海運大廈又有新餐廳,坐向碼頭的 Charcoal Bar,請來米芝蓮星級廚師 Bjoern Alexander,打造一間以西式木炭燒烤的概念的餐廳。據我所知,因為火警安全問題,炭火燒烤在香港市區很難得,尤其在商場內,得知餐廳用意大利 Josper 炭爐,有圖有真相,明火燒烤,最高溫度250度,而焗爐就有350度。當晚有幸,行政主廚在場,隨即打卡。以多國菜手法,融合中西日泰之飲食文化,例如在烤海鮮加酸甜的香辛元素如泰菜、香烤米飯竟然加中式臘腸、日式海膽多士等。人多好辦事,我們吃了這麼多:海膽多士.生牛肉片、黑松露蛋黃醬 $128/件見到已經垂涎欲滴!海膽及生牛肉我都好鍾意食,再加上黑松露香氣及蛋黃醬嘅潤澤,口感複雜得來協調豐富。迷你漢堡.黑松露醬、黑松露醬、特調茄醬、醃製洋蔥甘地芝士 $98/個細細個,脹卜卜的,見到就想食,處理得很好,有玉未有層次,一個字講晒,得!烤生蠔.柚子胡椒牛油、柚子 $68/只與平時食法不同,烤至剛熟,口感仲生生哋很鮮嫩,用柚子胡椒牛油皮柚子配搭原來幾好,輕輕的提升了層次。花甲.椰子、香茅、檸檬葉、檸檬汁 $188花甲鮮甜,肉算大粒,醬汁味道清香,沒有蓋過花甲的
