被驚艷到嘅日式燒鳥ꉂꉂ꒰•̤▿•̤*ૢ꒱真係用到炭爐燒嘅店唔多,用到備長炭而好好哋操作嘅更加少之有少。今日嚟到鳥匠呢度見到師傅用備長炭細心處理都係食嘅一大享受。備長炭溫度唔太高火力相對較易控制,燒嘅過程平均地加熱食材,考耐性考技巧都考經驗,如何喺熟透而有保存到肉汁外面焦香拎到個平衡,真係唔易㗎!今日試咗好多唔同雞嘅部位,想講嘅係師傅嘅手勢爐火純青恰度好處,雞胸肉外面少少焦香,入面爆汁鮮甜; 雞皮燒到少少乾身但保留少少油脂食落香脆濃香; 雞軟骨係雞心口中間嗰一條長骨仔,呢個真係唔係度度都有; 免治雞肉棒棒真係自家製唔係預製來貨呢個真係想俾100分,免治雞肉棒棒入面加入咗少少軟過,咬落去唔鬆散肉汁豐富真係掂!串燒真係太多太有水準,仲有啲主食類都係一樣咁正,好似個卡邦尼烏冬,濃濃嘅雞蛋卡邦尼汁醬掛哂落去個島冬仲要配埋個濃厚蛋黃,好邪惡但我鍾意。仲有仲有呢個必必必推係呢個雞肝醬配多士,主角雞肝醬滑順又濃郁,而另一個主角多士都唔遜色,成塊鬆化香脆,雙主角係完美合二為一! continue reading

今日嚟到中間一間好有feel🥰主打備長炭串燒&日式料理嘅餐廳「鳥匠」🐥。我地坐係 𝐵𝑎𝑟枱,可以近距離目睹燒烤過程🔥。我地叫左雞脾肉、雞翼、雞頸、腐竹免治雞肉卷,仲有配埋甜香嘅日本蛋黃一齊食嘅免治雞肉棒🐤👍。此外,呢度仲好多稀有雞部位可以叫來燒,例如chicken belly,真係好少有。除咗雞肉,和牛海膽三文魚子都係必食推介👍,超級好味。另外我地仲叫左煙肉芝士卷,厚揚豆腐,玉子燒,關東煮和親子丼!都係好好食。 continue reading

大家可能都知 香港食肆想做真正炭燒 要獲得牌照其實困難重重 所以為數不多中環既燒鳥鳥匠就係其一 用左備長炭去呈現最原汁原味既正宗燒鳥 作為一間燒鳥專門店 燒鳥品項足足有20款絕對稱職稀少部位每日限量供應 可能要睇緣份先試到例如我有幸試到既雞腎邊(Engawa Part Gizzard) 要用上8-10隻雞先整到 口感更爽嫩 同一般雞腎又有唔同另外有得叫一定要叫雞蠔肉(Chicken Oyster) 公認為雞最美味既部位 尤其軟嫩多汁 法文稱為sot l‘y laisse 即係傻仔先唔食( ˘͈ᵕ ˘͈ *)♡雞翼都係我較印象深刻 佢竟然係去左骨 啖啖肉 雞皮又脆卜卜整體表現都穩定 師傅一個人架輕就熟地打理個炭爐 成晚毫無失手調味風格偏濃味 但未至於過鹹 係非常岩送酒既程度其他前菜主食類都無比下去 雞肝醬軟滑 唔會有異味 配酸酸甜甜既莓醬好balanced大家都吹捧既雞湯carbonara udon如想像中既濃郁 烏冬煙靭又掛汁食到飽飽 就用一份vanilla ice cream配old sake作結 單食雪糕無咩特別 加入些少清酒有種神奇化學作用 有種醇厚既成人味(⁎⁍̴̛ᴗ⁍̴̛⁎)✿ continue reading
