西班牙菜在香港算為半紅不黑的菜款,筆者不定時也會記掛着一眾精巧小碟。Sabor Spanish Touch Private Kitchen 是一間精品西班牙菜小店,店內地方不大,只有約二十個座位,裝潢以黑色為主,紅色次之,感覺時尚。為了嚴控食物及服務的質素,餐廳每日只做一輪晚市生意,在必須預訂的安排下,廚師們能更準確及擁有更充足的時間製作美食。餐前小品是 Garlic Tomato Toast,多士面上的蒜蓉香口,茄蓉酸香,再加上橄欖油的清幽味道,整體食味不俗。口感方面,因多士面上盡是汁多的茄蓉及橄欖油,包心口感略帶軟身,而最外層則仍保一份微微的脆感。精品小碟三款,打頭陣的是 Clams in Green Sauce。海蜆以濃滑的魚湯煮製,蜆肉肥美清甜,口感細嫩。蜆肉魚湯同場出現互助提升彼此的味道享受。第二道小碟是 Grilled Cuttlefish with Green Allioli Foam。廚師先將墨魚切粒炒香,再伴以蕃茜蒜蓉打泡作汁侍客。墨魚粒雖然有一定厚度,但口感彈而不韌,味道自然鹹鮮。蕃茜蒜蓉汁色澤清綠,入口輕盈滑溜。因廚師用上生蒜入饌,所以醬汁味道香中帶辣,十分惹味!

P.S. 餐廳必需預約;不收加一及開瓶費;飲料選擇只有汽水及酒品;前往洗手間途中的地面很滑。
