> 進入檸檬旅程的餐前小食:以檸檬皮/肉/汁做成酸香醬汁醃製的紅笛鯛色澤鮮紅,肉質細嫩厚實味鮮甜;將西瓜抽出水份而成的compressed watermelon,將味道濃縮到清甜又爽脆,是一道清新爽涼的甜美前菜

Bechtold Lotus 2018 (90% Riesling/5% Gewurz.) (Alsace, France)

> 這瓶香港混釀的酒,酒味像蓮花般的純潔粹靜,清明淺黃色葡萄酒body輕盈帶蜜糖甜、亦重花香、帶有葡萄和薑的香氣,收結圓潤回甘,完美配搭紅笛鯛

Lemon Seafood Consommé

- Mixed seafood broth, fresh lemon, French oyster, basil oil

> 碗內預先放了法國生蠔和羅勒油,職員在客人面前將淺黃色的海鮮清湯倒入碗,羅勒油很提味令整個湯更為鮮香,鮮蠔味道爽脆甘甜又creamy,之後再食底部那片有機檸檬,酸爽清香味道在口腔內儘情爆發!這清湯所用食材多且工序複雜,出來味道清新好飲

Smoked Octopus

- Premium fresh octopus, coconut shell, lemon confit, egg white, sun dried tomato, noucham sauce

> 巨型又優質的八爪魚用峇里島椰子殼煙燻焗出smokey效果,切下去便知它的口感非常軟嫩,不硬不韌,帶有獨特的香烤味,淋上嚟自越南的noucham酸甜醬汁味道更鮮香惹味。底墊一層軟棉棉的蛋白,油漬蕃茄是自家種植新鮮酸甜,整道菜很出色

Baked Black Cod

- Black cod, purée de courgettes, falafel, sambal embe (balinese fried sambal), lemon butter sauce made from hong kong's own lemon story: lemon king liquorice lemon & pickled lime

> 嫩滑的銀鱈魚配餐廳調製的香濃牛油檸檬汁,亮點在於菜式植入了香港情懷:魚皮上的甘草檸檬粉、伴碟的檸檬王/鹹檸檬,兩種都是充滿香港特色的食物,配鮮嫩銀鱈魚味覺新鮮又幾夾。碟旁有峇里島叄峇醬和鷹嘴豆粉等隨個人喜愛點食,個人好喜歡這道魚饌

> 一道向灣仔益新美食館的“檸檬雞”致敬嘅變奏法國菜,採用法國無機因改造放養春雞腿,配搭牛油檸檬汁和有機鹹檸檬醬而成。春雞皮脆肉腍非常肥美,大啖之香而不燥,拌檸檬醬食清新解膩

Collovray & Terrier 'La Roche' Pouilly-Fuissé Vieille Vignes 2014 (Chardonnay)

> 此白酒味道豐盈花香味尤其突出、酸度低帶點礦物風味,適合配煙燻味重的八爪魚、creamy醬汁魚鮮和香口春雞
