鈺膳的灣仔店已經開了六年, 在這灣仔酒吧街開潮州菜餐廳, 在剛開張時已經覺得很有趣, 開了分店, 也在原址繼續經營, 真的很有韌性. 至於我點經典潮州菜式石榴雞, 外皮不韌但夠挺實, 可以包到內餡而不會散出來. 石榴雞不是由石榴製成, 只是由雞蛋白或核蛋白組成的外皮, 爆起來就像石榴的形狀一樣. 內餡有豬肉粒和冬菇粒等, 其實就是另類的水餃, 但蛋皮的處理比一般水餃皮更有挑戰性.煎韭菜粿的糯米外皮香脆但內裏煙靭, 口感和之前吃的石榴雞相映成趣, 內餡的韭菜炒得夠香, 如果份量再多一點效果會更香, 視覺效果會更澎湃. 至於鵝肉和沙嗲牛肉河, 水準沒有太多驚喜, 平實得如其他一般的潮州餐廳, 就不如之前的菜式有印象. continue reading

踏入這家灣仔食肆,門口就飄出陣陣家鄉嘅香味,暖笠笠嘅氣氛喺呢冷颼颼嘅天氣裡特別親切。我哋主打咗幾款潮州小食🥢,首先係千絲芋頭糕,口感爽滑得黎又有脆香,每一啖都嚼到啲芋絲,真係食落有層次感😌。蝦米薯仔粿又係另一驚喜,薯仔綿密,蝦米帶嚟陣陣海鮮嘅鮮味,令人一試難忘!潮州蠔仔烙真係炸得啱啱好,外皮微酥,同埋滿滿嘅蠔仔鮮滑多汁,一啖一個,飽滿得嚟唔膩。鹵水鵝片亦都係今次嘅必試,肉質輕柔,伴隨豐富嘅鹵香,沾少少醬料,正宗潮州滋味一秒送上味蕾👍。椒鹽九肚魚則係我心頭好,輕輕咬下,魚肉細嫩嘅香味立即四溢,鮮嫩不過油炸得啱啱好,即刻讓人想再嚟一啔!今次嘅食驗真係超滿意,每一款菜式都有驚喜,收皮得嚟又唔油膩,絕對係我潮州美食嘅新寵。朋友下次嚟香港,我必須帶佢哋嚟試吓,齊分享我哋嘅家鄉美味!🥰 continue reading

呢間朋友話食過,我就嚟試吓!始終我都幾鍾意食潮州嘢!Book枱去到入座坐低嘅時候侍應嘅態度都非常良好, 即使佢哋做嘢好忙都係彬彬有禮。應該係話令人好有溫情前菜有花生同埋甜酸菜,我好鍾意食甜甜酸酸嘅嘢,所以refill左甜酸菜均衡啲有肉有海鮮有菜有飯,先來個滷水拼盤,因為我驚佢啲滷水汁好油,所以叫佢拎上我哋自己識幾多就點幾多我想講滷水拼盤Menu上面冇嘅鵝腎非常之貴而家睇返圖中嘅份量,有大概七至八片,但係每一篇都非常之薄質素非常之好好好味,爽口得來唔會太硬非常之好味!但係買$150就太貴了,始終份量非常少,因為一件都真係非常細鍾意食鵝肝嘅朋友話鵝肝質素非常好,亦都係$150 ,但係我剛收到大大片,而且不嬲都係貴少少所以好合理~墨魚片正常發揮,嗌之前都估到唔會特別鮮味,不過質素爽口!應該是新鮮😊本身想嗌潮州凍烏頭$298,但係店員就話嗰日嘅質素一般般,轉食咗$280嘅麻油!唔怪得知見親食評嘅人都係食馬友,可能馬友嘅棟宇比較整得好同埋都知道馬友油香比較重嘩你睇吓以後用幾多油香,都幾大條!呢個整得不錯,而且佢個普寧豆漿喺側邊都幾好調味店員話奄仔蟹$298.1隻,我哋嗌兩隻每人一半,我都驚唔當造,但係店員話靚不過我就覺得未係季節,雖然膏唔係少感覺唔會太香,肉質亦都不是太嫩可以 但是不是期望的好本身諗住未食過呢個甘蔗渣煙燻鴨脯諗緊呢個價錢,同埋上網查個樣好似不太吸引,因為好多時都係包裝丁丁嘅樣子😅🙈🙈 店員又係話特色,😅😂😂是但啦未食過大家都,不過大家食咗一嚿都覺得非常一般,基本上都係煙鴨胸嘅味道,而且肉一定不是新鮮,始終係燻制食物吧!嗌咗蝦乾粉絲什菜煲,食食吓發個好香,原來是非常多有的,上湯蒜子浸莧菜也是很多油因為本身講明想成餐都落,同埋特登揀上湯浸就係想啲菜少啲油,點知朔晒油都食得唔多只是我比較腌尖不喜歡最後相嘅芋頭炒飯果然非常指向,不過唔鍾意食炸嘢嘅朋友就厭啲芋頭雖然非常之香,不過炸過嚟🤣🤣太油膩!不過成煲相真係熱辣辣非常香口!佢有落啲豬油粒,然後我都唔記得有咩了😂因為呢個時候都飽飽地反而期望甜品頭先忘記了介紹呢個潮州手工菜:菊花石榴雞 $138每人一粒,即係total四粒再配四個西蘭花,呢個大大粒,入面有啲計同埋唔知什麼配搭,忘記了都是標準的材料我記得是不錯的,而且蛋白皮不會很容易穿可以一試清心丸綠豆爽太甜,清心丸大概有四至五粒,份量不是太多,同埋感覺唔似用正宗鵝地粉制造有啲似番薯粉嘅彈力 因為第一次食好似係彈得來有少量爽口🤣?還是我記錯? 整體而言比較推薦潮州凍馬友,滷水我想非常好吃,不過就性價比低一啲🤏🤏其他好似比較普通整體而言店員服務質素運程,整體食得開心,雖然環境我與枱之間好似比較逼夾,但係識落又唔會有好擠迫嘅感覺不過食物來講應該就未必會揀呢間潮州菜 continue reading
