To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 無錫脆鱔($88)採用黃鱔作食材,本身肉薄味淡、肉質鬆散,這道冷盤主要食口感及醬汁。由於肉質鬆散,用滾油炸一會便會膨脹,肉質也隨之變得酥脆,口感有點似蝦條。醬汁用鎮江黑醋、黃酒、蔗糖調制,但未能做到酸、酒香、甜兼備;酸味偏重,酒香及甜味唔均衡。

滬式點心又怎可以缺少小籠包,豫園小籠包($58)的賣相一般,摺紋唔夠多、唔夠靚,勝在皮薄多汁。味道方面稍為遜色,湯汁唔夠鮮味,豬肉蓉餡料刴得唔夠幼細、食落去有點渣。

比較起來,生煎鍋貼($58)的外觀優勝於豫園小籠包;隻隻包得工整、大小一致,底部亦煎得金黃香脆,只略嫌鍋貼表皮望落去稍為偏乾。豬肉蓉餡料的味道與小籠包差不多,可能鍋貼餡料需要更多的咀嚼,反而唔覺得有渣,不過,汁液份量唔夠多。整體味道同豫園小籠包一樣,中規中矩而已。

叉子雞米($168)的整體味道令人失望。叉子香口、薄身,表層鬆化、內層麵袋軟身,釀入餡料一流 ⋯⋯ 可惜雞米就完全唔掂。味道怪怪地,唔鹹、還要帶甜;松子仁份量又太多,松子仁的質感及味道影響了雞米的口感及味道。

滬式點心味道中規中矩,滬菜最吸引客人的冷盤亦唔見得有過人之處。至於小菜方面,只點了叉子雞米,雖然味道麻麻地,但唔作得準。單純以這一餐食過的菜式來說,味道一般而已。
