好一段時間沒出城食壽司,十二月初經朋友介紹嘗試了「鮨釀」!「鮨釀」大概有十個座位,在臨急臨忙情況下訂到中午已是萬幸!Chihane Omakase - Lunch 每位 HK$880我和老公的餐後感是非常滿足及滿意,幾乎由第一道的茶碗蒸,以至最後的玉子,也感受到幕後對每一環節的用心,儼如醇酒的細釀,而幕前是透過 Sushi Master 的功架,醞釀出驚喜的鮨味!不長氣描述太多,不如盡快看圖識味!用作清新味蕾的有薑片和白蘿蔔漬物,兩者也好吃得很!開吃前,不放過拍下 Sushi Master 準備的工作!蜆肉茶碗蒸的平衡工力超讚,入口蜆鮮突出,蜆肉飽滿多汁,尾隨而來的是質感滑溜的蛋香,充滿海洋味道的茶碗蒸!章魚嫩彈帶鮮香,少許芥末吊味,來得剛剛好!100% 的純鮮表現,魷魚配上青檸汁,簡單就是美!恰好的醬油,將鰤魚的鮮甜進一步提升!北寄貝原來可以好精彩!牡丹蝦既嫩且甜,唯一一貫熟的壽司!閃閃發亮的小肌壽司,可惜我一向不太懂欣賞小肌,除了獨特魚味以外,殘留了一點被辜負的遺憾!據 Sushi Master 稱這是日本尾水的秋刀魚,這貫便成為我倆最留戀的秋刀魚壽司!利申:一向鍾情秋刀魚的甘香與

非常滋味的鰻魚汁,鹹甜勻稱,香氣迷人,看著醬汁由海鰻身上滑落,治癒萬分!相信完美的鰻魚汁放在任何鰻魚也能生色不少,記得將碟底的鰻魚汁沾光!

雖然未能追加秋刀魚和鯖魚壽司,但最後我們仍多吃了兩件鰤魚壽司 HK$120/件,和一件海膽壽司 HK$240,特別要注滿意如雙層巴士的 Double Decker 海膽壽司,令人加倍滿足!

題外話,當天 (星期六)「鮨釀」午市 Omakaze 分兩輪用餐時段,網上訂位時已不時提醒客人需準時入座及取消訂位的細則,豈料當天有客人遲到半小時,不但令該時段客人久等,更因為延後了用餐時間,下一輪的客人只許在門外苦候,其後工作人員亦得加緊準備食材的速度,懇請大家守時!
