好一段時間沒出城食壽司,十二月初經朋友介紹嘗試了「鮨釀」!「鮨釀」大概有十個座位,在臨急臨忙情況下訂到中午已是萬幸!Chihane Omakase - Lunch 每位 HK$880我和老公的餐後感是非常滿足及滿意,幾乎由第一道的茶碗蒸,以至最後的玉子,也感受到幕後對每一環節的用心,儼如醇酒的細釀,而幕前是透過 Sushi Master 的功架,醞釀出驚喜的鮨味!不長氣描述太多,不如盡快看圖識味!用作清新味蕾的有薑片和白蘿蔔漬物,兩者也好吃得很!開吃前,不放過拍下 Sushi Master 準備的工作!蜆肉茶碗蒸的平衡工力超讚,入口蜆鮮突出,蜆肉飽滿多汁,尾隨而來的是質感滑溜的蛋香,充滿海洋味道的茶碗蒸!章魚嫩彈帶鮮香,少許芥末吊味,來得剛剛好!100% 的純鮮表現,魷魚配上青檸汁,簡單就是美!恰好的醬油,將鰤魚的鮮甜進一步提升!北寄貝原來可以好精彩!牡丹蝦既嫩且甜,唯一一貫熟的壽司!閃閃發亮的小肌壽司,可惜我一向不太懂欣賞小肌,除了獨特魚味以外,殘留了一點被辜負的遺憾!據 Sushi Master 稱這是日本尾水的秋刀魚,這貫便成為我倆最留戀的秋刀魚壽司!利申:一向鍾情秋刀魚的甘香與肥美!平時經常吃焗與煎的鯖魚,但原來鯖魚壽司會如此滋味,魚香魚質魚鮮也突出,配搭脆卜卜的紫菜,更是一流!以前不太愛吃赤身,但現在學懂欣賞它的韻味,這貫赤身壽司的質感與魚香也令人相當滿意!滑溜、魚脂滿滿的拖羅壽司,相信無人不愛,將整貫吞噬後,嘴巴留下脂香,竟意外地沒有一絲膩意,超讚!海膽壽司就是無得輸!Cheers~輪到海鰻壽司出場!非常滋味的鰻魚汁,鹹甜勻稱,香氣迷人,看著醬汁由海鰻身上滑落,治癒萬分!相信完美的鰻魚汁放在任何鰻魚也能生色不少,記得將碟底的鰻魚汁沾光!嬌小、但蝦味極之濃厚的味噌湯!富有玉子蛋香、又兼具軟滑回彈的蛋糕口感,我可以稱它為玉子蛋糕麼?豆腐味和薑味的雪糕作甜品,剛好我倆也挑了後者的薑味雪糕!雖然未能追加秋刀魚和鯖魚壽司,但最後我們仍多吃了兩件鰤魚壽司 HK$120/件,和一件海膽壽司 HK$240,特別要注滿意如雙層巴士的 Double Decker 海膽壽司,令人加倍滿足!題外話,當天 (星期六)「鮨釀」午市 Omakaze 分兩輪用餐時段,網上訂位時已不時提醒客人需準時入座及取消訂位的細則,豈料當天有客人遲到半小時,不但令該時段客人久等,更因為延後了用餐時間,下一輪的客人只許在門外苦候,其後工作人員亦得加緊準備食材的速度,懇請大家守時!鮨釀 Sushi Kamosu香港中環閣麟街 46-48號 FOCO 15樓電話:2703 6388 continue reading

The two of us stopped by for lunch on a weekday before. We had the sushi Omakase lunch menu.The lunch was good but not great. It provided us with a variety of ripen fish liked yellowtail, hata and otoro, the ingredients were good but the rice was too sour which was not my taste. The service was outstanding but the food was not as expected. It’s a bit overpriced and there are some better options within a short walk.我和朋友之前試了平日廚師發辦壽司午餐。 食物質素合格但不算很好。它為我們提供了各種成熟魚生,如平政魚、羽太和霜降拖羅,食材很好,但飯偏酸不太合我口味。服務很出色,但食物不如預期。它的價格有點高,步行不遠會有一些更好的選擇。 continue reading

朋友生日揀左呢間同佢慶祝,餐廳地點有d遠,唔係地鐵站附近,要上長電梯再行幾步路,大熱天時上到去真係流哂汗🙈🙈一入座餐廳就問想要冰茶定熱茶,好貼心😍冰茶好好飲,濃味但唔會澀,真係透心涼☺️第一道菜係粟米燕窩茶碗蒸,超級甜!茶碗蒸好滑,冇諗過粟米燕窩加埋落去係可以咁好食😍令人驚艷👍🏻👍🏻之後開始上壽司,有秋鮭、間八、池魚等等,舍利酸度同硬度都唔算重,正中我口味🤤上左大約3件壽司之後上左縞蝦配海葡萄,又係另一驚豔之作,縞蝦好甜,加埋海葡萄、酸汁啫喱同蕃茄蓉,成件事好清新好夏日,好refresh🥰🥰食完縞蝦再上左帆立貝、小肌、中拖羅、大拖羅同海膽壽司,仲有燒馬友,最後仲有干瓢卷、玉子同蜆肉味增湯,好滿足💞 continue reading

中環新開鮨店,推開趟門打橫一排10個位,全部有男師傅處理。男師父為Sushi Kami出身,壽司大方優雅❤️我同女友人一齊食lunch,只有一個價錢選擇,$880+10%,10件壽司+2道酒看+茶碗蒸+卷物+ 麵豉湯+甜品。男師傅+1個助手處理10人份量,上菜速度恰宜,手腳乾淨俐落。菜單:乾銀魚仔瑤柱絲蒸蛋👍墨魚 👍👍目鯛深海池魚螢光魷魚北寄貝 👍👍帆立貝煙燻魚春魚👍👍👍鹽燒馬友👍👍7日熟成拖羅將油漬赤身地膽(有d失望,水水地🥲)龍蝦赤麵豉湯👍👍干飄玉子燒👍👍👍👍👍杏仁咖啡雪糕我哋一共食咗一個半鐘,節奏幾好,出品亦都屬於穩陣取勝,未算好有驚喜,玉子燒超好食,屬於安安全全,可以再食既店☺️ continue reading
