相隔大半年二訪Parallel,最近餐廳轉了餐牌,我們特意來試5道和8道菜menu,這次我會形容為Top View的極致。餐前有自家製三款麵包,建議從fingerbread開始吃,因為蕃茄飽咸香比較重先吃會搶去前者的味道~兩款Menu都有🔹Kataifi🔹作為開胃菜,賣相精美的它以mozzarella cheese和蕃茄莎莎醬為主上面有滿滿的脆脆增加口感,蕃茄讓味道很清新,頓時開胃。▶5-course-menu🔹Scotland Salmon三文魚事前用紅菜頭醃製,讓其變成艷麗的粉紅色,上面有鹹味特別重的俄羅斯鱘魚子醬,還有一小件紅菜頭海綿蛋糕,一定要一起吃,這樣蛋糕的甜才能平衡三文魚的鮮和魚子醬的咸,鮮明的口感和強烈的味道對比留下深刻印象。🔹Leek and Potatoresh leeks roasted potatoes chicken stock crispy prosciutto ham大蒜薯蓉湯可以說是全晚我最愛的一道菜,上面有風乾24個月非常脆的巴馬火腿,這一片足以讓薯蓉湯有洽到好處的鹹味,薯蓉湯綿密之餘還有顆粒讓你可以有咬口,質感很creamy很滿足。🔹Black Tr

有來過的都會知道這裡的黑松露手工意粉是招牌,上桌已經聞到很濃的松露香,意粉很彈牙而且鹹味剛剛好,順滑的感覺讓你意猶未盡。

主菜本來是鴨肉,不過朋友不吃,所以換成8成熟黑毛豬搭配牛油蘿蔔和南瓜蓉,這個組合賣相吸引而且黑毛豬就算八成熟也不會有奇怪味,反而肉汁豐富有嚼勁。

這件可樂餅功夫一點都不簡單,裡面全部都是幼細密集的新鮮蟹肉絲每日即買即拆,蟹肉和馬鈴薯均勻混合在一起充滿鮮味,可樂餅外層有明顯牛油香,和上面的牛油果蓉一起吃很清新,沾一些底部的紅椒醬又很creamy,還有芝麻薄脆增加口感,很優秀。

五道菜的湯比較柔和,八道菜的龍蝦湯則是鮮味鹹香大爆發,龍蝦湯中間放上紅蝦他他,底部墊有蘿蔔,他他上有牛奶泡沫,喝的時候真的要和新鮮彈牙的紅蝦和泡沫一起喝才能喝到最平衡的味道,喝完最後才吃蘿蔔真的是一下子把口腔的味道全部reset,很神奇。

兩大塊海膽肉放在意粉上,本身已經很濃,細心看會發現原來每條意粉都是橙橙的,原來在煮的時候已經加了海膽蓉,所以每條意粉都有濃郁海膽醬汁,很稠很入味。

第一次吃澳洲極黑牛,從紋理就可以看到它的與眾不同,紋理非常清晰,入口牛味很濃,中間有適量油脂不會膩,也沒有咬不開的筋,薯蓉帶清新味道,還有不同的醬汁讓你搭配牛肉,但我覺得直接吃是最好吃😋

Chef Tony認為魚應該要啖啖肉才最能夠感受其真味,所以將智利海鱸魚切到很有厚度,魚皮上加上炸巴馬臣芝士餅增加鹹香,還有三色醬汁讓你點著吃,包括青豆醬、微酸的小蕃茄及甜度高的蕃茄雲呢拿醬,建議大家直接點蕃茄雲呢拿醬,可以把鱸魚的魚鮮強調,魚肉多汁而切結實,很實在的感覺,旁邊還有一件小巧有奶香的粟米餅,吃完超飽。

甜品方面是像玫瑰花的蘋果酥配自家製雲呢拿醬汁,蘋果肉邊燒到焦脆很香口,一片片吃甜甜的果汁慢慢滲透出來,點一點雲呢拿汁感覺就像吃了雪糕一樣,記得要立刻吃才能吃到酥皮脆脆的口感。
