To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 踏入十月,又係食大閘蟹既時候,人人都會討論去那裡食蟹好。筆者今年的第一蟹,交左俾夜上海,呢間連續十六年摘星的店子,我自己都食過好多遍,對其出品好有信心。佔地兩層,處處散發著老上海的味道,加上坐擁維港美景既露台,環境實在無得輸。既然一心打算來食蟹,自然要有酒相伴,大家選好靚靚酒杯,夜上海的廿年花雕亦隨之而來,獨特既香氣素來是花雕的吸引之處,與大閘蟹是天作之合。依例先來幾道涼菜,醉雞皮爽肉嫩,唔怕死實,滲出絲絲酒香,明知要留肚吃豐富既大閘蟹菜式,都忍唔住吞下幾件才收手。江南脆鱔做到鬆脆不硬,酸甜醒胃,有助打開胃口。接著來的鵝肝蟹BB,蟹仔造型得意到唔捨得食。凍鵝肝入口綿滑,十分好吃,怕膩的話可配上旁邊的醋珠同吃,成個感覺又不一樣。吃罷凍鵝肝,飲番啖奄篤鮮暖一暖胃,咸肉與鮮肉,筍與百葉結,不用多花巧,喝得寧舍舒服。熱食過後,主角既大閘蟹終要登場。對我來說沒有九月圓臍十月尖呢回事,因為我只喜歡吃蟹公。是夜的,也就是五両半至六両的蟹公。如果你又懶又想食蟹,可請店員幫忙拆蟹的。至於是夜既蟹公,蟹羔唔少。細味完大閘蟹之後,當然仲有一系列的蟹粉菜式。蟹粉伴粉皮嚐得多,配類似質感的花膠真係第一次,頓時覺
