To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 再來就是主角北京填鴨
這裡的靈魂填鴨醬較薄身,味道也較清淡。
填鴨每片也連皮帶些嫩肉,不光是只有鴨皮。吃起來沒那樣油膩。
包皮一定要趁熱食,中間夾住蔥段和青瓜條中和,完全提升鴨的味道。
雖然此菜式吃了多遍,但還是樂此不疲,真偑服昔日古人對食的追求。

主食是大娘燒肉餅
外面的烤餅皮烤得很乾身,中間夾着厚厚的豬肉層,肉汁四溢。
豬肉層的豬肉也是用人手撕成絲狀,再用醬汁調味,十分惹味。 
比起平常吃到的叉子燒餅更多汁更好味。

午門面青-名字有趣, 完全摸不着是什麼食物.
細問下原來是豬肉炒脆淮山, 豬肉炒得乾身香口, 沒想像中濃味,
不過最妙之處是其炸到卜卜脆的准山薄卡, 中間夾着一塊肉來食,
異常好味,我忍不住馬上來碗白米飯, 成件事就更完美.
是整晚的亮點.

胡同牛肉刀削面- 這款刀削面面質和平日在坊間吃到的刀削面不同,
是較滑身, 好像在吃粉似的, 我個人比較愛硬身一點,不過各方各地也有其造法.
而其牛肉味濃和肉質柔軟, 加上看似濃郁但味清淡的高湯, 作為主食,感覺又不錯.

最後是萬眾期待的拔絲士多啤梨, 特別時同行的女友人, 一坐下就要說吃這個名物.
上枱後,女友人又尖叫又狂拍照, 看來她實在很是欣賞.
有別於一般的拔絲, 這沒有炸漿包住生果,又不需浸水讓其分開.
一切來自然簡潔, 直接鬆開一只放入口, 先脆後JUICE, 先甜後微酸.
既滿足甜品的胃又能解點飽滯, 妙極.


友人們也很滿意是晚的傳統食物,認為師傅用心製作,一絲不苟才能做出傳統的味道。
