To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 前陣子來到銅鑼灣金百利覓食,筆者幾位好辣之徒選了一間位於8樓,以四川烤魚為主打的小店,店內裝修帶點中國風的Cutie,地方整潔座位寬敞,店家還貼心的奉上膠圍裙,避免湯汁弄髒衣服。細閱餐牌,發現這裡除了川辣烤魚外,還有很多其他的川式前菜和小炒。我們先點來一些冷盤小食,椒拌松花蛋,松花蛋色澤金黃通透如啫喱般,有別於一般的皮蛋,少了那股獨特的阿摩尼亞臭味,入口軟彈流心,濃厚麻香。爽口豬耳,鹵豬耳切成幼條,撈上紅油麻辣醬汁,爽脆惹味。乾煸田雞,田雞未必人人敢食,但好此道者無不被其鮮甜所吸引,單看最懂吃的法國人也將牠入饌便知道確有其獨到之處。師傅以不同的辣椒和辣椒乾將田雞炒得香口乾身,但肉質仍舊細嫩多汁,香辣入味而不失鮮甜,就連平時少食田雞的筆者也忍不住吃上幾件,辣氣十足。 終於到主角登場,這店主打烤魚,單是魚種已有鯇魚、凌波魚、清江魚、桂花魚和深海石班五款選擇,而味道更是有八種之多,當中有辣有不辣,而我們就選擇了中辣的渝翁招牌豆花烤清江魚,店員推介這種魚只有一條大骨,方便不太懂吐骨的筆者,而且肉質還肥美軟嫩,是大廚推介之一。當魚鍋端上來時發覺果然句句屬實,魚身份量十足,口感香滑啖啖肉,最重要是

終於到主角登場,這店主打烤魚,單是魚種已有鯇魚、凌波魚、清江魚、桂花魚和深海石班五款選擇,而味道更是有八種之多,當中有辣有不辣,而我們就選擇了中辣的渝翁招牌豆花烤清江魚,店員推介這種魚只有一條大骨,方便不太懂吐骨的筆者,而且肉質還肥美軟嫩,是大廚推介之一。當魚鍋端上來時發覺果然句句屬實,魚身份量十足,口感香滑啖啖肉,最重要是紅噹噹的湯底麻辣得來不會太濃和油膩,香料辣味亦充分滲入魚肉當中,鮮味惹味兼備,隨鍋的豆腐吸收了麻辣汁的濃香,入口果真如豆花般滑溜,那種滋味實在令人回味無窮。

除了清江魚之外,大家點來的其他配料也算不錯,特價鹿兒島A4/A5黑毛和牛油香鬆軟,唯略欠牛味,油花分佈亦不算均勻,但以價比貨算是不錯了;萵筍鮮嫩爽口,稻庭烏冬煙韌滑溜,腐皮吸湯軟彈,佐上麻辣湯汁香濃刺激,讓我們過足口癮。

吃完烤魚後店家還奉上了西瓜桂花冰粉作為甜品,冰粉晶瑩透亮,滑溜中帶點煙韌,有點似蒟蒻的口感,配上西瓜碎和桂花糖水,冰凍微甜中帶清香,中和一下麻辣鍋的油膩,感覺清新舒暢。

整餐出品質素到位,用料與招呼皆不俗,收費雖不算太便宜屬中等價格,但環境坐得舒適味道亦不錯,定位算很合理,來到銅鑼灣覓食可不妨來一試。
