Newly opened ramen restaurant in CWB. I came here for the limited edition uni x clams w/miso soup ($198) p.s it is not on the menu, you have to ask if they still have it or not. I would say portion of the sea urchin and clams are very generous. But does uni really fits into ramen? 睇到雜誌介紹期間限定海膽拉麵,真係看見也心動!打電話去留定海膽,聽電話的哥哥服務好好!三人收工去鋪頭,唔駛排隊不特已,竟然一個人都無,可能係星期四啦,又或者附近太多麵店,競爭好大。一人一個海膽拉麵,真係成板海膽,好新鮮;麵既硬度可以揀,我要偏硬有口感的,唔錯!不過我最鍾意都係個蜆肉湯底,鮮甜美味,一隻隻細蜆食肉連湯,加啖海膽,簡直將工作煩惱一掃而空!我地仲叫左溫泉蛋,略咸。煎餃子,熱辣辣有肉汁流出,幾好。仲有叫左粟米粒,烤得好香,一黎已經搶食,無影低。海膽拉麵過左九月就無得食,好在有機會一試,希望下次黎試第二款。

在來吃之前我當然有上網做一下功課看看有什麼好吃的嘛

當我看到這個雲丹(也就是海膽)拉麵時雙眼都發光了

因為我超喜歡吃海膽的!!所以來之前我早就決定要吃這個!!

雖然HKD 198是有點貴,可是它差不多是一整板海膽的量!!

重點是這個海膽真的超鮮甜!!


朋友說她也喜歡吃海膽,但很怕吃到那些臭臭的,

我分了一點給她吃,她也說這個好好吃!!

用碗邊的海苔把它包起來吃簡直是一流


而且其實拉麵下面其實還有很多蜆,

這個就普通一點,沒什麼驚喜啦,

不過想說我們都不太喜歡濃味的湯底嘛

選的都是豬骨湯底

我覺得這裡的豬骨湯底比平常吃到的再淡一些些

後來才知道橫濱流系的都是偏清淡一點的

所以這裡很適合我們這些不喜歡重口味的人喔~

日本拉麵分成多個派別,而豚燻以橫濱家系作招徠,橫濱家系拉麵雖然歷史不及札幌或博多拉麵老,但特點是醬油味較輕。味噌湯色澤呈淺啡色,湯底不會過於濃稠,油量也適中,空口喝入口偏鹹,不過如果只吃拉麵,其實鹹度是可接受的。

雲丹拉麵應該是豚燻新推出的拉麵,因為點菜紙上是沒有的,只有貼在牆上的餐牌有介紹。初看還不知道是甚麼,經侍應解釋,原來雲丹就是海膽,所以雲丹拉麵就是海膽拉麵。但見海膽X拉麵這個配搭都頗新鮮,就點來試試。

海膽拉麵一上枱,真心嘩了一聲,因為拉麵上鋪上比掌心還要多的海膽,相信份量足有一板。

仔細一看,海膽呈深黃色,雖然每一瓣都比較細小,但沒有溶化跡像,可見其新鮮呈度。海膽由於放在拉麵上,所以入口不冷不熱,個人就覺得啅頭為主,還是偏好平時當作魚生般冷食。

總結,個人頗欣賞拉麵湯底沒有一般的重口味和濃稠,但叉燒湯麵和雲丹湯麵兩者之間,我還是喜歡傳統的叉燒湯麵多一點,但相信海膽控見到後者滿滿一板的海膽沒有多少人可以抗拒。

成日寫食評一般只係好好心機咁寫好味既,唔好味或者好一般既就懶得寫。。。但其實唔好都可以叫大家唔好中伏, 就的起心肝寫啦,呢間拉面同一蘭係埋同一條街,但同一晚就得呢間要排,一蘭唔使喎,有極大期望去試。呢間鋪出名在於佢既拉麵豚肉有股煙燻香味,仲有佢香濃味噌湯,網上comment 好OK,我都諗佢會好味過豚王嫁~ 所以都唔介意等。果日排左20分鐘到就入等,人多既好處係一次就可以試所有小食。1. 鳥唐燒即係炸雞$38~ 大阪醬,好味係甜左少少2. 燻制半熟玉子$14~ 有煙燻味,但唔係半熟無流心效果,係95%熟咁滯,作為流心蛋控既我,覺得呢隻蛋唔合格呀。。。(豚王果隻好食好多。。。)3. 燒牛舌$68~ 得8小粒,8啖食完。。。好味但太少啦4. 煎餃子$38~ 正常,無咩特別到左主菜既拉麵,個招牌既味噌湯底俾比我預期中淡,豚肉有少少煙燻味,中規中矩既拉麵,仲要108。。。咁點解我唔排其他更好味既拉麵店?!

呢間鋪出名在於佢既拉麵豚肉有股煙燻香味,仲有佢香濃味噌湯,網上comment 好OK,我都諗佢會好味過豚王嫁~ 所以都唔介意等。果日排左20分鐘到就入等,人多既好處係一次就可以試所有小食。

I came here for their delux uni ramen. Often try uni chirachi but not on ramen. Sounds interesting, right !? It was a Saturday afternoon but good that we passed the rush hour hence not too many people. Easily grab our seat in a minuteThe waiter described the dishes to us nicely. Not too many choices for ramen but I think that's what they usually do in Japan. August bees with green onion and dry garlic. It is tender and good for appetite My uni ramen !!!! 炭燒牛小排--估唔到拉麵店竟然會有牛小排,通常啲拉麵店嘅小食,不外乎係炸雞又或者餃子。牛肉質鮮美,香肉味,質感軟身,食落唔油膩。再加上幾片蒜片,不錯。

炸雞--呢度嘅炸雞唔係脆卜卜型,係傳統的日式炸雞,外面係軟身。炸雞上面可以揀唔同嘅醬料,我就要山葵味就即係Wasabi 味。Wasabi嗆喉,刺激,五感都即刻通唒。

話說呢一間拉麵就係另外一間拉麵嘅附近,旁邊的拉麵隊龍甚長,為味道?為人氣?還是跟風?如果係後兩者的話,你就要去呢間豚燻試下,味道,新鮮感絕對好,值得一試。

與朋友互換了日式叉燒/海膽這些配料後,就開始細細地品嚐:先試一口這濃湯,充滿著豬骨湯與昆布海帶交織的鮮味,配著中熟度的幼麵,鮮甜飽滿的海膽,數種或強烈或細緻的味道在口中很快地融合後綻放,有種莫名的感動!海膽的鮮與甘在拉麵的細緻味道襯托下有著細長餘韻,但那濃湯又把拉麵打造得很亮麗,真令人吃得開心!而那日式叉燒片得很薄,所取部位肥瘦比例很好,吃起來滑而本味厚,都是上選!

而山葵炸雞的味道很濃烈,該是下酒的好菜; 但朋友今晚不想喝酒,於是就作罷了!我猜是炸雞的脆漿中拌入了山葵,但可能是炸的時候那股嗆喉的辣味也隨之消失,所以吃起來只有山葵的香味而沒有辣味,那香味倒是與雞肉也甚而相襯!

總結此餐,與朋友吃了一頓令人這麼開心的拉麵晚餐,既開了眼界又吃得稱心,只能再一次說精彩!

而飯後水杯指數(食物調味濃淡度;5杯最濃),本人給予此餐為3杯;或許有些日本拉麵派系的調味更濃,但本人認為此餐廳值得推薦!

未想到在一家拉麵店內,燒功竟然有水準,厚切牛舌,意料之外的燒得香口,香嫩爽滑有口感,味道亦好,蒜片炸至非常脆口,蒜味不霸氣,配搭匹配。

一試無妨,若然喜歡湯頭不膩的豚骨拉麵,是可以考慮的選擇,如果亦喜歡煙燻風味就更加適合,但對我來說,還是邪惡香膩的濃郁豚骨拉麵更能令我回味。

Staff suggested the soup pair well with thick ramen so we took that.

Ramen in Miso soup 味噌湯 $108

Great that the soup was not oily, salty, or “heavy-taste” like the general ramen!!! The first few bites was totally appealing, and eventually tasted slight chilly in the soup, but should be still acceptable for any non-spicy person! ^^ The pork was also tender and moist.

WOOOWWOOOOT. something you couldnt miss! there were such generous amount of urchin!! should be the WHOLE PLATE OF RAMEN topped on the ramen.

The soup was light, refreshing with pleasant sweet aftertaste.  Eventually i released that there were heaps of clams inside the soup as base! that's why the soup was light yet refreshing and sweet! Very comfortable mix inside your mouth!

Don't miss this too! It was such a splendid taste with nothing extraordinary- corn.  The sweetness of the corn combined with savoury scent from the grill (with butter?!)

Again, very nicely seasoned and grilled. It smelled SOOO appealing once it arrived and tasted wonderful as well. The ox tongue were very tender!
