【隱世藍帶主廚】中環54折嘆晚市二人套餐!
擺花街出名手工意粉嘅「紅館RaRe Restaurant」因重建搬店,原來搬咗嚟干諾道中,門口好有歐洲氣派啊。唔講唔知,原來呢度係家庭式經營,由藍帶主廚Ryan同太太一齊主理。全因Ryan一直好鍾意外國小餐館氣氛,佢哋會專注一種菜式,追求極緻。

「紅館RaRe Restaurant」唔止做手工意粉出色,Ryan提到醬汁先係靈魂:「當然手工意粉會彈牙啲,但醬汁先係最花心機。因為全部醬汁都係自己煮製,無味精、無雞粉。要用超過100條魚骨熬底汁,慢火煮4-6小時再隔渣,最後慢慢蒸發至剩低膠質先做到咁濃郁。而呢度最出名嘅龍蝦汁意粉,就係用呢個底汁煮製,所以好有層次甜味㗎。」

在中環這個香港中心的商業區,商舖和餐廳的檔次相對比較高,特別是在晚上搵食不算容易。經於中環工作的地膽推介,在一座甲級商業大廈地下層,原來開了一家由法國藍帶主廚主理的小餐館。價錢合理但食物屬水準。.由於是在商業大廈內,前身好像是一家咖啡店。由於門面相當低調,如非得地膽推介可能會很容易錯過。餐廳的地方不算大,播着柔和音樂,走溫馨舒服的路線。.六道菜晚市二人套餐 💲699晚市以供應各種套餐為主,足有六道菜的二人套餐,只是💲699起,很有誠意。.✿ 麵包按照傳統先送上熱辣辣的餐包,配油醋。.第一道菜✿ 巴馬火腿蜜瓜沙律或✿ 熱帶風情海蝦青瓜沙律跟朋友每人一款,巴馬火腿以玫瑰花造型,證明廚師有落足心機做小擺盤,所以吃得特別滿足。青瓜海蝦沙律有驚喜,首先份量滿滿的一盤,泰國風情的油醋調味,相當醒胃,海蝦的肉質結實。總括而言兩款頭盤也很滿意.第二道菜✿ 南瓜忌廉湯南瓜味濃,呈奶滑感。.第三道菜✿ 香辣低溫慢煮雞胸巴東汁扁意麵在享用正式主菜前,中場先來意粉的環節。雖然餐牌上寫「香辣」,但實際上辣勁不高,只有淡淡的辣香感。使用慢煮雞胸,所以雞肉滿嫩滑。整體感覺有點像現在流行的西或式冬陰功意粉。.第四道菜✿ 紅館姜母鴨或✿ 茴香魚高湯煮海鱸魚來到主菜環節,其實經過前三道菜,已經是大半飽的狀態。還好主菜份量不算太大。我選了薑母鴨,想不到是以原隻鴨腿上。鴨腿帶點藥材的香氣,但以西式的手法呈現,擺盤也是美美的。.朋友享用的高湯煮海鱸魚,魚肉雪白軟腍,感覺有點像中式蒸魚一樣,但以西式的方法呈現,算是相當健康的一款主菜。.第五道菜✿ 芒果拿破崙及✿ 水果芝士撻甜品每位兩款,包括有一口的小芒果拿破崙和一個藍莓芝士撻,質素可以媲美坊間的甜品店。.✿ 茶套餐還會包簡單的咖啡或茶,茶還有相當多種類的選擇。實在是性價比滿滿,整體水準足媲美高級的西餐廳。 continue reading
