To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 昨晚帶了京菜老師傅來吃北京菜,他說先點幾款看功夫的餸,再決定是否吃北京填鴨,最後是沒有order北京填鴨的。蔥爆牛肉算不錯,夠多大蔥👍🏻北京爆炒麵,即係北京炒拉麵,麵質不談,只看到一灘汁,就知道功夫不好。鑊不夠熱呢!不過外國人會喜歡,他們喜歡sauce😆雞絲粉皮,新鮮的粉皮應該又薄又滑,這些是粉皮乾浸水發出來的,才會這樣厚身又不滑。麻醬味道是不錯的,只是沒有功夫可言。家常餅中間應該係一層層,像酥餅。這裡的家常餅中間半透明扁撻撻的,像麵粉不熟一樣,一係是做定一大堆放冰櫃存放,一係就不是自己搓只是外來急凍貨源,有客order就拿出來煎,一般屋企都可以買到自己整嗰種。老師傅說,真正講究的家常餅,當天搓當天用,收舖前一兩小時客人不多就未必再開粉糰了。所以。。。😝
