這次午餐我個人的前三名:
1. 雲丹軍艦(圖一):一貫軍艦用上一排北海道海膽,搭配脆海苔,簡單暴力的美味,讓人感到滿滿的幸福感。因為怕海苔變軟,拍照沒對到焦,也來不及檢查,就速速把它送入口中。
2. 煮鮟鱇魚肝(圖四右上):可能是第一次吃到認真的鮟鱇魚肝,這裡的魚肝口感綿密,令人驚豔。我自己覺得口感嚐起來有點像豬腦哈哈,雖然這樣說可能反而會讓人卻步。
3. 炙燒金目鯛握壽司(圖三正中):金目鯛我吃過,但這麼好吃的炙燒金目鯛沒有。上桌時我沒有看出外表有炙燒過,我還在跟師傅說「讓我猜,這個魚我認識」,在放入口中的那瞬間,我驚呼,原來有炙燒過!那恰到好處的焦香來襯托金目鯛本身的味道,我又只能用驚豔來形容了。


壽星的最愛是:燒鰹魚佐針蔥(圖四左上)
壽星表示燒鰹魚肉質Q彈卻又入口即化;而這道菜讓我回想起跟父親一起去日本四國旅行時,在高知市的市場裡吃到的稻草燒鰹魚,真是令人懷念的時光啊。


另外令人驚喜的還有最後的干瓢卷(圖四左下)以及赤貝壽司(圖三左下)。
師傅自家醃的干瓢(葫蘆瓜),和小黃瓜一起做成的卷物,超乎我的預期,是醃菜卻又不似醃菜,亦是一絕。
我一般不愛點貝類的壽司,因為我覺得容易有腥味。師傅說夠新鮮就不會有腥味,那他家的赤貝應該真的夠新鮮了,沒有腥味又爽脆,改變了我對貝類的看法。


疫後報復性旅遊季,留在香港的我們獲得免費包場。甫入座時師傅不發一語,讓我們有點小緊張,後來食物上桌後,好奇的我開始發問、撩師傅聊天,也成功讓師傅分享了關於食材的專業,還有他在看的台灣開餐廳的綜藝節目XD。


感謝好友推薦了鮨隅Sushi Sumi給我,我也推薦大家想吃壽司的時候可以去Sushi Sumi😋

之前返工成日經過呢間壽司店都無機會試,難得今日放半日可以試下。lunch都差唔多坐滿晒,好好彩重有一個吧位俾到我。間左隔板有啲迫,不過係可接受範圍。揀咗$680壽司set。先上沙律,正常,茶碗蒸好滑夠味。12件壽司入邊有兩件野生吞拿魚,師傅話係青森縣產,一件醬油漬另一件腩位,估唔到依個價位lunch都有野生吞拿魚,好好好食!石垣貝爽甜,鰤魚啱啱開始season都算肥,馬糞海膽鮮甜紫菜夠脆,穴子差不多入口即溶,我覺得最好食係依件。其他壽司正常水準,無加太多花巧嘢,師傅說話唔多但食得出用心做。暫時可以收藏,有機會試吓夜晚。

I have been a customer since sushi Kado and Chef Jason always remember what I love. It’s always heart warming to come back to the same staffs with friendly service. Most of the staffs have been around since Kado days so quality of food and service are still too notch.

我本身唔係好食甜品嘅,不過朋友試完話呢個奶凍唔係好甜,所以我都食左一啖
的確個抹茶醬好濃,奶香味好重。細細個幾啖就食完,啱啱好,冇罪惡感😎

成個環境氣氛幾安靜,好適合傾計。服務幾好,有時出去食唔係坐吧枱都怕唔知自己食緊乜,侍應有耐性介紹每道菜。加茶都好密,我杯茶冇試過少過半杯。😂
臨走師傅都有一齊出黎送我地。傾左幾句,佢話平日嘅吧枱會易book啲,叫我地下次試下平日黎😀總括黎講呢餐食得幾滿意,真係要多謝朋友介紹👍

First time here and had no idea what to expect but was pleasantly surprised. This small independent restaurant is at previous kanidou noda location. Chef Jason has loads of experience and you can sense this with every little detail. Atmosphere was perfect for a quiet meal to just come and properly enjoy the food. I had a disappointing omakase experience two days ago (Sushi Kin Cwb) but here everything was perfect: temperature/texture of the rice, craft of each very seasonal piece/dish & etc.

帆立貝 (Scallop)
帆立貝用上青檸同山葵調味,些微嘅酸味令味道好清新。帆立貝厚身而又爽口,極為美味。
The scallop is seasoned with lime and wasabi, which gives it a refreshingly sour taste. Thickly-sliced scallop tastes fresh and delicious.

墨魚 (Cuttlefish)
墨魚質感結實,卻同時帶一種 Creamy 嘅感覺,頗為特別。
The cuttlefish tastes firm and at the same time creamy, which is quite a unique one.

甜蝦 (Sweet Shrimp)
甜蝦味道甘甜,質感柔軟,有種黏稠嘅感覺。
Sweet shrimps are sweet and you can feel the soft and sticky texture of it.

北寄貝 (Surf Clam)
北寄貝經火炙後好爽口,而且味道變得更突出。
After grilling, it brings out the flavour of the surf clam, and it tastes bouncier.

金目鯛 (Kinmedai)
金目鯛油香十足,味道甘香濃郁,令人不自覺沉醉於火炙後嘅餘香。
Kinmedai is rich in oily fragrance while having a sweet and rich flavour

鮟鱇魚肝 (Anglerfish Liver)
鮟鱇魚肝味道相對鵝肝淡雅,質感細膩且柔和。
The taste of anglerfish liver is relatively milder than foie gras. It has a more delicate and softer texture.

最中餅 (Monaka)

最中餅質感鬆脆,包住抹茶雪糕,帶出清幽嘅味道。依到嘅甜品係暫時食過嘅廚師發辦之中最好,我哋仲額外叫多咗一客。
Match ice cream is wrapped with a crunchy Monaka, which gives it an elegant taste. To date, this is the best dessert we had among all Omakase restaurant, where we have ordered an additional one.
