To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

【魚湯鮮鯇魚咀米線】
賣相吸引,幾朵綠油油蔥絲段,濃郁淺啡黃色魚湯,大塊的魚肉,令人胃口大開。廚師把性感的鯇魚咀正背兩面煎香,然後放於米線上淋上魚湯即成。湯質帶點複雜,估計以大量混合魚種熬製,味道適宜,具有魚味但並非清甜的口感。鯇魚咀是魚頭最前的部位,大量滑潺潺啫喱晶狀的糕體,要以口吸吮食用。廚師煎香至金黃微焦,辟除淡水泥草味道,制法巧妙正確。

吃至一半,漸感厭倦,檯頭備有兩樽佐湯料醬。說是自家制的XO醬及蝦皮,非常罕有,可見店主用心經營。嘗試一下,XO醬辣度溫和,不太搶口,與魚湯共融。蝦皮味道低調有限,純粹讓食客增添玩意而已。

總括而言,「醉鮮」確實選擇多,煮法純正,價錢超值,會再來光顧,但也希望可以加添更多魚類選擇。
