只是如今疫情關係也迫不得意光顧香港店,鮨三川我會納入再吃名單。食店定位非常清晰,不會花費過多技巧,步驟去料理本身失去天然優勢的食材裏邊,反而令我吃得更自然。

本身銀鱈魚係屬於油脂分泌比較豐富嘅一種魚
燒完之後只可以話佢係更加香口同埋嫩滑又滿足☺️
唔會話太油膩🙈而且要配合埋油菜花一齊食😜
本身仲諗住佢係一條菜芯🥬講出嚟都真係笑死人🥲
不過呢個銀鱈魚係幾好食嘅 但食多咗可能會好滯

根住我係完全唔知點樣一次過擺落口🤤有啲狼狽

雖然每一款都好好食😋但感覺上就係一條直線
唔會話有啲好驚艷到我😌無咩高潮起伏跌宕位🥺
我仲期待會有金目鯛呀真鯛呀間八個啲魚類🥲
不過認真係每件都好好食嘅👍🏻而且舊飯好細舊
每一件都先調好味 基本上唔需要你額外調味😌
不過有一件寿司 唔記得咗係邊件 係過分鹹🥺
鹹味完全覆蓋咗舊魚生嘅味 呢度真係要注意一下😅

烏冬送到過嚟嘅時候仲出緊煙 真係超級熱辣辣🔥
我鍾意佢呢個溫度☺️湯底鹹甜鹹甜咁都唔錯👍🏻
唯獨是佢個烏冬嘅質感係一啲都唔似烏冬😅😅
呢個烏冬只係似普通麵條 好似平時食開嘅上海麵咁
真係無咩煙韌可言 所以我對呢個烏冬有啲啲失望💔

用餐時間:普通星期二1400-1600呢度有幾個lunch sets揀,不過最受歡迎就一定係十二貫壽司。餐廳裝修都好有日式格調。首先有沙律+茶碗蒸。沙律(評分:5/5) : 柚子醋份量啱啱好,而且蔬菜新鮮,所以係比較高質既沙律。茶碗蒸 (4/5) : 茶碗蒸入面配左啲黑松露係幾好食,不過食食下食左粒苦苦地既蓮子,我就唔係好鍾意,所以扣左少少分。由於今次係我第一次食omakase,所以唔係好熟啲高級既日式食材。今次就只係講下啲印象深刻啲既壽司。呢粒帆立貝拍打完之後會收縮,證明佢好新鮮。最後入口嗰陣都真係好食既。牡丹蝦本身已經好鮮甜,配埋燒過既蝦膏之後,超級好食。入口即溶,好似食緊和牛。三文魚籽好新鮮,而且份量超多,放落口之後成口魚油味。海膽好新鮮,一啲苦味怪味都無,而且份量都唔錯。湯底普通,不過烏冬口感唔錯。食完咁多好野之後用一個我鍾意食既甜品做結尾。最後埋單連加一係$876,兩個人平均每人$438。係人都知omakase係貴㗎啦,所以呢餐唔洗$500都食到咁多好野真係唔錯。今餐無一樣野係伏既,全部刺身魚都好新鮮,一啲腥味都無。總括黎講,以一餐omakase黎講,呢間既性價比係幾好。
