翻睇番啲食評,原來對上一次嚟百樂潮州銅鑼灣老店已經喺年幾前嘅事。近50年嘅歷史,晌依個年代賣少見少。雖然老店,單睇門面,金黃流線,簇新型格,喺迎合時代轉變嘅見證,但卻仍掛住「百樂酒樓」霓虹燈老招牌!最近,因店方被米芝蓮捧為推介食肆之一,又引起多少少關注。是夜,一眾朋友嚟到再嚐其出眾嘅潮菜。環境方面唔多講,以前嘅食評都已經有描述。酸菜小碟雖然只喺鹹酸菜一碟,但潮州嘅經典食材又點少得鹹酸菜一份。昔日唔少潮州人晌碼頭做咕哩,一碗白粥,少少鹹酸菜加菜脯就喺一餐。滷水鵝片拼豆腐另一潮菜經典「滷水」,又喺唔可以錯過嘅嘢,所以,打孖兩碟嚟,先試碟滷水鵝片。鵝片堆得滿滿,當然,下面喺墊咗豆腐啦,不過,豆腐入口滑溜,亦喺水準之作。而鵝片塊塊厚薄均一,既有肉香,又有滷水嘅醇厚,質軟味足,好食!所以,就算滷水鵝片唔喺米芝蓮推介菜式,嚟到百樂潮州都要例點啦!滷水鵝肝拼鵝腸唔怕膽固醇高,依道滷水鵝肝亦喺正嘢,厚切一片疊一片嘅鵝肝入口粉嫩甘腴,帶淡淡滷水香;而鵝腸口感爽脆,全無異味,同樣好味!豪華大拼盤首先最注目嘅喺中間嘅壽星公,栩栩如生,雕得細緻。拼盤包括椒鹽九肚魚、炸芋蓉帶子丸、髮菜卷及麻油海蜇。九肚魚脆口嫩

潮州菜有唔少手工菜,製作甚花功夫,子母龍鬚蝦就喺其中例。單講賣相已經先聲奪人,甚具氣派,以麵條包住酥炸,炸得金黃,好睇又好食;裡面喺搵蝦膠包住原隻鮮蝦所做,爽口彈牙,味道鮮甜,就連蝦頭嘅蝦膏都零舍豐腴

沙爹牛肉炒芥蘭

唔喺店員講,都估佢唔到原來佢都喺米芝蓮嘅推介菜式之一,沙爹味道香濃而有花生香,夠惹味,牛肉軟腍卻唔會有好似梳打「瘌」到散嘅感覺,芥蘭又爽脆有菜味。
