To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 為朋友慶生,聽從了朋友的推薦點了這一間他嘗試過在廚師發辦界中數一數二的餐廳,果然值得推薦點了他們的中級套餐, hkd1880一位,晚飯過後的感覺是豐盛飽足,他們的食材主要來自北海道,九州,沖繩等等日本原產地,先來餐前小吃,日本番薯配芝士,BB茄子和湯葉松葉蟹,BB茄子他們先炸後醃製,入口外脆內亂,帶點輕微油香,入口番薯的甜配搭芝士的鹹香十分配搭,前菜已經帶來了驚喜廚師介紹來自北海道,佐呂間湖的一年蠔,生長周期只是一年,尺寸不算太大,但是入口肉質非常爽彈重蠔味,配搭醋啫喱及柚子皮入口清新鰤魚腩,廚師加添了柚子胡椒和麵豉醬,入口的油香配搭清新的胡椒香氣和麵豉醬,不用再添加醬油味道已經非常濃郁鮟鱇魚肝,在口腔爆發的油香和普通魚肉不同,加添了一份內臟的香氣中拖羅配搭黑炭鹽,食材新鮮的緣故,中拖羅並不俾大拖羅缺少油脂咁,另外亦能感受到紅肉部份的軟熟,廚師把拖羅厚切,剛好成為一口一塊的份量,入口滿足另外還有拖羅配搭紫菜,廚師把拖羅火炙,加強了入口油脂感更帶有一點焦香香箱蟹,廚師介紹原來香箱蟹為松葉蟹的雌性,蟹膏和蟹籽的份量極多,入口蟹膏的香氣十足,以清蒸的效果更能吃出蟹肉的原味再來套餐中段的熱食,

基於照片上傳限制,不能把全部壽司展示,套餐中的六件壽司都非常優秀,當中的深海池魚和海膽和北寄貝都非常出色,是我在香港吃過當中質素數一數二,總括來說這間廚師發辦餐廳朋友果然沒有介紹錯,質素之高,的確是能夠介紹給喜愛日本餐的朋友,期待下一次
