午飯時間,本來打算試試豐勝手丼,結果一看門外價錢就打直接退堂鼓。本懶蟲為方便起見,就直接到旁邊的拉麵小店坐下開餐。第一次來這店,除了常見的豬骨拉麵和味噌拉麵,居然還有牛舌、松葉蟹、海膽等罕見選擇。Budget問題,這次先試試牛舌拉麵。牛舌爽口之餘帶油脂,用料似乎是做串燒用的牛舌。沒想到牛舌和拉麵這樣配合。拉麵豬骨湯底有少許醬油味,creamy夠味之餘又不怎麼黏口,配上枱上的辣芽菜真是一絕。本來想改天再試其他幾款拉麵,誰知店員說今天已是last day,之後轉營賣燒魚……雖然燒魚也好吃,但……T^T只能打個食評留個念啦

牛舌爽口之餘帶油脂,用料似乎是做串燒用的牛舌。沒想到牛舌和拉麵這樣配合。

拉麵豬骨湯底有少許醬油味,creamy夠味之餘又不怎麼黏口,配上枱上的辣芽菜真是一絕。

本來想改天再試其他幾款拉麵,誰知店員說今天已是last day,之後轉營賣燒魚……

雖然燒魚也好吃,但……T^T
只能打個食評留個念啦

銅鑼灣特色拉麵最近香港經常都有好多拉麵店,但係好老實講,有時都想試吓啲有特別啲嘅拉麵,唔係成日都叉燒拉麵,。經過銅鑼灣豚燻拉麵,見到佢有個季節限定,有我最喜歡食嘅北海道松葉蟹腳。梗係入去試吓啦,我揀咗好最喜歡吃的北海道松葉蟹腳拉麵。拉麵湯底,有豚骨,有味噌。我就揀咗豬骨而拉麵柔軟度適中,加左個雞翼,牛枊小吃,湯底味道超濃, 不會太鹹,拉麵配上濃豚骨湯。好好味呀。而當然就係慢慢品嚐我嘅蟹腳, 咬落去鮮甜美味,絕對不會有海水味。追加雞翼及牛柳,香脆可口,食到真係唔停得口呀。

先來煙燻牛舌拉麵,平時我好少食牛舌,就是怕肉質un到咬不開,不過呢碗拉麵就好唔同,牛舌經長時間煙燻後,肉質鬆軟,入口有嚼勁,亦有一點兒煙燻的味道,感覺幾特別!

銅鑼灣從來不乏拉麵店,單單在登龍街,經已有四間拉麵店鬥個你死我活。而起謝斐道一帶,更有無人不曉的「一蘭」駐隱陣腳。不過,近期在Instagram留意到又有一間充滿霸氣的日式拉麵店 ---「豚燻」也進駐一蘭的旁邊,看來試圖要在地域上分多一杯羹。來自日本横濱的「豚燻」,門面裝潢不及同場的一蘭般紅噹噹,全店以深啡木系做門面,顯得較為沉實,若不是門口掛上大大個白色、印有餐廳名字的燈籠,都幾難令人著眼。餐廳的地方格局很小,一眼便看完。右邊是半開放式的廚房,全店不多於十個座位的bar枱全部對正並圍繞廚房,空間感很細,是屬於吃完就要走的格局。室內沒有太多浮華的擺設,只掛有幾匹賣清酒的布簾和對餐廳食物的專評報章,充滿簡約的日系小型家庭式拉麵店的風範。餐牌只有A4size的兩頁紙,主餐牌的麵款分別有豚骨拉麵($88)、味噌豚骨拉麵($88)、雲丹滿開海之幸拉麵(海膽拉麵$198)、原匹松葉蟹拉麵($298)、灘岸白貝蜆湯拉麵($158),另可追加玉子、黑木耳、竹筍、海苔等配料。至於小食則有炸雞、蒜片牛舌、燒餃子和沙律配胡麻醬等,款式雖然較小但也較集中,可看到廚師的精湛專注的廚藝。原隻松葉蟹拉麵($298

員工把松葉蟹拉麵搬上枱,迅速吸引所有食客的四面投射,繼而就偷聽到隔兩個座位的女客人對身邊的男友嗲聲嗲氣埋怨為何不叫呢款拉麵。哈哈,一出場就如此霸氣,呃Like無極限,就是這一點已經值回票價吧!

賣相真係唔講得少,份量誇張驚人,先原隻松葉蟹一上場,旁邊堆有一座小山丘高的蟹膏,再有六、七隻蜆的拌奏,絕對是終極鮮美的所在所在。

面對如此盛大的拉麵,真不知道應該從何入手,幸好員工端上拉麵時,順勢多放一隻碟子,並溫馨提示把所有松葉蟹和蜆先放到碟上,便可以一邊吃麵、一邊吃海鮮。另外,每隻蟹腳尾端有一半被拆殻,只要吃的時候用筷子從蟹肉一面推出,一絲絲完整無碎殻的蟹肉,肉實而不粉,帶有海水的微咸和鮮味。從未試過吃松葉蟹可以吃得如此方便,乾淨利落,吃得大快人心。

湯底是拉麵的靈魂,餐廳標榜用豬骨、蛋殼、蔬菜餚製超過12小時的湯頭,加入蔬菜,感覺新鮮之餘又能減低豬骨滲出油脂的膩,兩者平衡恰當。筆者所選擇的原隻松葉蟹拉麵,廚師會額外將連膏的蟹殻、蟹身和白蜆一同放入豚骨湯裡共灼,令味道溫和的豬骨香都兼帶一股跳脫的咸鮮海洋風味,別有一番風味。

麵條可選擇粗麵或幼麵,硬度方面亦有硬、中、軟之分。筆者最後點了粗麵的偏硬和走蔥。經過筆者連番「相機食先」後,浸在湯中的拉麵都變得軟身,彈性尚算可以接受,不過煙韌度力有不遞,加上湯掛度一般,感覺是湯還湯、麵還麵。

餃子裡以豬肉和椰菜做饀,材料都挺多,而且包得密實,不會一咬就散。肉汁也很豐富,一咬開,肉汁便濺出到碟上,肉質香軟而不乾身。至於餃子皮則較厚身,但平面部分煎得微焦脆口,又要挑剔又要讚。

炸雞分有原味、紫蘇梅、山葵三款味道。一向都喜歡酸咪咪的味道,所以揀了紫蘇梅口味。可惜只是把原味炸雞再加紫蘇梅醬汁,並非一早將紫蘇梅塗混在雞皮表面再去處理,令酸甜的味道當然分佈不夠平均。而且,雞肉偏肥,肥膏明顯,雖然令雞肉炸得嫩嫩,但同時油份極重,過於肥美就是肥膩,令人吃不消呢。

經過煙燻的牛舌,入口未能感受到明顯的煙燻香氣,大概是因牛舌上碟時一早浸在湯面上,香氣隨著湯底四散。不過牛舌的邊位還能咬到丁點兒的焦香,肉味挺濃,無論彈性和鬆化度都令人滿意,軟腍帶有嚼口感。牛舌襯上新鮮炒好的炸蒜片,令一脆一軟的口感層次更為多變吸引,有著蒜香的拌奏,令味道效果提亮不少。再加上整碗牛舌一共有七片之多,比起平常一碗正宗的豚骨拉麵、裡面只有兩、三片小得可憐的薄切豚骨,所以這樣的份量真的不能再挑剔吧。

牛舌拉麵的配料雖然不及原隻松葉蟹拉麵的豪華,不過拉麵勝在有大量粟米、木耳、菠菜、香蔥和洋蔥配搭,是較多蔬菜的元素,感覺輕盈清新又健康一點。另外,湯底以豚骨做基底,額外加入麻油、雞油、蒜泥,令味道溫和帶有平庸的麻香,不如原隻松葉蟹拉麵般的鮮味狂野,較為適合愛追求健康的人士而設。

整體而言,拉麵的麵條之中要論得出色而言,豚燻拉麵未是做得最好,只能排在中間之列。不過要論到菜式與湯底味道的配搭變化,豚燻拉麵就當之無愧,例如用海鮮做主菜再配更鮮美的湯底,只有鮮到極點。相反卻用蔬菜配料的湯底來強化出牛舌的濃郁肉味,它真的做得很出色。新崛起的餐廳名氣有限,自問試過後感覺真的很不錯,若然要花時間下下在一蘭門前排隊叩門,不如多比個機會自己吃一碗與眾不同的豚燻拉麵吧。

這是店員推介的季節限定。湯底跟海膽拉麵的一樣,都是由蜆熬製而成;相比平常的豚骨湯底,海鮮湯底相對清新鮮甜,每碗都有六七隻鮮蜆,用料十足!松葉蟹腳亦毫不吝嗇,足有四五隻之多!蟹腳味道鮮貼,而且已去一半殼,食客能輕易起肉。

呢款係新推出嘅拉麵 牛舌有8片咁多 每片都切到好薄 而且有淡淡嘅煙燻味😬 牛舌紅紅地 咬落好淋好嫩 不過趁熱食好咬啲同香啲🤔另外仲有蒜片吊下味😍 湯底係味噌 偏鹹左少少 同埋牛舌都令湯底有啲油😅

除左蟹腳 仲有好多蜆😱 呢碗嘅湯底就冇咁鹹 但有淡淡海鮮味 海鮮都好新鮮😆
