To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 今天去了尖沙咀靜中帶旺的一幢高樓大廈一間日本餐廳[鮨燐],開門已看見一張日式吧枱,店員殷勤招待下我們選了$980的omakase。漬物~牛蒡丶蒜頭丶蘿蔔各樣均爽口,確實是一道美味的前菜;日式沙律~夠新鮮;茶碗蒸~嫩滑可口;刺身:鮫鲽魚~把魚切成一片片,其餘部份輕燒後卷起,鮫蝶魚一經輕燒,點些豉油一起吃魚味更濃;鹿兒島錦江灣鱆紅魚~新鮮鱆紅魚刺身色澤偏白,肉質鮮美爽口、 咬感好,是魚生的上等原料;長崎縣小長井真蠔~入口軟綿嫩滑,配了醋啫喱,提升了其海水味;炙燒BB銀雪魚~甘香油潤,齒頰留香;中拖羅~ 魚脂豐富而無筋,入口即溶放了竹炭鹽魚味更濃郁;火炙大拖羅~用肥美的魚胶來炙燒,師傅直接端在我手時是暖暖的,立刻放進口,好滋味呀!吃完刺身獻上清味柑橘啫喱來中和刺身的肥膩;壽司:平貝(帶子)~爽滑彈牙;深海池魚~肉質細緻爽口,味道甜美;白蝦~放入少許蝦膏在壽司內,上碟前灑酒輕燒香,增添蝦的鮮甜;北海道根室赤海胆~ 肥厚飽滿,肉質細滑,味道甘香;海鰻魚~用鰻魚及骨來淆成汁,濃縮後淋在鰻魚上,暖食更美味;慢煮鮑魚~鮑魚鮮甜爽口配上鮑魚肝醬突出味道的層次,有嚼勁,日本大根清甜;日本白昆布麵~熱氣騰騰

最後來了秘製抹茶奶凍~榨了的椰子汁混合抹茶來造成的奶凍,再把黑豆與抹茶深深的拔起來一起吃,味道更突出,往後的每一匙也帶出椰香味,足矣!
